Building hype for a new brewery project is one of the most difficult tasks in the game, but the champs behind Herman made it happen. Nestled in the Laurentians in Prévost, QC, Herman has cemented itself as a leading purveyor of crispies (primarily), haze, sours and farmhouse in the province. Co-Founders Fréd and John joined Cee to chat about their origin story, why they keep making gorgeous farmhouse ales in bottles, the labour split between the partners and why that works, their love of coffee, their approach to their beer, how they handle collaborations and why collabs helped put them on the map, their Ontario collabs, why they stick to short cans, their "new age vintage" brand and labels, where the name came from, and why they want to collab with Drake. They got into five killer Herman brews - Echo Lite Light Lager, Spund Kellerbier, Severni Světlý Ležák 12°, Pia IPA Néo-Zélandaise, and Periaca barrel-aged Farmhouse Ale with peaches and apricots.
Quebec has one of the most exciting craft beer scenes in the country, and no new brewery has made quite the splash in the past year and change that Bad Bones has. Launching in the Summer of 2024, Bad Bones has dominated end-of-year lists and become a must-stop for any Quebec visit thanks to their murky, creamy New England IPAs. Co-Founder Zack and Brewer Ryan (who's also a fellow Southern Hemisphere kid) join Cee to chat about everything that's happened in the past year, their expansion with a new taproom in Dunham, their shared time spent learning from Derrick at BreWskey, their move into Lagers (which Ryan is spearheading), West Coast IPAs and stouts, how they still can't keep up with demand, the optimum time to consume Bad Bones beers, how visualization and meditation play a role for Zack (both in his healing journey and his business), and the state of craft beer. They got into five killer Bad Bones Extra Hoppy Ales - Pelvis Double NEIPA, Stretcher NEIPA, X-Ray Double NEIPA, What's My Age Again? NEIPA, and Screws NEIPA. This was a banger - cheers! This is an episode we'd been trying to make happen for well over a year, but the timing ended up being perfect. Anyone paying attention to the global craft beer industry over the past few years will have noticed breweries either closing or merging/being bought up. Long-time friends of the show Sam Corbeil of Sawdust City and Aaron Spinney of MERIT joined Cee to talk about the recent merger of both of their breweries with Lake of Bays, how it all came about and how they felt about such a large change, the challenges they're both experiencing with regards to integrating all of the companies, how it works, what changes and what stays the same, how the beer will be treated, and their optimism for the future of their breweries. Their honesty and openness in this conversation were extremely appreciated, and shed a lot of light on the reality of being at the forefront of a brewery merger. They got into a bunch of killer Sawdust and MERIT beers: Sawdust City Fire Glow Czech-Style Dark Lager, MERIT Strange Animal Juicy IPA, Sawdust City Rudeneja Autumn IPA, MERIT 107 Dortmunder Export Lager, Sawdust City The Blood of Cthulhu Imperial Pastry Stout (2025), and MERIT Lost Time Märzen Lager. Nothing beats a contract-to-brick-and-mortar success story, and Lovebird is the latest brewery to do just that. Their beautiful location in Meaford, ON is in partnership with Chef Ryan Praskey of Belle Marche, and boasts a full kitchen, eclectic bar, cozy patio and a vibe that feels more like Montreal than Meaford. Co-Founders Alex and Emily joined Cee to chat about their long and unique journey through the beer industry, how their first business (a beer and wine bar called Lovebird Snack Club) kicked off their journey in Collingwood, ON, Emily's approach to the design of the space and their labels, how they curate their cocktail and wine list, their partnerships to grow the brand, their cuisine, why they still contract brew their larger brands, and where they plan to take the brewery in future. They got into seven Lovebird bangers, brewed both in-house and off-site: Birdweiser Light Lager, Goodness Gracious Raspberry Blonde Ale collab with Savvy Co., Crema Cold Brew Cream Ale collab with Good Grief, Good Things Dry-Hopped Rice Lager, Quiet Season Canadian Wheat Ale, Rosette Field Hand Saison, and Sunny Pale Ale. One of the most impressive breweries you'll find in the glorious province of Ontario is Beamsville's Bench Brewing. At EUVC Summit 2025, one of the most anticipated sessions broke down a powerful data set: 100 of Europe's breakout startups. This wasn't theory—it was company-by-company insight, straight from interviews and bottom-up analysis.Yes, there were rogue slides.Yes, the crowd wanted to skip to the AI part. And yes, it delivered.~75% of these startups are based in Germany, France, and the UK.Despite growing noise around new hubs, Europe's big three remain dominant. It reflects ecosystem maturity—but also a challenge: how do we better back breakout teams in the Nordics, Baltics, Southern Europe, and CEE?For the first time in years, Fintech dropped in sector rankings.Instead, we saw a wave of AI-native sales and marketing tools—building products that help companies grow smarter, automate go-to-market, and personalize customer acquisition at scale.