Is there anything better than beer and cheese? The two are intertwined as some of the best pairings out there and the two are very alike. Cheese and beer are both products of agriculture, the two are made very similarly with cheese undergoing a “ripening” phase similar to fermentation. Cheese has a variety of intensities and flavors, as does beer. Put them together and watch the magic unfold. But how do you pair these two? And how does making cheese work vs. say, brewing a batch of IPA? We'll talk to two experts about all things cheese and beer. John Watson is head brewer and owner of Watson Farmhouse Brewery located in Southbury, Connecticut and is also the head brewer at NewSylum Brewing Company on the Fairfield Hills Campus in Newtown, Connecticut. John started brewing beer as a hobby, after his wife Tracy gifted him a home-brewing kit, more than 25 years ago. He quickly became frequent with the home-brew competition circuit, medaling in the National Homebrew Competition with his recipes. In 2000, he was named New England Home Brewer of the Year and in 2004 earned Best of Show at the Master's Championship of Amateur Brewing. He has collaborated with a host of local commercial brewers, from Willimantic Brewing, Captain Lawrence Brewing Company in Pleasantville NY, and more! Along the way, he helped build commercial breweries for others, including Veracious Brewing Company in Monroe, Tribus Beer Company in Milford and Beer Naked in Wilmington VT. John and I had an amazing conversation live inside of his brewery in Southbury, CT. Our conversation lasted for almost two hours and you already know we covered everything I just mentioned and so much more!

A Pretzel, a Pig, and a Baby Baboon take a fantastic ride on a flying balloon and while they pass by a bright Hanover moon they look down and they see...Snyder's of Hanover! This may sound like gibberish, but your Bros are on a fantastical journey this week with Captain Lawrence Brewing Company and their collaboration with Snyder's of Hanover which created Snyder Bier. This marzen style beer certainly tastes like pretzels and we'll talk all about the history of Snyder's of Hanover while we sample this delicious brew. While talking pretzel's we'll also be talking about children's author Kenn Nesbitt who is certainly not as crazy as Shel Silverstein when it comes to the wild world of children's poetry. We'll talk his busy schedule and how he's delivering poetry to children during the pandemic. So grab a beer and join us for another great episode!Cheers!

I try not to lean too heavily on one side or the other when it comes to fitness arguments. Partly because I hate conflict (unless I'm drunk) but mostly because I think that having strong views on scientific subjects should only come once you have mastered your field. The truth about keto diets is that they can work for some people, but are not ideal for most people. That isn't a particularly controversial stance though, and it won't get me hundreds of followers or hundreds of enemies. But it's a balanced opinion that is not influenced by anything other than the facts as I understand them. The Truth About Keto Diets Ketogenic diets were developed in the early 20th century and used to treat epileptic seizures in children. While there is now an effective anti-seizure medication that can be used instead, the keto diet is still recommended to some people. So whether you like it or not, you have to admit that in some instances, the keto diet can be effective, potentially even life-saving. Whether it is an effective diet for non-epileptics remains to be seen. It is needlessly complicated and restrictive in my opinion. With no real benefits compared to other, easier, diets. But some people will enjoy those restrictions, having a simple framework to base their diet around may help them to stick to it better. Rules, however arbitrary can help create a structure for some people, and that can lead to excellent results. My main problem with the keto diet is not the diet itself, it is the people who promote it as some incredible diet with all these benefits attached. People who say that it is amazing for fat loss (it's nothing special). Or that it can improve your physical or mental performance. It can't. Classic Lager by Captain Lawrence Brewing Company The beer I was drinking while yelling into my microphone was Classic lager by the Captain Lawrence Brewing Company. I had not been too excited for this beer, as it sounded pretty boring. I was pleasantly surprised. This was an excellent lager, with shades of some Belgian beers I've had. Perhaps they used Belgian malt?* Either way, the beer was excellent. Did everything a lager should (tasted nice) and I'm surprised at the low ratings it has got on Untappd.com. Actually, I'm not that surprised, because the type of people who rate beers on Untappd are exactly the type of people I'd expect to turn their nose up at a well-brewed lager. Just kidding! *After checking this article, I found out that they used Dutch malt. Close enough that I can avoid humiliation, but different enough to mention here.

