After 21 years of building a solid foundation of beer, we launched the Real Spirits Distilling program in 2017. Our owner, Brad Farbstein, is as passionate about unique handmade spirits as he has always been about craft beer. In October 2014 he filed for a distillery permit and began tinkering away to create what would become Real Spirits. In April 2017, after years of experimentation and fine-tuning, we launched Real Spirits to the public out of our tap room with Texas Hill Country Signature Whiskey, Grain to Glass Gin, and the highly limited first batch of Single Barrel Whiskey. See Our Spirits It starts with beer All Real Spirits starts with – of course – a foundation of Real Ale beer. Currently, Real Ale's Devil's Backbone Belgian-style Tripel and the award-winning Real Heavy Scotch Ale are used to make our signature and single barrel whiskey, and White, a Belgian-style wheat ale, is the base beer for our gin. This means we make all Real Spirits liquors grain-to-glass. They are brewed, fermented, aged, bottled, and served on-site at the brewery and distillery in Blanco. Distilling the good stuff Real Spirit's whiskey process begins as any other day at the brewery. Our brewers brew beer for distilling the way they normally would. The only difference is that they forgo the addition of hops during the brewing stage. This is then fermented to about an 8% ABV beer. Our distiller fills the 1100 liter hand-hammered copper pot still with the beer and brings it to the boiling point of ethanol (around 170F degrees). The steam that is generated is then pushed through the lyne arm into the condenser where it is introduced to a cold environment, turning the steam back into a liquid. This liquid is cut into three portions, heads, hearts and tails (beginning, middle, and end of the distillation). Only the hearts are collected and barreled for a determined period of time. As the whiskey ages, we taste each barrel and determine when the spirit has matured. Finally, the spirit is harvested from each barrel and mingled together for bottling. Whiskey Sour A whiskey sour is yours for the making year-round. It's refreshing enough to keep up with a spritz during the warm summer months, but appropriate during the colder seasons of the year as well. Ingredients 2 oz. Real Spirits Texas Hill Country Whiskey Juice from 1 lemon 1 1/2 tsp agave nectar Cherry Lemon wedge cocktail glass ice Directions Pour Signature whiskey into a shaker of ice. Add lemon juice and agave necatar Shake lightly Strain into a cocktail glass full of ice. Garnish with a cherry and lemon wedge Enjoy! Ginger'd Ass Finish with the ginger beer of your choice. We like Maine Root Ginger Brew. Ingredients 2 oz. Real Spirits Texas Hill Country Whiskey 1 sprig of rosemary 1 lime wedge ginger beer cocktail glass ice Directions Pour Signature whiskey into a shaker of ice. Add rosemary and lime wedge Shake well. Strain into a cocktail glass full of ice. Top with ginger beer. Enjoy.
Calling all tripel enthusiasts and those seeking an adventurous sip! Today, we're venturing into the "Wicked Tripel" from Brasserie de la Senne, a collaboration with Pete Slosberg. This 8% ABV Belgian brew takes a unique twist, incorporating cocoa nibs from Frederic Blondeel during fermentation.
A great beer from a revered and respected brewery is always a pleasure. But when you bring together three such outfits, creative forces that are admired across the UK, Europe and beyond then you know you're in for a treat. And last week - a collaboration that took place in Lewes, in sunny East Sussex - is proving to be just that. Before Covid came crashing into people's lives, Mark Tranter of Burning Sky Brewery and Yvan De Baets of Brasserie de la Senne were in Lewes and a visit to Harvey's and its head brewer Miles Jenner was on the cards. Over some glasses of beer in the brewery's sample room, the trio mooted the idea of working together on a beer of their own. The plan was simple, to make a beer that was entirely distinctive from anything they produced individually. And now, some four or so years since that initial conversation, the beer has become a reality. Tripel Alliance was mashed in at the Bridge Wharf Brewery last Friday - the 19th July. It was brewed with Pale and Munich malts, together with Spelt and Oats. These provided the base for a range of different German hops that encompassed a range of traditional and new varieties, all introduced at five separate stages. And of course, the beer was brewed with Harvey's spring water and yeast. It will launch at the upcoming Tripel Alliance beer festival, which is taking place on Friday 9th & Saturday 10th August across three Sessions in Harvey's Brewery Rear Yard. But to tide us over until then, let's hear from Mark, Miles and Yvan about this special collaboration in a conversation recorded on-site with us perched atop the many bags of malt housed in their grain store.

Behold the mighty Sasquack! A Belgian style Tripel that after one sip will instantly whisk you away to a grand platz in Bruges Belgium drinking with a group of grandmothers at 10am after church...at least that's how Matt from Duck Foot sees it.