“This year's cohort is selling before building. AI is their leverage.”One of the most notable shifts: a significant increase in solo-founder companies. This reflects:A rise in repeat operatorsGreater early-stage toolingMore confidence in focused executionIt also implies VCs may need to shift their bias—many of these founders are no longer waiting for a co-founder to “complete” them. The moment everyone waited for: AI-native insights.49% of these 100 startups are AI-native at their core. This means:AI is not bolted on—it's the product itselfMany founders have already moved beyond horizontal LLMs to verticalized applicationsThey're monetizing via use-case depth, not just model architectureLast year's 100 had an average of 25 employees per company. This year's cohort? Just 14. That's a 40% drop. But don't mistake that for weakness—roles are more specialized, and teams are more surgical. These aren't MVPs—they're hyper-focused execution machines.“Today's teams are smaller, sharper, and trained on efficiency from Day 1.”Across hundreds of founder interviews, one theme stood out:Tool loyalty is low.Founders are switching infra, models, APIs, and tooling with no hesitation. That's not a sign of flakiness—it's a sign of rapid evolution, where AI-native teams optimize continuously.Controversially, the speaker closed with a contrarian take:“I believe European AI regulation will actually accelerate enterprise adoption.”Why?Clarity breeds confidenceCorporate buyers need frameworksKnowing what's allowed = faster go/no-go decisionsIn a twist, Europe might become the first-mover on enterprise AI—not in spite of regulation, but because of it.Final Message:“AI-native is not a trend. It's a new category of company. And Europe is building it—faster and leaner than ever before.”Let's keep watching the signals. Let's keep fueling the flywheel.

Back on Episode #11 of the Business of Beer series, the team broke down all the elements of our Get It In Ya® SpecTAPular beer festival in detail. We wanted to go deeper into the world of craft beer festivals, so we connected with Kevin Hurtubise of the Orléans Craft Beer Festival (along with the Kanata Craft Beer Festival and the Orléans Cork & Fork Festival) and Jamie White of Broadhead Brewery for a much more in-depth conversation. Cee and the boys got into the history of both the festival and the brewery, the different festival models for both vendors and consumers, why breweries should work with festivals and take it seriously, why craft beer drinkers should attend and support festivals, how festivals support the goals of the industry, how COVID affected in-person events, the #WishYouWereBeer moment, the home brew competition and the Bond Brewery success story. They got into six fantastic beers from Broadhead - Blueberry Blonde Ale, Ottawa Wheat 26 Raspberry Wheat Ale collaboration with Emily Clark, NEIPA New England IPA, Amber Ale, 174 Taproom Series No. 123: India Pale Lager, and 174 Taproom Series No. 124: Dry Hopped Italian Pilsner. In this episode, I chatted with Prospect's breakout star Sophie Thatcher—known for her haunting turn in The Exorcist Season One—and co-director Zeek Earl to explore the making of one of indie sci-fi's most atmospheric gems.
Barrel-focused breweries seem to be fewer and further between these days, so when the opportunity arose to chat with an Ontario barrel master, we were pretty stoked. Owen Roth of Passage Brewery sat down with Cee to talk about his illustrious brewing career from Granite to Side Launch to Bellwoods, starting his highly-lauded brewery Still Fields and the story of bringing it to a close, his approach to beer with his backyard brewery Passage, how he works with local suppliers, his love for all things farmhouse, how his beers reflect the seasons, the future of barrel-focused breweries, his awesome (and limited) Bespoke Barrel Society program and how folks can access two exclusive beers every month, and truly what makes Passage unique. They got into six of Passage's impeccable brews - Shifting Winds Barrel-Aged Farmhouse Lager, Export Gold Export Ale collab with Heart's Tavern, Slow Bloom Barrel-Fermented Grisette, Whispering Dawn Barrel-Aged Farmhouse Ale, Endless February Barrel-Aged Stout, and Midnight Musings Barrel-Fermented Dark Farmhouse Lager. This was such a great chat - cheers! BAOS Podcast Subscribe to the podcast on YouTube | Website | Theme tune: Cee - BrewHeads
It feels like the year is just zipping by so quickly that now we've crossed the halfway point, it's worth dipping into some of the industry trends we're seeing. BAOS Podcast and High Season Co. Co-Founder Tiffany joins Cee to chat about trends including brewery-run festivals, large themed beer drops, mergers and acquisitions, how breweries increase the average ticket price, the importance of varied offerings and non-alcoholic beverages, the return of the flagship, variety packs and the varying packaging options, and a lot more. They selected some hand-picked gems: Tooth & Nail x BAOS Podcast BrewHead NZ Pilsner, Barrique Brewing & Blending Haus Pilsner, and Back 10 Cellars Start From Scratch Chardonnay 2022. We'd love to hear your opinions on any of these trends - leave a comment on social, Spotify or YouTube! And a note on the audio - our software glitched, and the