Send us a textIn this episode of Brewstilled, it's a recap of HBO's The White Lotus Season 3 episode 5. In episode 5 we got a really weird and wild episode with surreal moments. We saw wild scenes in where the characters engaged in a series of odd adventures while some try to resolve their own mistakes. For Belinda, we saw her investigate the Gary mystery, yet Gary has also been keeping tabs on Belinda. For the Ratlif family we saw Piper make her revelation to Vanessa and Timothy that leads to conflict although Timothy is tied up with his own drama. We saw Saxon and Lochlan engage in a wild and weird night. I'll be discussing that and more here on Brewstilled with a Cold IPA from Alaro Brewing as the beer painting.

The boys drink and review Sierra Nevada's Cold IPA, then discuss Scientology. If you had your choice, would you rather your child be woke or a scientologist? It's a hard choice. Pigweed starts the discussion with a bio of L. Ron Hubbard, the founder / creator of both Dianetics and its later manifestation, Scientology. He was one of the most prolific authors in history, with as many as 1,000 titles. The distinguishing factors of Scientology include ... * The reactive vs. the analytical mind. The reactive mind stores painful traumatic memories called “engrams.” You find these through “auditing.” Once you get rid of the reactive mind you're “clear.” * Auditing is done with the E-meter, which is essentially a galvanometer. * Opposition to Psychiatry and Psychology are flawed because they focus on symptoms rather than addressing the underlying problem of engrams. * Focus on self-empowerment and personal responsibility * Bridge to total freedom * Thetans and spiritual identity. * Survival as a core drive But there's another side -- the mythology, including the goofy story about Xenu throwing people into volcanoes 75 million years ago. For week 10, some teams such as the Jets, the Jaguars and the Dallas Cowboys continue to flame on with their season. The Ravens won a close game against the Bengals for the Thursday Night Game as their big test against the Steelers looms close on week 11. For the Jaguars they lost to the Vikings as Trevor Lawrence didn't play due to an injury. The Falcons lost to the Saints for a divisional loss, but the Flacons are still in control of the NFC North. Tampa Bay lost to the 49ners in a close game as Tampa Bay tries to salvage their season. The Chargers continue to rise after their win against the Titans. Can the Chargers be come of the most dangerous teams in the NFL in a couple of years? The Jets crashed and burned again after their loss to the Cardinals. For the Dallas Cowboys, the drama continues as they lost to the Eagles for another lopsided loss in their home stadium. Micha Parsons also threw Mike McCarthy under the bus. The Lions also won in a 4th quarter thriller against the Texans. Could Lions head coach Dan Campbell become NFL coach of the year? All this and more will be discussed here on Brewstilled with a Cold IPA from Fall River Brewing Company in Redding California as the beer pairing.

Katherine has some HOT TAKES about this, and Trevor from Old Irving Brewing Co. explains the science behind what actually creates sour beers. Discover the facts behind this common misconception and learn how kettle souring is a legitimate and skillful method that produces some of the best-tasting sours. Bonus: learn how a “West Coast Pilsner” is different from a regular Pilsner and what it has to do with a thing known as a Cold IPA. 10:08 NAME OF BREWERY: Old Irving Brewing Co. Head Brewer and Co-Founder Trevor Rose-Hamblin shares the back story of his move from restauranteur to brewer, including an appearance on BrewDog that led to him brewing in Scotland for 3 months. Trevor also explains how after just 2 years of development, his Citra & Mosaic hopped Hazy IPA Beezer won a gold medal at the Great American Beer Festival in 2019 and another gold at the World Beer Cup in Las Vegas in 2024 (both in the Hazy IPA category).  After the beer break, Trevor and Brian crack open a Della, which won a silver medal at the Great American Beer Festival in 2021 in the German-Style Kölsch category. Della is a Kölsch-Style Ale brewed with high-quality Pilsner, a touch of Vienna malt, and lightly hopped with Zuper Saazer, Hallertau Mittelfrüh, & Tettnang. Trevor also talks about Old Irving's new brewing facility, what compelled them to move into a new facility, and the craft beer community in Chicago that helped spur their growth. Brian also coaxes Trevor into doing his hilarious impersonation of one of his Chicago craft beer community colleagues (but you'll have to listen to find out which one!). 58:35 Beer Behavior: How does scarcity work when it comes to beer? Does it drive sales even when it's obviously manufactured? Brian talks about how Wisconsin breweries were featured during a recent convention and Katherine presents her “barbecue festival philosophy” of scarcity. For the Season 2 finale, it was anti climatic as the episode was based more on character study and as a preview for what we could see for season 3. We saw the buildup for the war between Team Green and Team Black in this episode with a few of our characters making a last ditch effort for their own respective agendas with some seeking the Iron Throne or to support someone whose seeking it. We also got a very surreal scene in this episode that gave us a reminder of the days of Game of Thrones. In 2018, Gold Dot Beer's Kevin Davey was working as the brewmaster of Portland Oregon's Wayfinder Beer