00:00:00 - Dr. Neil deGrasse Tyson returns to the show to talk about his new book, Letters from an Astrophysicist. In addition to book chat, he and Ryan also touch on the culture growth of pseudoscience such as people who believe the earth is flat, and 1960s sci-fi films like 2001 and Planet of the Apes. 00:26:46 - We have a segment for drinks. This is that segment. Abraham keeps it on topic with an Orbital Tilt IPA (Citra) from Captain Lawrence Brewing Company. Joe is back onto the Rocket Fizz with a Gene Autry Root Beer, which leads to a discussion of root beer rankings. Ryan philosophizes about west coast IPAs thanks to a gift from Abe in the form of Pliny the Elder from Russian River Brewing. 00:36:57 - In part two of their chat, Ryan and Dr. Tyson talk about his philosophy regarding Twitter, and how he learns from making online mistakes. As well as why an espoused liberal scientist might work for a conservative presidential administration. And, finally, how science has and hasn’t progressed in terms of recruiting and retaining underrepresented minorities and women. In addition to the new book, you can find Dr. Tyson on Twitter, his podcast, and his website. 01:00:59 - PaleoPOWs are delightful. ‘Nuff said. We begin with a voicemail from Alex K. about veganism, which leads to a discussion about yards and archery. It follows, we promise. Ryan reads an e-mail about Robin Hood cameos in literature from Rose E. And we double down on Patreon theses for Jerm (because we failed to remember that they got a thesis last episode) so Jerm’s extra major was completed with a thesis entitled: Pierced with rejection: Archery Implemented Relays (AIR) Mail as a low-carbon method for feedback delivery in the scientific peer-review process. Thanks again, Jerm! Thanks for a great year, looking forward to next year where you’ll get a whole lot more SCIENCE… you know the rest. More cool rewards await you if you decide to support us on our Patreon!

We twisted our own arms to go do an on-site interview at the Captain Lawrence Brewery with founder Scott Vaccaro, where he discusses all things beer and also makes a big, “spirited” announcement. We also dive in on the 684/CT toll proposal and then come up with ideas for new John Jay mascot names in our own special way. As always, there’s a lot of laughter and jokes along the way....
In episode 122, Tony & Eddie skip the flick and only sip. They sample beers from Founders brewing and Captain Lawrence Brewing company. This is an exciting episode from the brew front - there's a new brewery here (for the boys at least) and a beer that Eddie raves about so much that it could be one of the best he's ever had. If you like barrel-aged sours or chocolatey sweet stouts - turn in for this one!
Keeta is not a fan of standing still. Making the leap from banker to brewer (with a stopover in law school) isn't exactly a linear career path, but when you hear her explain, it'll all make perfect sense. Today, she's a brewer at Captain Lawrence Brewing Company, in Elmsford, NY. On a typical day, she's hauling bags, boiling wort, and taking names. I couldn't be happier to introduce you to Keeta, brewer at Captain Lawrence Brewing Company.

Tune in to this week's Beer Sessions Radio as host Jimmy Carbone and winter co-host Anne Becerra welcome Joe and Chris DeCicco of DeCicco Family Markets as well as Lars Dahlhaus, Eastern Sales Manager at Fentiman’s Inc, plus special guests from NYC's Fraunces Tavern. Anne Becerra is still shocked that she's been able to turn her love for craft beer into a career. She was the first female Certified Cicerone in New York City and has been at the helm of some of the best craft beer bars in Manhattan for the last seven years, most recently at The Blind Tiger, The Ginger Man and as Beer Director for Taproom 307. Anne is a beer writer for Serious Eats and Martha Stewart Living, and has been featured multiple times on NBC, Fox and Friends and CNN as well as contributed to TIME Magazine, Cosmopolitan, Wall Street Journal, Sirius XM, USA Today and more. She was the only speaker at both Tales of the Cocktail in New Orleans and the Women’s Chef and Restaurateur Conference in NYC to represent the beer industry, and believes the best part about craft beer is sharing it. You can catch her teaching classes, judging beer competitions, hosting beer dinners and weekly tasting events, and curating beer pairings throughout the tri-state area. The three young scions of the family that founded the Westchester/Rockland DeCicco Markets dynasty—Joe and his cousins, brothers Chris and John—all share a passion for beer. The trio used the unglamorous fact that they were born into a supermarket family to launch themselves as heavy players in the local beer world. Look for the 10 DeCicco stores in Westchester and Rockland to carry between 400 and 1000+ beers each. Meanwhile, several of the DeCicco stores (Pelham, Harrison, Ardsley, Armonk, Cornwall, and Brewster) offer taps for growler fills. And two of the DeCicco Markets (Armonk and Brewster) actually offer craft-beer bars on the premises, which means that you can catch a buzz before doing your weekly shopping. The Armonk DeCicco is located next to Fortina and offers 28 taps for growler refills or for just hanging around drinking. Look for the DeCicco boys to collaborate with several local brewers including Sixpoint Brewery, Captain Lawrence Brewing Company, and Evil Twin Brewing. Also, look for DeCicco’s sponsorship at many local beer events, including Savor New York. Lars has a new company called "Liquid Projects" which incorporated in April of 2015. As the president of Schwelmer Beer Imports N.A., Lars has been importing the Craft Beers from his hometown as well as other Bavarian beers such as Lammsbrau, Miltenberger, Meckatzer and Eichbaum to name a few since 2003. From 2011 to 2014 Lars has been the Craft Beer Portfolio Manager at St. Killian, responsible for such renowned brands as Wuerzburger and again Lammsbrau. During his time there he launched and established Crabbie’s from the UK, 961 from Lebanon, Andechs and Rothaus from Germany. The burning desire to offer an innovative and cost-effective way to international producers is what started Liquid Projects. Lars has been a resident of Williamsburg, Brooklyn for 18 years.
