Terminology – I’ve already used some words you might not understand if you haven’t been before The Hill – there are several small hills on the property and this confused me so much the first year I went. Look at the fairgrounds map – The Hill is just above the petting zoo.  It’s a wide open hillside where lots of folks can gather The Buildings – shorthand for Buildings A, B, C, D and 41 which is really one large building divided into sections. Sometimes also refers to Building E, the food hall The Barns – a group of much smaller, free standing, well, barns, on the far side from The Buildings. Building 22 has Upper and Lower levels (separate entrances), the rest are all 1 story Food – lines are crazy from 11:30 to 2 – eat before or after if you can.   Link to Map Seating – there are lots of places to sit, scattered around.  However, if you have issues with mobility, bring a chair in your car and have someone in your party go get it for you.  The paths or paved, but the fairground is all small hills.  Sit down if you need to, it’s not worth getting hurt.   Bags – try not to bring a backpack.  I made this mistake the first year, and you keep bumping into people by accident, it’s not worth it.   Book Signings & Author Talks – lots of fiber authors there, check out the link in the shownotes and make a note of who you want to see. On a related note – Make A List On Paper!  - Check out the list of vendors (link to searchable page) Cell phone signal is spotty.  Don’t count on having it – write down what you want to do, what time it is and where it is.  Speaking of spotty cell signal – it affects the vendors too.  If you have cash you won’t be stuck waiting while the vendor tries to process your card – and some of the bigger vendors will have a fast Cash-Only line. What am I bringing? Purse & 2 resuable shopping bags Water bottles – large one for the car, smaller one for carrying around in my purse. Larabars or healthy snack to combat the junkfood lol Cash Easy knitting – hitchhiker or a sock or both for walking around Intermediate knitting for hanging out with friends and dinner, etc Drop spindle and fiber Folding Chair Spinning Wheel & fiber for if I get tired and need to sit for a while   What am I wearing? Haven’t decided yet, probably my Frosted sweater by Lisa K Ross or Dancing Dragons Coat by Heike Campbell over a Mommy’s Tunic or Second Grace by Bristol Ivy.  I’ll probably have a shawl each day as well and maybe a hat or mitts.  I’ll have layers underneath to keep warm because I am always cold.  I will probably wear warm, well-loved boots the first day and sneakers the second

Lara Merriken is a dreammaker. I have so much love and respect for this woman. I knew she was special from the minute I met her at VeloSwap in 2003, slinging energy bites in plastic baggies. I had a feeling she would change the world, I just didn’t realize how much she would change it and how quickly. Lara is the founder of Larabar. If you aren’t familiar with Larabar, I’d be shocked, because it’s now an absolute empire. She had the idea to create healthy, nutritious energy bars when she was frustrated with her options on a hike many years ago. The goal was to use clean, simple ingredients. She started by dreaming up flavors and then mixing dried fruits and nuts in her kitchen. That was almost 20 years ago. Today Lara is a free agent of sorts, as she sold Larabar to General Mills a mere 5 years after she officially launched. Hers is a massive success story on the business front, but it’s what she’s done since that many don’t think about – how to redefine yourself after a company with your own name is no longer yours. We talk about that and so much more in today’s episode. You may not know that I have a special connection to Larabar. When I officially debuted Skirt Sports at the 2004 Ironman Wisconsin, I was sponsored by Larabar. My claim to fame is that I’m the only athlete Larabar ever sponsored! Anyway, in my special needs bag on the bike, I had 2 food items: an Oatmeal Cream Pie from the gas station $.50 rack and a Cashew Cookie Larabar. I ate them both and won the race! Which is funny because don’t you think she probably has her own? Anyway, I asked, "Do you still eat a lot of Larabars?" and she said, “I always test them.” She wants to know that they’re fresh and delicious and spot-on with the recipes. I love this about her. I’ve always respected Lara and really appreciated that she is such a genuine, “normal” person. The trick is when a normal person does something so extraordinary, how does she adapt and integrate her “new normal” into her life without compromising who she is? The really cool thing? This can apply to any big life change. How do you retain your core essence: the beautiful things that make you