when he hit upon the idea of brewing an India Pale Ale with lager yeast. Hazy IPAs had yet to consolidate their grasp as the dominant substyle of the traditional West Coast variety, and this was the age of tinkering; in fact, Davey says his experimental brew was an answer of sorts to Kim Sturdevant's Brut IPA invention in San Francisco during that same era. (Check out the episode directly prior to this one for that story.) Davey called his crisp, clear, dry-hopped creation “Cold IPA” — a nod to its lager-like production process, and the temperature at which it's meant to be enjoyed. Over the years, Marble has pursued ways other integrating hops into both traditional and modern lagers, and their judiciously dry-hopped Pilsner even won 2014 World Beer Cup gold employing a quarter-pound-per-barrel dry hop at the time. Now, Marble is stretching out in the hoppy lager space with West Coast pils, and mirroring that smaller beer with their approach to cold IPA, while their MavLab R&D brewery continues to rack up medals for both traditional ales and lagers as well as more progressive styles. In this episode, Trujillo shares their approach to brewing lager, including: Brewing rice and corn lagers with two row pale malt and a single infusion mash Managing runoff to avoid astringency Extending boils to manage DMS production Designing subtle yet characterful hop blends for dry-hopped Pilsner Moving hot side hops to the whirpool for more hop expression Marrying the classic with the contemporary in West Coast pils Brewing hoppy beers with new twists on classic hops And more. Over the past number of years, Portland, Oregon's Wayfinder (https://www.wayfinder.beer) has built a reputation for assertive Pacific Northwest Coast IPAs, balanced and bitter Cold IPAs, and classic renditions of European lagers. Last year, Natalie Rose Baldwin stepped into the Brewmaster position and quickly found herself getting up to speed on their hop-centric beers, but her years of experience at Breakside more than prepared her for the technical and creative challenge. In this episode, Baldwin focuses on IPA and West Coast pils, with a closing contemplation on one of her favorite styles—gose. Along the way, she covers: the weight of expectation on Wayfinder cold IPA developing production yeast strategies around IPA and cold IPA building a fresh hop West Coast keller pils thinking about flavor as color using the Breakside nitrogen-shatter-and-cold-steep fresh hop method tweaking picking windows to maximize fresh hop expression using domestic pils base malt for hop-forward West Coast pils brewing French pils with spelt and Strisselspalt hops managing healthy fermentations in gose And more. Five years into cold IPA, the arguments still aren't settled, but one thing is certain—strategic brewers have embraced the style for the unique counterpoint it can provide to more ester-driven IPAs, and the focus on light body has struck a chord with beer drinkers who increasingly want strong hop notes in ever-paler beers. We thought it was time to revisit the subject with three brewers who are no stranger to the podcast, and who each have contributed to the evolution of the style in their own way. Sam Tierney of the Firestone Walker (https://www.firestonebeer.com) Propagator in Venice, California has helped develop some pioneering cold IPAs for the California brewery, like core brand Hopnosis. Jude La Rose of Chicago's Hop Butcher (http://www.hopbutcher.com) brews plenty of hazy IPAs, but continues to explore what hops can also do within the context of clear and light-bodied cold IPA. And Kevin Davey of McMinnville, Oregon's Heater Allen (https://heaterallen.com) and Gold Dot created the cold IPA style while at Wayfinder, but today is just starting to brew them again after focusing on lager for most of the past year. In this episode, the three brewers look at where IPA has come since those earliest days and what it looks like now, with topics that include: creating the counter-trend to hazy IPA by pushing bitterness alongside low finishing gravity finding cleaner, more “crystalline” hop expression by fermenting with lager yeast achieving additional package stability in cold IPA through lower FAN varying dry hopping temperatures and techniques managing sulfur production in cold IPA fermentations blending modern, classic, and Southern hemisphere hops in cold IPA pushing the lightest of color through ultra-pale malts and adjuncts controlling oxygenation to avoid overstimulating the lager yeast why they continue to focus on the style now And more. We saw teams such as the Raiders and Jets rise up to win key games. The Bronco's lost to the Kansas City Chiefs and word has it a fire sale is coming for the Denver Broncos, but what will it look like? The Ravens won a key game against the Tennessee Titans in their London matchup. Yet, are the Ravens losing their grip on the AFC North? The Seattle Seahawks lost a game they should have won against the Bengals. What happened to the Seattle Seahawks? Jacksonville won again this week, but will they face a challenge from the Houston Texans? For the Carolina Panthers, their losses continue as time is needed for their rebuild. The question is, will their ownership group have patience with Frank Reich and Bryce Young for a rebuild? The Raiders and the Jets secured key wins for their own Resurrection Day. Can the Jets and Raiders build from these key wins? All this and more will be discussed here on Brewstilled with a Cold IPA from Movement Brewing in a collab with Flatland Brewing as the beer pairing.

