Hi Bakers, This dessert failed…sort of. Creme brûlée without a torch?…Not so simple! I wanted to try both sugar and toffee as the topping in case people didn't want to make the toffee. Regular sugar didn't caramelize under the broiler and completely heated the custard. Thankfully, the toffee bits melted quickly and were amazing. Espresso Toffee Creme Brûlée is naturally gluten-free and easy to make. The combination of toffee and custard is phenomenal and something you can't get in a restaurant. I used milk and cream for a lighter custard, but if you want something richer, reduce the amount of milk to 1/4 cup and increase the heavy cream amount to 2 3/4 cups. Sorry, this video was a hot mess but it was a good experiment in making something I had never tried before! Enjoy ~Carolyn Note; Ramekin size stated wrong on the video but the correct size is listed in recipe!  Espresso Toffee Creme Brulée  makes 6 ramekins 3.5” x 1.5” 2 1/2 cups heavy cream 1/2 cup whole milk 1 1/2 tablespoons instant espresso powder 5  large egg yolks  1/2 cup granulated sugar 1/2 teaspoon vanilla extract pinch of salt Garnish whipped cream toffee bits Preheat oven to 300F and place rack in the middle position. Line a 9” x13” baking pan with a small towel and place greased ramekins on top of it. Set aside. Whisk together egg yolks, sugar and vanilla in a small bowl and set aside. In a heavy saucepan, stir together cream, milk, espresso and salt. Heat  and stir milk mixture until bubbling but not boiling. Slowly add a cup of hot milk mixture to the egg yolks while whisking. Pour egg yolk milk mixture through a fine mesh strainer into saucepan with remaining milk. Whisk together well. Ladle into prepared ramekins. Add 1 1/2 inches of warm water to baking pan containing ramekins being careful not to get water into them them. Carefully place pan into the oven and bake for about 40-50 minutes or until just set but still jiggling in the middle. Remove from water containing pan and let cool to room temperature. Cool overnight in the fridge or at least a few hours. Prepare toffee topping with recipe below or buy plan toffee to use as topping. Toffee Topping 1/2 cup butter 1/2 cup granulated sugar 2 tablespoons water 1/2 teaspoon vanilla extract Combine all ingredients except vanilla in a heavy saucepan. Cook over medium-high heat while stirring until mixture reaches 305F or hard crack stage. You can measure with a candy thermometer or other favorite method. I like to drop some into cold water and if it's hard and shatters when you bite it, that's hard crack. Remove from the heat and stir in vanilla extract. Pour onto a silicone mat or marble slab. Cool and break into chunks saving some for garnish. Chop toffee with a large knife into small pieces to cover brûlée and broil as topping. How to broil toffee topping Set the oven to low broil and place rack in the top position. Add chopped toffee to cover about 1 tablespoon per ramekin. Broil for a few minutes or until toffee melts but doesn't brown. Add a sprinkle of large grain salt and serve immediately. If  melting takes more than a few minutes in your oven, chill to reset the brûlée and toffee for 10 minutes. Garnish with whipped cream and chopped toffee bits right before serving. Do not broil toffee topping and leave overnight, the toffee top starts to get soft and butter that was melted gets solid and not in a good way.

From fabulous cakes to scrumptious cookies, baking with kids is a great activity. Is it messy?  Of course!  But we live by the rule of if you're not getting dirty, you're not doing it right.  In this episode we talk about our experiences, what recipes we like making with the kids, and any tips we have discovered on the way.  But first, the older kids are planning a trip to Utah without the dads.  They have a PowerPoint presentation, a Spotify playlist, and a hundred-dollar budget.  We hope that Arches National Park is ready for them.  A 16-year-old and two 15-year-olds can probably make it over the Rockies, right?  The Great Dad Bake Off Quiz! A Fool is:A dessert made with pureed fruit mixed with cream.A type of puff pastry. 5 dads that thought it was a good idea to let Shannon write questions for this episode. A Grunt is a:A type of fishA combination of pie or cobbler made out of fruit. The sound I make during my morning sabbatical. The person that makes Larry's meals.What is a Ramekin? A finger bowl that you can bake a tiny custard in or a distant cousin of Rumpelstiltskin. What is a Reamer? What is a Stripper? Now on to the show! You can use the leftover eggshell to pick up any shell bits that get into the mixture.  Don't use your finger, use the eggshell!If you want to make a Roulade, here's the recipe! Lydia's Macaroons are good!Rory's Cherry CrispElla's Cardamom BunsWyatt's Mean Loaf of BreadLuke's Homemade PretzelsShannon's Lemon Tart recipeMick's Monkey Bread Recipe (Pioneer Woman)Larry's No-Bake cookieJakes Joy of Baking New York Style CheesecakeMike's Famous Lemon Cookies from Grandma1 box yellow cake mix, 3 eggs, 3 tablespoons of flour, 3 tablespoons of butter flavored Crisco, 1 tsp of lemon juice.  Mix all together and chill for at least one hour.  Roll into walnut-sized balls in a mixture of sugar and dry flavored gelatin.  Put on greased baking sheet and back at 10 to 12 minutes at 350 degrees.  Makes about 3 dozen cookies. Baking Tips from the Dads Find something you really want to make and do it over and over until you've got exactly where you want it. Make it fun.  Make whatever they want to make. It's more about making memories than it is about making something perfect (or edible.)Use kid-sized utensils to help your kids out! Be in the right place mentally, because you know that it's going to be a mess and that's half the fun.  Get ready to get dirty! For your teaspoons, get the stand-up version because it's easier to use with children. Using honey or peanut butter, spray your measuring utensils with a cooking spray first so the honey and peanut butter comes out easier.  Or measure your oil ingredients first. Use a cheese grater to chop your butter.  Mixed your dry ingredients and your wet ingredients separately before combining them. And finally, Shannon and his kids made a perfect puff pastry right after the recording of this episode!

📍 IntroductionWhen you cook one ingredient (e.g., pasta) in another ingredient (e.g., water), both elements must taste good on their own before combining Seasoning is the process of adding salts, herbs, or spices to food to enhance the flavor. It most commonly refers to the use of salt and is essential for ensuring that food is tasty from the inside out The salt in seasoning helps food taste brighter and more like themselves (as opposed to noticeably bland)Properly seasoned water tastes like seawater 🧂 Ingredients & Equipment:Kosher Salt  Ramekin & measuring spoon✔️ Instructions: Boil 4 cups water  Add 1/2 teaspoon of salt to the water Taste (carefully). Add salt gradually until the water tastes like pleasant seawater 📝 Notes, Tips, TricksDo not use table salt for cooking. It contains iodine, which releases a noticeably metallic taste when heated. Kosher salt is cleaner & economical (~$3 for a 5 lb box). It’s best to choose one brand (e.g., Morton’s or Diamond Crystal) & stick with it. This ensures you are familiar with how salty your pinch is. More info here. Salt the water only after it’s boiling to ensure it dissolves completely. Use a wooden spoon for safer tasting. Don’t shake salt from a bottle into something - it’s impossible to track how much is coming out. Most chefs keep kosher salt in a little bowl or ramekin within reach of the stovetop. This makes salting by hand easy & efficient. Memorize what 1 teaspoon and 1 tablespoon look & feel like in your hand for faster measuring in the future If the water is too salty, remove some with a cup and add more water. Having a filled, heated electric kettle on hand helps ensure you have hot water at the ready for adjustmentsContrary to popular belief, salt does not impact the speed of reaching a boil. Add enough, however, and the temperature will go up by 1 degreeFun fact: human saliva is .5% salt by weight, meaning food at a lower salinity tastes bland.
