Shawn McClain has been running restaurants for decades, having got his start in Chicago, where he lived for 20 years, first studying at Kendall College and then building a name for himself as a talented and innovative chef.He ran the kitchen of Trio in Evanston, Ill., before Grant Achatz took that over and began his own rise to fame. Then McClain opened Spring to critical acclaim in 2001, followed by Green Zebra, which was one of the country's first fine dining vegetarian restaurants.Now he spends his time between Detroit, the hometown of his wife Holly, and Las Vegas. The couple has been back in Motor City for the past 12 years and currently operates Highlands, a fine-dining restaurant at the top of General Motors' global headquarters, where he has reworked the typical approach to running restaurants with spectacular views by actually offering great food and service there.Holly McClain is heading up Olin, a sort of American brasserie in downtown Detroit that the couple built and opened during lockdown.McClain's Libertine Social, now in its seventh year of operations, is at the Mandalay Bay Resort and Casino in Las Vegas and is having its best year on record. He opened Balla Italian Soul last year and is working on opening his first Las Vegas concept that's not on the Strip, a wine bar and retail shop called Wineaux.The couple recently shared their approaches to running their restaurants and discussed the business climates in the two cities where they operate.
Green Zebra, a Portland-based healthy convenience store, is closing its doors after ten years in business. The three locations will be closed on March 31.The local grocer, founded in 2013, tried to redefine convenience stores. Instead of cigarettes, lottery tickets and sugary drinks, Green Zebra was known to offer fresh produce, kombucha Zlurppees and locally sourced meat. The store cites the pandemic, supply chain and economy as factors in its decision to close down.“We have been holding on by a thread since the pandemic started and have been in austerity mode since then,” said Lisa Sedlar, Green Zebra Founder and CEO. “We experienced 9 straight quarters of increases to our cost of goods, packaging, fuel, insurance, taxes, freight charges and well, pretty much everything. Combine that with supply chain and staffing shortages and razor-thin grocery margins, we just couldn't overcome all the obstacles. We definitely gave it our all and fought the good fight. Growing up in Detroit, Lisa's Dad used to take her to the eastern market, where she had some of her fondest memories of the personal touch between people and the food they eat. She remembers the cheese munger who would hand slice a piece of cheese and hand it to her. And the fresh grapefruit and the glassed in butcher shop at the center of the market. It made an impression. Although she started college aiming to be a large animal veterinarian, a stint running the salad bar of the commissary sent her to a culinary school where she excelled in Chicago. She then worked for a grocery chain bought by Whole Foods, continued with Whole Foods and wound up at New Seasons. Starting Green Zebra Grocery has been interesting to say the least. Lisa believe in building community outside the store and inside. Treating employees well is part of her philosophy and that hasn't played well with investors. They see a smaller profit margin where Lisa sees a solid company in the long run. But she has learned a kernel of truth from the cheesemonger, the grapefruit supplier and the butcher from her youth that authentic is here to stay.
