Outliers in the world of performance come in many shapes, sizes, and all corners of the universe. We tend to hear about them in the world of sport and business but exceptional and uncommon performers exist all around us. Having a trained eye for elite standouts, it didn't take long for me to see these qualities in Chef Craig Strong. Menu selections like Oxtail Risotto, Short Rib Cigars, House made Ravioli and Lobster or even a gourmet burger that really tastes like a gourmet burger are some of the features he offers at his Laguna Beach restaurant called Ocean at Main. He cultivated his art form from having worked around the world, bringing those experiences to complement his passion for life, creating an experience for both diners and his staff. There is a genuine energy about Chef Craig that becomes contagious which comes from his philosophy to wanting to change the model for how restaurants and specifically the kitchens are run so that the failure rate decreases. Simply stated, Craig Strong is different and his work shows it and we are the beneficiaries of his artistry. About Chef Craig Strong Chef Craig Strong, whose 25-year career in luxury hotels and resorts earned him a Michelin star from his time at The Langham Huntington Hotel &  Spa in Pasadena, has come full circle to his native Southern California roots with the recent opening his own restaurant - Ocean at Main. In its first year, the critically acclaimed restaurant was honored as a Best New Restaurant by Orange Coast Magazine, one of Modern Luxury's 10 Most Exciting New Restaurants, and was named among OC Register critic, Brad Johnson's 75 Best Places to Eat. Chef Strong previously held the title of Executive Chef at the prestigious Studio at Montage in Laguna Beach for nine years. From the coasts of California to Washington, DC, and Barcelona to Hong Kong, Chef Strong has cooked all over the world; his dishes draw inspiration from the culture and cuisine that make these places unique. Chef Craig Strong of Laguna Beach's dining hot spot, Ocean at Main, joined us in the studio on the eve of his one year anniversary. Spending nearly 25 years in the hotel business, 15 of which were with the Ritz Carlton in Europe or on the East Coast, Chef came to Southern California in 2000 and found himself at Montage, Laguna Beach. His new home became their much acclaimed restaurant, The Studio, where he spent nearly a decade as their Executive Chef. With a desire to have a little more flexibility and creativity, Chef took a leap of faith and opened his very first restaurant last year called Ocean at Main. His restaurant is located in a building in Laguna which was the city's first bank in the 1940s. The menu offers a variety of dishes that draw on inspiration from the Mediterranean as well as a few savory dishes that are a nod to his French training.  In this episode: -Learn about Chef's career path which led him to opening his first restaurant. -Get to know the inspiration behind Chef's menu at Ocean at Main. -Understand how Chef fuses together the best of both French Cooking and Mediterranean Cuisine.  -Hear Chef discuss the things he's learned over the last year in his first entrepreneurial venture. -Learn how technology has and continues to change the restaurant business. -Get to know why selling the experience imparts value which makes you priceless. When asked what his Ultimate Lesson Learned has been thus far in his career, Chef notes that truly embracing the spirit of hospitality has made all the difference. "The reason we count murrelets at sea is, of course, because in the forest they are flying around at really high speeds in the dawn or dusk and while you can see them and hear them there is no way you can get a handle on their populations", says Craig Strong of Crescent Coastal Research. Ken Burton, wildlife biologist, vice president of the Redwood Region Audubon Society, Friends of the Arcata Marsh docent, and author, interviews Strong on the status of Marbled Murrelets on the north coast and his murrelet monitoring program.