recording slowed and pitched down gradually over the two hours. We fixed it the best we could, it's mostly fine, but just a heads up! This pod might be the record for the newest brewery to appear on the show! Sainte-Marthe, QC's Microbrasserie Loup-Garou (meaning "werewolf" in English) had only been open for 10 weeks by the time they appeared on the podcast, and they were put on our radar by friend of the show Mike Davis of 4 Origines. Owner and Brewer Scott Cuggy joined Cee to chat about his illustrious brewing career (he even made the beer we drank on our first episode back in 2015!), the importance of water and the challenges of brewing on a farm, the optimal brewery employees, old favourite classic beers that inspired Scott's brewing, why their location is optimal, the language sensitivities in the area, how Untappd affects breweries, their value-add approach to their food menu, and his future plans for the brewery. They got into five killer Loup-Garou brews - True Grits Pre-Prohibition-style Corn Lager, Kouhoutek 12° Czech-style Pale Lager, Fence Post Kölsch, Créatures Effrayantes 2 NEIPA and Créatures Effrayantes 3 NEIPA. Incredible debut, excited to see where they go! BAOS Podcast Subscribe to the podcast on YouTube | Website | Theme tune: Cee - BrewHeads
There's a fair argument that Prince Edward County's All My Friends brew some of the most sought-after beers in the province, and that was essentially cemented during this pod. Rob and Ryan joined Cee to chat about what's been happening over the past two years since the last chat, they talked about their Nos Amis Québécois drop where they collaborated with five incredible breweries from Quebec, their passion for beer that keeps them going, their travels for beer and the inspiration they derive from it, the camaraderie between the three owners, Ryan's approach to selling their products, how fast their beers move, the effect Untappd has on their business, how they deliver a quality experience in the taproom, and their feelings about expanding across Canada and into the US. They got into all five of their Nos Amis Québécois collabs and their Freestyle Hops collab - Tropique Hazy IPA with Sir John, Voyage Hazy IPA with Le Ketch, Gusher #11 Smoothie Sour with BreWskey, Flare Hazy IPA with Freestyle Hops, Ghost Rider Triple IPA with Bad Bones, and Cursed Double IPA with Messorem Bracitorium. This was a fun ride - cheers! BAOS Podcast Subscribe to the podcast on YouTube | Website | Theme tune: Cee - BrewHeads
There's a lot of fear and misinformation around HRT, and one of the biggest myths is that HT is a highly significant cause of breast cancer. That is not the case. This is a remnant concept from 2002, with MANY caveats. Calls for the removal of the black box warning on hormone replacement therapy (HRT) stems primarily from the outdated and limited nature of the data from the Women's Health Initiative (WHI) study published in 2002. The WHI, while groundbreaking at the time, focused predominantly on a specific formulation of conjugated equine estrogens (CEE) and medroxyprogesterone acetate (MPA) in older, postmenopausal women, leading to concerns about its generalizability to the broader population of women considering HRT. This is why on July 17, 2025, the FDA met with a panel of experts, in open forum, to hear the petition of removing the black box warning on hormone replacement therapy. Listen in for details. 1. British Columbia boasts one of the strongest craft beer scenes in the country, and it's not something that we get a taste of enough out East. So when we got word that a new brewery was crushing the haze game in BC, we had to have them on. Miguel and Andrea Molina of Changing Colours Brewing Project joined Cee to chat about the difference between their hazy IPAs and their saturated hoppy ales, why they put their flagship beers in short cans vs tall cans, their awesome story of owning the best beer bar in Quito, Ecuador to moving to BC to work in beer and start their own brewery, how they both work together on the business as a husband and wife duo, why the West Coast hasn't embraced haze as much as the East, how they got their hype status, how they've been working with local breweries to get their beer on tap, and where they plan to take the company. They got into six gems from their lineup - New Wave Double Dry-Hopped Pale Ale, Astro Zombies Double Dry-Hopped Hazy IPA, All My Friends Are Metalheads Saturated Hoppy Ale, The Separation of Church & Skate: Skate Hoppy Ale and Church Hoppy Ale, and Anti Manifesto Amplified Hazy IPA. Why do Europe's brightest founders still feel forced to leave for Silicon Valley—no matter how much money or talent we pour into the region? Every year, ambitious startups across Europe and CEE struggle to scale—not for lack of ideas, but because of invisible barriers that keep global success out of reach. Is it really just about capital—or is there a deeper mindset and playbook that only a handful of founders ever discover? In this episode, venture insider Enis Hulli (General Partner at e2vc, investor in 40+ startups, 3 unicorns, and builder of bridges from Istanbul to the Bay) pulls back the curtain on the real reasons US-based startups keep winning—and how founders from Turkey, Eastern Europe, and beyond can finally turn the tables.
