Katherine recounts her early days at the foot of a mountain near the Atlantic Ocean and her move to London at 17, where she gained experience in roles from bookkeeping to the county council administration.Katherine then opens up about her initial symptoms, facing her diagnosis of Hodgkin's lymphoma, and the struggle with the decision to undergo chemotherapy. She also shares about her exploration of alternative treatments like the macrobiotic diet and therapies in Germany. Her journey weaves from conventional  to alternative with her eventual acceptance of chemotherapy, followed by a commitment to the Grape Diet to ward off cancer's return. Through this interview, we discover how Katherine's passion for a raw food lifestyle became a cornerstone of her healing and community outreach. From attending raw food talks in London to growing and selling wheatgrass back in Ireland, her dedication to nutrition is evident. Kathrine:  "I was diagnosed with Hodgkin’s Lymphoma in 1996. Called after Thomas Hodgkin who was a British pathologist who first described this “disease” in the early 1800’s. On that day I had no idea what Hodgkin’s Lymphoma was or that it was a type of “cancer”. I soon learned quite quickly. There was an urgency in the doctor’s recommendation that I meet with another member of staff who will detail my options to me. And for them there was only one option, which was chemotherapy. The mention of cancer frightened me and from that day until I read Ann Wigmore’s book “The Wheatgrass Book” I lived in fear. I began treatment shortly afterwards and the effects of that first treatment rendered me weak and in awful pain. I didn’t know back then that the chemotherapy they injected me with was not curing me but instead adding to my clogged up lymphatic system. Because that is what my problem was…..A Blocked up Lymphatic System! The information about the raw and living food diet and wheat grass juice in Ann Wigmore’s book was so compelling and rang so true to me, I immediately adopted the program. As I experienced the diet and practiced the detoxification techniques, I experienced an extraordinary feeling of well being. At that point, I lost all fear of the disease returning and found unbounded hope based on a new-found knowledge and direct experience. Since that time, I have studied more about health and my confidence in the body healing itself has grown tremendously, provided you give it the foods that the human body is designed for, which is foods from the garden.  Particularly fruits and greens in their natural state. I taught healthy eating classes for eight years demonstrating recipes that didn’t need cooking. I ran a Raw Food Retreat center for awhile where people came and stayed for a week or more.  I am passionate about helping people back to health. It is not a chore for me as I love it!  I am from South West Ireland. Grew up on a farm for first part of my life.  Lived for 9 years in Dublin city, 16 years in London and I have been living in Utah since 2007. I have 3 children and 3 grandchildren." There's so much news out there about the Coronavirus but what does it all mean? We keep hearing about death rates and how contagious it is but what does that mean for the average American? In today's episode I spoke with medical specialists to discuss what exactly is COVID19 or SARS 2. How can we protect ourselves and how dangerous is this virus? I'm joined by Katherine Scott and Koya Davis from Frederick Health Infection Prevention Department. The Coronaviruses are a large family of viruses. The COVID19 or SARS 2 origins was found in a food market in Wuhan Province, China.  We're discovering new things about the virus everyday. The passengers from the Diamond Princess were quarantined.  Symptoms you need to worry about: 1) Where you in Main Land China 2) Fever 3) Cough 4) Shortness of breath  If you have any of the above symptoms contact your physician or go see a doctor. Don't diagnosis yourself or use Dr. Google. Don't ignore symptoms. The biggest Red Flag currently if you're feeling sick is if you've been to China or have come in contact with someone who traveled to China. And more specifically if you have come in contact with someone from China who is ill with COVID19. If you've been exposed to COVID19 symptoms can show up as soon as 2 days after the exposure up to 14 days. That's the current statistics. Emergency Departments do drills and have internal protocols for Emergency situations. The disease is transmitted through droplets, cough and sneezes. The test to see if you have COVID 19 or SARS 2 is by a cotton swab.  If you are going to be tested the hospital will first contact the State Health Department. Then the State Health Department will contact the Federal Health Department before a person is tested. The tests are not taken at your local.  The most IMPORTANT way to protect yourself is vigilant HAND WASHING and using alcohol based hand sanitizers.  Best place to get up to date information is through the Center for Disease Control (CDC) or the World Health Organization (WHO). When you read a book, do you picture the characters in your head? Do you imagine your favorite actors playing the roles of the heroes and villains? I do. Many are speculating these days about who will play the male lead in the upcoming Fifty Shades of Grey movie. I confess (profess?) that I haven't read the Fifty Shades books, but People.com recently reported that E. L. James, author of the Fifty Shades series, was partying with Robert Pattinson, better known as the actor who portrayed Edward Cullen in the Twilight movies. And even more recently, I was pleased to read that Ben Affleck is in talks to play Nick Dunne in David Fincher's adaptation of Gillian Flynn's bestselling thriller, Gone Girl. And Diana Gabaldon championed the selection of Scottish actor Sam Heughan to play Jamie Fraser in the Starz movie version of her Outlander series. All of this talk of book couples becoming on-screen couples made me think of the last romance I "cast" in my head: Keowee Valley by Katherine Scott Crawford. I was in the throes of finals at school, but I couldn't stop reading Keowee Valley, mainly because I wanted to know what would happen next between the novel's main characters, Quinn and Jack. Unlike the couples in Fifty Shades and Gone Girl, Quinn and Jack have a very solid relationship and respect for each other. But Quinn and Jack do have an unlikely romance in this historical fiction set just before the American Revolutionary War. Quinn is a fair-haired maiden who grew up in colonial Charleston, South Carolina, and Jack is a half-breed tracker born to a Cherokee father and Irish mother in the untamed Blue Ridge Mountains.
