Luladey Moges on Ethiopian Cooking and Her New Cookbook Enebla: Recipes From an Ethiopian Kitchen

This week, I speak with Luladey Moges. She's the author of the new cookbook Enebla: Recipes From an Ethiopian Kitchen. Growing up, first in the Ethiopian capital of Addis Ababa and then in the United States, she learned the art of traditional Ethiopian cuisine from her grandmother, mother, and aunts. She has long been an enthusiastic home cook, introducing the tastes of Ethiopian cuisine to her friends in North America. At the same time, her career in hospitality and fine dining management has taught her what it takes to build a balanced menu and impress discerning gourmands.People love Ethiopian cuisine for its unique combination of spices, aromas, and sociability. Dishes are served to be shared with family and friends, and unlike many cuisines, Ethiopian food has traditions of vegetarianism that make it particularly popular among meat-free cooks and diners. However, it can seem baffling to the outsider. Where can you get spicy berbere? How do you make injera? And doesn't it all take hours to prepare? In Enebla (which means let's eat!) you'll learn how to prepare aromatic wot stews, hearty tibs, breakfast scrambles, colourful salads, authentic injera sourdough flatbread, and even how to enjoy a traditional Ethiopian coffee ceremony. Dolly Parton sings us in on today’s Cadillac Jack: My Second Act podcast. Then the show can’t fully begin until Donna and Cadillac Jack clear the air. You’ll have to stick with us through the first six minutes of the episode as we dig up some irritation with memes, communication habits and “a double dose of Rock.”  The real show starts with a tip: You can now listen to Cadillac Jack: My Second Act on all Delta flights. Just search “Cadillac Jack” on the Atlanta-based airline’s in-flight entertainment center. Then some quick hits like Morgan Wallen’s record breaking week and the Grammy’s new producer. The real meat of the show is spent on Oprah’s interview with Prince Harry and Meghan Markle.  There were more than a couple jaw-dropping moments in the two-hour special. Donna points out some anger over Harry’s parents, crisis-inducing pressures on Meghan and who exactly was concerned about their son Archie’s skin color.  You’ll hear a few clips that were not aired during the interview. Loneliness and thoughts of self harm were discussed in the interview, something that will cast more light on the challenges of mental health. There were a few bright lights in the show, like Tyler Perry’s good graces and the incoming baby girl.  Louie Anderson had a role in Coming to America because Paramount said the movie had to have a white guy. At least, that’s what Eddie Murphy says. You’ll hear the clip in question and a preview of the follow-up, which is streaming on Amazon Prime. The reason we talk about it on the show is because of the massive marketing campaign that pushed it out. From wrapped trucks to high-dollar commercials, the promotions were everywhere.  The show caps with a story about Ethiopian food. That’s all we have to say.

Konjit Zewge, at the age of 89, documented her succulent dishes in her book Yemouya Kouncho. She wrote her book for the sole purpose of passing the art of preparing traditional Ethiopian cuisine to the next generation. Her parents' home was always filled with extended family, neighbors and other visitors who delighted in the savory dishes. Running the household was traditionally the women's job and learning how to prepare food started at an early age. As an ardent student, Zewge made it a point to write down procedures, the various ingredients and amount used in recipes. Her book has been translated to English by her daughter, Mesrak Mekonnen. Mekonnen lives in San Francisco.