Points of discussion:Read the 2023 Beer Branding Trends Review Q1: I asked this last year and am curious again, were there any sections / ideas that didn't make it into the final draft? Thanks again for putting this all together. Love these reports.- Burt Reynolds and Tom Selleck founded Casamigos Tequila- Fingers Newsletter Q2: On the idea of releasing a budget beer option… Let's say that, hypothetically, you could get the COGS to a place where this was actually a feasible option. Would you still advise against this from a branding and reputation standpoint?I'm picturing a compelling use case for something like this where someone might enjoy 1 or 2 great craft beers and then finish the night with a High Life or Banquet, etc. Could this be an opportunity to still offer a craft beer to those consumers?- On the perils of releasing budget beer brand Q3: Is hop water design really a blank canvas? Are there cues that consumers are already expecting? What should people be doing to fit it neatly outside of NA / Seltzer / Sparkling Water?- Is Hop Water the next big Beyond Beer trend? Q4: I looked up hop waters after reading this newsletter last year, and was blown away by how expensive they are. The few brands that I found locally are as expensive if not more so than actual beer. How do you think these brands can justify such a high price point at retail, and do you still think that this category is going to see a lot of growth in the short term given how expensive these products are?- Doug Veliky's COGS breakdown on Hop Water vs. Beer Q5: You joked about hand waving and pearl clutching in the podcast about alcohol & minors, but do you really think anything is going to happen legislatively on this front?I see so many actual problems facing our country (income inequality, gun violence, attacks on women's rights and on LGBTQ communities) and just can't see lawmakers doing anything to even attempt to address this issue.I agree that it's getting kind of ridiculous—Hard Sunny D, c'mon!— I just don't think anything will come of this. That's not to mention how powerful the alcohol lobby is.- Joe Camel vs. JAMA Q6: I know you explicitly said you're only focusing on branding and marketing for this piece, but I have to ask about specific beverage trends in your work, COLD IPA is big (maybe?), RTDs are on fire, and Non Alc beer seems to be catching on… Are there any other categories or beer styles that people are sleeping on?Q7: My partner sent me your paths to market email. It was reassuring to see that we're doing at least a few things right. I'm curious, out of everything you wrote about there, is there any valuable marketing activity a new brewery should consider as they get closer to opening their doors? RAPID FIRE!!! Q8: What is your boldest prediction for the beer industry by 2030? Spicy takes only?Q9: You've written a lot about Hop Water, but no love for Hard Tea?Q10: Where do you guys fall on Fat Tire's latest rebrand? Good idea or complete disaster? I get why they would update the packaging, but to change the liquid itself seems extremely risky. I've been expecting a newsletter on this topic for months now!Q11: What do you make of the super high ABV beer trend we're seeing right now? I've seen a lot of reporting about how this can be explained as a “Bang for your Buck,” in other words, this is driven primarily by the recession. But I'm not sure it's that simple. Why is this such a big deal right now?Q12: Given everything you wrote about hard seltzer in this report, would you try to dissuade a small brewery (say, yours truly here in Texas hill country), from releasing one in 2023? -Learn more at: www.craftbeerrebranded.com / http://www.beyondbeerbook.com-Have a topic or question you'd like us to field on the show?