who you are when you experience change? Somehow Lara has navigated these waters with grace and self-love and is passing them down to her son as we speak. If you haven’t tried Larabars before, go do it. Her original Cashew Cookie will always be my fave. I saw that they just released a new Protein line which I’m now salivating to try. Allright then, you know what time it is. We are planning a trip to Europe (Lisbon, Portugal specifically) and would love your advice on a paleo approach to international travel. What are your recommendations on sleep schedules, exercise, and eating (of course!) while traveling internationally. I have heard that grains in Europe (including wheat) are not modified in the same way they are in the U.S., and am wondering if we could break our paleo "template" to try some local specialties, without risking a health crisis. I love your show and faithfully listen every week while shuttling the boys to various commitments. I think I will be officially starstruck if my question makes it on your show." Susan says:"Hi ladies! We’re pretty new to Paleo and I’ve found your podcast to be an awesome resource. I’m sorry if you’ve covered this topic before. My son is currently in a half-day preschool, so he eats lunch at home. But, he’ll be starting kindergarten in the fall. I know that there won’t be much he can eat at the school cafeteria so I’m wondering what to pack for his lunches and classroom snacks so that he doesn’t feel different from the other kids." (10:33) Portable healthy foods For Stacy, it's protein first. Protein is very satiating and it's something that will sustain her and her kids in a healthy way. Portable protein like Chomps is something her family always carries. When traveling, Stacy plans on two meals a day: breakfast and either lunch or dinner. In addition to protein snacks, Stacy also packs convenient snacks like Larabars. She looks for snacks that are lightweight, non-bulky. She tries to stay in an Airbnb or somewhere that has a kitchen so they have to option to cook meals. Sarah agrees. She keeps Chomps in her purse or when traveling, in her suitcase, so she has a protein snack handy. Fruits and nuts, are easy to find when you're out and about. Pre-packaged snacks are better for international travel. For school lunches, Sarah always starts with a protein and builds the lunch from there. (20:58) Kid-friendly healthy school snacks and lunches If you have a kid who's having a tough time transitioning and is worried about what other kids will think about their food, there are "real food" packaged foods you can use to transition them. Start by swapping out the packaged foods for healthy packaged foods then slowly start to swap out one healthy packaged food at a time for real foods. Stacy's boys really enjoy Chomps, Larabars (not safe for nut-free classrooms), and fruit snacks. Read the ingredients, avoid added sugar. Sarah and her kids love Veggie Go's fruit/veggie strips. Give them a $20 budget, pull up one of those online shops, and let them choose the healthy snacks. Sarah focuses on protein snacks for her kids. They noticed that Larabars on their own was too much sugar so these days, she'll pack a Chomps with sliced apple. Hard apples like Fuji apples or grapes, strawberries, blueberries, and blackberries keep really well in a lunchbox. Communication is key! Communicate with your kids and be willing to troubleshoot and adapt. (31:25) Scheduling wellness into your travel Stacy has a big cruise coming up, but she's been strategic about it. She tries to do direct flights (versus layovers) to avoid extra security checkpoints and added stress. Unfortunately, it is a red eye, but she's bringing melatonin to help everyone sleep. When flying internationally, meals are often included and these days you can choose allergen-friendly meals. If you don't have the option to choose, call the airline after booking to ask for a gluten-free meal. Sarah says bring entertainment (books, colored pencils, devices, etc) and anything that will help you or your kids sleep. Do your best to anticipate problems and plan for it. This doesn't always work so just do your best! (43:34) Eating wheat in Europe Some people do really well with European bread. Europeans use an older variety of grain that hasn't been modified as much. It contains about the same amount of gluten, but the difference is in the trypsin amylase inhibitors. Our modern varieties of wheat have about 100x more than the heirloom varieties in Europe. Sourdough has been fermented longer which makes it a better option. This is a very individual choice. If you do get sick that's going to put a damper on your trip. When traveling, your body is less stressed which means you'll be digesting food better! Europeans are