Les puristes diront deux et demi... A quoi se rapporte ce triple dans les bières triple, c'est ce que nous allons découvrir aujourd'hui. Historiquement, l'appellation triple signifiait que la bière contenait trois fois plus de malt par rapport à une bière simple malt. Donc, le malt, c'est une céréale germée, je vous invite à approfondir ces notions dans l'épisode “qu'est ce qu'une pils” dans l'historique de ce podcast. Plus de malt implique plus de sucre, et donc plus d'alcool. Les bières triples étaient plus fortes. Par la suite, le mot triple a fait référence au nombre de fermentations. Et là, le monde des brasseurs se déchire. Il y a d'un côté des bières triples dont les trois fermentations se font faites à la brasserie et de l'autre des bières qui se disent triple car elles ont subi deux fermentations à la brasserie et la dernière en bouteille. Les premiers crient qu'une fermentation de garde, donc en bouteille, n'est pas aussi accomplie qu'une fermentation classique et que ce triple compte plus pour un deux et demi. Les autres répondront qu'il n'y a pas de réglementations à ce sujet et que le triple est un bon argument marketing. Certaines bières affichent triple ou tripel car la Belgique ayant énormément façonné le monde de la Bière, surtout en matière de triples, justement. Il est logique d'y trouver les appellations en français ou en Néérlandais, deux de leurs trois langues officielles. Tripel, veut dire triple en flamand mais je pense que vous l'aviez deviné. Trois fermentations en cuve contre trois fermentations dont une en bouteille, l'information est biaisée certes, mais pas de quoi s'y perdre, non ? Non ? Si. Hors donc, certaines bières affichent l'appellation triple alors que ce triple fallacieux ne fait référence ni aux nombre de fermentations ni à la quantité de malt utilisé. C'est parfois la quantité de houblon avec les tripel hops ou le nombre de céréales différentes qui compose son malt. Maintenant, elles sont minoritaires. Donc une bière est triple soit car elle contient 3 fois plus de malt par litre d'eau et/ou car elle a été fermentée trois fois. Ou deux et demi pour les tricheurs. La question qui nous brûle les lèvres, existe t-il des bières doubles basées sur le principe que nous venons d'apprendre ? Et bien oui. Vous avez des bières simples, doubles, triples, et même quadruple. Dans ce cas, il s'agit de la quantité de houblon et non de fermentations. Je vous laisse digérer ça et à demain. Gary Glass was entrenched in the world of homebrewing. What began as a hobby soon turned to a career, where he spent 20 years at the Brewers Association, including a long stint as the director of the American Homebrewing Association. When COVID-19 struck and the Brewers Association laid off a significant portion of its staff, Gary was included in that group and pondered what he would do next. He wanted to stay involved in the brewing industry and thought about doing sales, but an opportunity presented itself at Lefthand Brewing, the venerable Colorado brewery that has cornered the craft market on nitro stout. It wasn't far from his house and Gary was able to begin as a brewer, his first professional job in beer, where he's spent the last nearly two years proving himself, working hard, and learning processes. Earlier this summer that work was rewarded as he was named head brewer. From starting off on malt extract to now running logistics on hundreds of barrels at a time, it's been quite the journey, and we'll start at the beginning. Tripel is a beer full of ester aromas and flavors. So much so that the esters primarily define the style. Tripels are also not three times anything. Confusing that fact, there is another Belgian style of beer called a dubbel, which is pronounced like double. “With beer and chocolate, they're about so much more than just creating something that tastes good. There's a story that's trying to be told if you just take the time to try to go on that journey and listen to what your senses are telling you.”Katie Clark Gabbard is a professional artist working in Dayton, Ohio, creating vividly colorful paintings in unexpected formats, using the very shape and texture of each piece to challenge perceptions within the sometimes staid fine art world. In this episode we hang out with Katie as she uses her paints, brushes, and canvases to interpret and express what her senses of taste and smell experience when presented with beers and chocolates without knowing anything about them. I brought along several chocolates and beers to Katie's studio, and gave each to her to taste, one at a time. She would then spend ten to fifteen minutes painting a small canvas, expressing in colors and shapes the flavors she experienced and the images they conjured. Only after she finished each would I reveal what she had just tasted. We were both fascinated by the results.You can check out a blog post with photos from the session here. When Nino Bacelle and Guido Devos started homebrewing together in the 80's, Belgian beer was in the midst of a sea change. Consolidation was afoot as larger industrial breweries swallowed up smaller concerns, while an earlier generation of brewers had reached retirement age with few of the younger generation interested in carrying on the brewing tradition. The beers that they loved and grew up drinking were disappearing—subsumed by a wave of sweeter mass-produced crowd-pleasing beers. To be fair, there were (and continue to be) some historical holdouts. But generally speaking, bitterness was slowly leaving the lexicon of Belgian brewing. Bacelle, who grew up around beer (his father was a guezesteker, or blender, but did not brew), longed for the beers he had tasted growing up. Together with homebrewing partner Devos, he decided to launch a beer brand, De Ranke (https://www.deranke.be), to address the opportunity they saw in the market for beer that embraced bitterness. First was their Guldenberg Tripel, followed closely by what is now considered a paragon of hop-forward beer, the aptly named XX Bitter. Today, these beers feel familiar, but they were groundbreaking in their time and remain somewhat unique today due to the peculiarities of De Ranke's process.
