Not long after I met her, she had left the hotel and started working at a brewery pouring beer. And before I knew it, she was getting printed in magazines and winning awards for her own beers.I was blown away by how quickly she was excelling in her career! She followed a less-than-conventional path in life that took off like wildfire. Did she have some secret knowledge that led her to grow so quickly and rise to the top? This is the last, for now, of the shows recorded on location from the Pacific Northwest. It was recorded at Von Ebert Brewing's Glendoveer location, on the far edges of Portland, Oregon and situated on a golf course.  Von Ebert is a brewery that has been crushing it since the start. Making great IPAs and Lagers as well as boasting a terrific blending program – in fact we discuss some of those beers on this show to illustrate ingredients and process.  A brewery with a diverse portfolio that executes on the highest of levels always has something to explore, and prior to the show Jeff Alworth, the writer, author, and podcast host, had been driving me around Oregon and trying to dissect Von Ebert.  Since it was such a conundrum, I invited him to co-host this episode. Happily it goes off the rails at points.  Our guests keep us on track and they are: Sam Pecoraro, the Head Brewer who has been brewing around Portland for 11 years at various breweries, including Burnside Brewing, The Commons Brewery and Breakside Brewery before joining Von Ebert at their inception in 2018.  As Head Brewer, Sam leads the Pearl District and Glendoveer Brewing teams in all quests related to IPA variants, German-inspired lagers and mixed culture beers.   And Jason Hansen, the Lead Brewer and Blender who Started homebrewing right after college, and ended up getting a job at Seven Bridges Organic Homebrew Supply  in Santa Cruz, CA. before moving to  Sante Adairius Rustic Ales where he eventually became head brewer. Welcome to the official first episode of Pursuit of Unhappiness. I am joined by Natalie Baldwin (R&D Brewer for Breakside Brewery) and Shannon Kenyon (Brewer North Country Brewing Company). We dive into so much, but I feel like we really on skimmed the surface. Part two will certainly happen at some point. Natalie is an award winning Research and Development Brewer at Breakside Brewery in Portland, Oregon. She started serving beer and washing kegs at a local brewery in 2014. In 2018 she received a scholarship through the Pink Boots Society to study brewing in Germany, whilst on the trip she was able to visit Leipzig to drink her favorite beer from the source, Gose. One of her proudest accomplishments is after years of tinkering, her Gose won gold at the Great American Beer Festival in 2020. Natalie is up to a lot in the industry including being involved in Breakside's own as well as the Oregon Brewers Guild Diversity and Equity Committee, the Scholarship Liaison for the Portland Pink Boots Chapter and a GABF judge. Outside of nerding out on historic beer styles and going to complete opposite direction building recipes to include an array of flowers, fruits and a little bit of magic you can find Natalie frolicking in flower fields with her dog, Beef. Breakside Brewery's co-founder and brewmaster Ben Edmunds talks changing business practices, brewing with unusual ingredients, and a ton of collaborations for their 10th anniversary Like every other brewery Portland, Oregon's Breakside Brewery is doing things a bit differently for now.  Co-founder, co-owner, and brewmaster Ben Edmunds tells us they are operating on to-go and delivery options.  When asked if he's learned anything through this that might impact business going forward he quickly notes that it's too soon to tell, they're just trying to make it through the pandemic. Breakside is know mainly for their stable of award-winning IPAs but Edmunds shares with us some of his more adventurous brews with ingredients like mushrooms, seaweed, and bonito flakes.  We also chat about all the amazing hops out there and what varieties are exciting him right now, and discuss a bit about hop terroir. Amid all the madness Edmunds will brew 26 collaboration beers to celebrate their 10th Anniversary this year.  He promises there will be a party at some point, but in the meantime they'll have plenty of beers to enjoy. In this episode, Cofounder and Brewmaster Ben Edmunds discusses the inception and development of their now-classic IPAs, how gravity adjustments impact hops flavors, the “je ne se quoi” of award-winning beers, designing hoppy beers to hit their sweet spot in the time frame when consumers will drink them, hops with greater shelf life, anchoring hops blends with familiar flavors, the vast differences between the core West Coast-style and evolving hazy IPAs that Breakside brews, and more. “The thing I like about competition is… the beers that win, are the beers that are the most pleasant,” says Edmunds. “They’re the most pleasant to a most discriminating group of judges. If you can shave your beers in ways that are optimizing for the most pleasant, you’re going to do well.” Beyond hoppy beers, Edmunds discusses brewing lagers like their year-round Pilsner, their sour process, the challenges brewers face in naming and describing beers for consumers, and the need for brewers to take risks while honoring tradition. “When we put 60 barrels of Marzen out into the trade, we’re taking a withdrawal from our customers, asking them to trust us. But I think that’s how you move the needle. You have to have breweries (who have the brand equity) be willing to spend a little of that [equity] to push the needle with consumers to see if things work.