very accommodating of gluten-free diets. Stock up on allergen cards in every language so you can clearly articulate your needs. Thanks again to our episode sponsor, Chomps! She was planning to go into medicine, originally, but during a hike with some friends, she had the idea for how to make a natural and healthy "candy bar." She borrowed a food processor from a friend (she didn't even have one at the time) and began the foot work for the HUGE success we all know as "Larabars." In order to make it all happen, once Lara had decided what she was going to do, she got herself a job in a health food store and began to do the foot work necessary to understand what she would need to do to make it happen. This is an old interview, and I apologize for the sound quality, BUT it's worth it! :-)   About Lara Merriken Denver-native, Lara Merriken had an idea to make a convenient, whole food bar that tasted delicious. As a former junk-food nut, she desired something that was indulgent but wholesome. After scouring the aisles of grocery stores and noting popular flavors of ice cream and cookies, she delved into her own product development. With friends and family serving as focus groups, she tinkered with recipes. The next step was to launch a company that would initially be five delicious Larabar flavors: Cherry Pie, Apple Pie, Cashew Cookie, Banana Cookie, and Chocolate Coconut Chew. Do you know much about these 2 products? Are they safe? Tony asks: I've a query about snacks; You advocate Larabars, which I like, however I've spotted Nature Valley Roasted Nut Crunch Gluten Free bars which are substantially lower in sugar when compared with the Larabar; 6g vs 19g. Obviously the sugary ingredients in Larabars are mainly dates and sugar is listed on the Nature Valley product, so which in your opinion is a better bet to grab in the convenience store for a quick energy pick me up? Alan asks: I just listened to your pod the other day talking about smoke points of oils and had a practical question. I use olive oil or coconut oil to fry up eggs every morning. i have no idea how hot the oil gets or how i would find out. should i be concerned or cook at a mid range temp on my stove instead of higher? any general suggestions or guidelines? Matthew asks: I just listened to the Podcast about electrolytes/sports drinks/water. The conclusions about electrolytes are amazing,though that doesn't change the fact about sugars and nutrition during exercise. Yes electrolytes aren't needed in sports drinks, but does that mean that sport drink formulas have to be re-vamped? Do the electrolytes do anything for the absorption/breakdown of say the malodextrin in Heed or simple sugars of Gatorade? durianrider asks: besides obese fad diet followers that believe you can be in great shape as an athlete on 400-600calories of carbs a day, do you know any REAL athletes that ONLY eat 400-600cals of carbs per day? Are you trying to tell us that you can restore glycogen on 400-600cals of carbs a day and eat lots of fat and protein AND recover in 24hours? lol! You need to playback the Doug Graham interview and learn some basic human physiology. Ed asks: love to do triathlon, but I'm afraid of swimming in the ocean or lake. I swim an 1hour, twice a week in a pool that is 12ft deep, can you help me, or give me some idea's of what to do, to overcome my fear. Cody asks: Every time I run, (mainly to stay in shape and train for basketball) I experience shin pain. Im not quite positive it is shin splints though, it starts almost instantly when I start my run, and never really gets worse, its a mild pain but enough to get me to stop running way sooner then I should be stopping. But the weird thing is when I play football and basketball or any other activity that involves me running, I dont get this pain which is what makes me question rather or not its is shinsplints. So to sum it all up when I run its unavoidable (for the past year and a half) but anything else it never happens. Chris asks: Hi Ben, in the past, you've recommended avoiding all sugars and starches for those active people looking to finally achieve that 6-pack, and who are already fairly lean. My question is about what to eat while avoiding sugars and starches. But what would the diet of an active person look like without sugar and starches, and how long would that person need to do that? My other concern is energy levels and motivation to workout, motivation suffering the most when I feel out of energy. Will trying to look good affect my ability to train my body?  I also mentioned I experimented with severe carb restriction a few times (veggies only carb source), and always experience equalibrium loss within a few days until I started eating carbs again. What's the deal with that?
