Hans Lenzlinger immigrated from Switzerland to the United States to work as a cook in Chicago. Eventually, Hans moved to New Glarus where he eventually took over the New Glarus Hotel and became an initial investor in the New Glarus Brewing Company. Cheers!

In 2002, Wisconsin's New Glarus Brewing Company, makers of the beloved Spotted Cow farmhouse ale, announced it'd be pulling out of the Illinois market next door. Six months later, it was gone. The decision shocked and even angered some folks on the wrong side of the Cheddar Curtain, and flew in the face of the contemporary expansionist wisdom of that era in the industry. But brewmaster Daniel Carey simply couldn't brew enough to keep up with the demand in the state next door, so along with his wife, founder and president Deb, they decided not to. Twenty years later, we spoke to Daniel about how New Glarus grew on its own terms, and became a touchstone for an industry looking for ways to sustainably retrench as growth slows in the process. Katherine talks about all of the expansion projects she's overseen and guided during her time at New Glarus, including the Wild Fruit Cave, The new fermentation cellar at Hilltop, the Hop Barn, the wastewater treatment facility, and more. Katherine is also Dan and Deb Carey's daughter and has been helping out at the New Glarus Brewing Company since they first purchased the original warehouse back in 1993. Scott and Katherine discuss the difference between working at an architecture firm and working for a single client, the transition into onsite construction management, her experience growing up alongside the brewery, and the dynamics of having her parents as her clients.

Dr. Shelby Ellison, UW-Madison Assistant Professor in the Department of Horticulture, has looked into using hemp for paper, clothing, the value of using it in cattle feed, for bricks, insulation, and much more. In 10 Wisconsin counties, forestry is the No. 1 employer. Any mill closures or change in markets has a major impact on the economy and the statewide forest industry. Stephanie talks with Chief State Forester Heather Berklund. She says the DNR's role is in all areas of the supply chain -- ensuring industry partners are supported, keeping forests healthy from invasive pests, working with landowners, and recruiting other forestry businesses to the state. Daniel Carey operates the New Glarus Brewing Company in Wisconsin along with his business partner and wife, Deb, as well as two daughters and grandchildren. He shoveled out his first mash tun in 1979 at the age of 18 while earning a Bachelor's Degree in Food Science at University of California Davis. Dan was Valedictorian of the Siebel Institute Course in Brewing Science. He served his apprenticeship at the Ayinger Brewery near Munich then passed the Institute of Brewing Diploma Examination followed by the Master Brewer Exam. He also was a Production Supervisor for Anheuser-Busch. Dan won the Association of Brewers 2003 “Small Brewer of the Year” Award, the 2005 and 2006 “Mid Size Brewer of the Year” Awards as well as the 2006 Russell Schehrer Award for Innovations in Brewing. www.CraftBeerProfessionals.org
