Big Game Canadian Whiskey 100 Proof This started out as an experiment. We were going to take 3 year old Canadian Whiskey and age it in Taxman Belgian Style Dubbel barrels for 6 months. Well, projects and schedules intervened and we never quite got around to bottling it. Fast Forward 3 YEARS, and what we have today might be the most perfectly engineered flavor-forward Canadian whiskey we've ever tasted. For starters it spent 3 years in Taxman freshly dumped Belgian Dubbel barrels. Secondly, we bottled it at 100 proof, not very common for a Canadian whiskey, and third, it's completely unfiltered, so what you're getting is a masterclass in Canadian and local craft beer barrel ageing. Bottom line, it's damn good with sweet caramels and vanilla dominating the nose, then exploding with juicy Canadian rye flavor complimented perfectly by the rich sweet maltiness from the dubbel casks. This stuff is LEGIT, and once it's gone, it's gone!

“With beer and chocolate, they're about so much more than just creating something that tastes good. There's a story that's trying to be told if you just take the time to try to go on that journey and listen to what your senses are telling you.”Katie Clark Gabbard is a professional artist working in Dayton, Ohio, creating vividly colorful paintings in unexpected formats, using the very shape and texture of each piece to challenge perceptions within the sometimes staid fine art world. In this episode we hang out with Katie as she uses her paints, brushes, and canvases to interpret and express what her senses of taste and smell experience when presented with beers and chocolates without knowing anything about them. I brought along several chocolates and beers to Katie's studio, and gave each to her to taste, one at a time. She would then spend ten to fifteen minutes painting a small canvas, expressing in colors and shapes the flavors she experienced and the images they conjured. Only after she finished each would I reveal what she had just tasted. We were both fascinated by the results.You can check out a blog post with photos from the session here. The chocolates we tasted through were Crow & Moss Vanilla Smoke 69%, Baiani Caipirihna, and Loon Heirloon Bolivia 70%.The beers we tasted through were MadTree Luna Lux White IPA and Spencer Trappist Holiday Ale.Previous episodes mentioned in this episode include Episode 19: Wood, Beer, & Chocolate and Episode 22: Loon Chocolate.As mentioned in the episode, I'll be leading a virtual tasting of Belgian Dubbel, Tripel, & Quadrupel Ales on Saturday, April 23. You can find the full list on their website.  Here are some of the highlights: Three special holiday seasonal beers by Bridge Brewing (North Vancouver): Grinch Winter Ale (6.5% ABV | 26 IBU) A tasty Christmas-style beer with vanilla, cardamom, cinnamon and clove. Santa’s Sac (10% ABV | 30 IBU) A big and bold Belgian Golden Ale with notes of fruit, spice and pepper. Sleigh Booster (9% ABV | 71 IBU) An Imperial Red Ale with a big dose of hops to round out the malt character. Available at government and private liquor stores, and the brewery. Found on Vancouver’s North Shore Ale Trail.   Two special barrel-aged beers by Backroads Brewing (Nelson): Ambree (6.8% ABV | 20 IBU) A Biere de Garde aged in Okanagan Valley Pinot Noir barrels with a tart, red-wine finish. Floral, fruity, spicy, and bone dry. Barrel-Aged Hermannator Ice Bock (9.5% ABV | 25 IBU) Smooth and malty with vanilla and oak - call it the Bourbonator! Found on the Victoria Ale Trail.   Stoked Winter Ale by Mt Begbie Brewing (Revelstoke) (6% ABV | 20 IBU) This easy drinking winter ale is brewed with rich malts and subtle spices: cloves, nutmeg, cinnamon and cocoa. Available at government and private liquor stores, and the brewery. Found on the Kootenay Rockies East Ale Trail.   Frozen Pond English Strong Ale by Silver Valley Brewing (Maple Ridge) (7.5% ABV | 40 IBU) Rich and malty with hints of caramel, toffee, dark fruit, and treacle. Available at the brewery only. We will be adding Maple Ridge to the BC Ale Trail in 2019.   Winter Beeracle Winter Ale by Dead Frog Brewing (Langley) (7% ABV | 24 IBU) This winter warmer is a celebration of all the good things winter brings: complex beers, warm fires, close family, and good friends. It features flavours of dark chocolate, hazelnut and orange. Available at government and private liquor stores, and the brewery Found on the Fraser Valley Ale Trail.   Brix & Plato by Mount Arrowsmith Brewing (Parksville) (7.2% ABV | 20 IBU) This rich, dark amber Belgian Dubbel is brewed with additions of organic cocoa nibs and orange peels, then finally aged with Shiraz-steeped oak staves, resulting in a festive, complex beer. Available in privately owned liquor stores, and the brewery. Found on the Vancouver Island Ale Trail.   “Sessionable” Russian Imperial Stout by Trading Post Brewing (Langley) (8.5% ABV | 40 IBU) Brewed in collaboration with Full Barrel Brewing, the brewery’s local Homebrew club, this “Sessionable” Imperial Stout produces big flavours while offering a low ABV for the style. The aroma of brown sugar and dried fruit combined with bourbon and oak create levels of complexity that delight the senses. Available in privately owned liquor stores, and the brewery. Found on the Fraser Valley Ale Trail.   Two special seasonal beers by Parallel 49 Brewing (Vancouver) that are ideal for cellaring: Russian Imperial Stout (10.5% ABV) This whiskey-barrel aged Imperial Stout is warm, full-bodied and fit for a Czar.
