An exclusive interview with author, food writer and all around brilliant human Sejal Sukhadwala, where we talk about Indian food, Indian history, the word curry, and the spread of said food but also Indian cuisine around the world and especially UK. We've met at the British Library Member's Area -hence the background chatter- and talking for nearly two hours about the long story of Indian food.Since starting this podcast over two years now, I've covered many many topics from the ancient world. But I've never ventured in great detail in India's past, to examine her vast, rich cuisine and history into any detail. Of course we know the ancient Greeks and Romans had trade networks in land and on sea that stretched to the Indian subcontinent, and there was a complex and interconnected commerce of spices, of many expensive ingredients used in the ancient Greek and Roman cuisine. Chiefly pepper, black and long pepper, but also cinnamon and ginger and various others. Some of the world's earliest civilizations rose and fell in the Indian subcontinent long before the Greeks wrote and spread the Homeric epics. But what do we know of the Indian culinary history? What do we know of their foods and ancient recipes? Did the complex mix of religions over the millennia and especially with Hinduism and later on Buddhism played a significant role in the diet of the people?Have many things survived? What's the lineage that connects the past inhabitants of this vast land to the present day? Many of our staples today and some of the most popular vegetables and fruits have their origins in India. Cucumbers and aubergines are two prime examples. Sugar from sugarcane first is mentioned in ancient India of 1000BCE as we've seen in the episode of the podcast with Dr Neil Buttery a couple of months ago…Well I'm very happy to say that I have a very esteemed guest on today's episode to talk to us about many aspects of the complex and often misunderstood cuisine! "There is no reference to the biryani in the popular domain earlier than 125 years ago. Biryani was just one of the many varieties of pulao. One text tells us that no civilised gourmet in Lucknow touched biryani. They only ate yakhni pulao. So how has biryani become so important? Because if you are a show off and nouveau riche, you could show that, look, I've cooked something so expensive and exotic for my guests! Yes, the Nizams of Hyderabad, with the Hyderabadi dum ki biryani, did cultivate it into a very good art form. But the Nizams rose only after the decline of the Mughals so the biryani came from the Nizam who was experimenting with Turkish and Persian food. The food was from different directions. The biryani has been mythologised and mystified as an exotic dish so it has become aspirational. But a pulao is a pulao is a pulao and, with all due respect to biryani lovers, a biryani is a bit of a con! The biryani rose after 1857 to please the British. Baby foods, drinks and protein powders have all been in the news of late – are these products harming rather than helping your health? The latest controversy has centred around Nestle, a well known brand in India – an investigation recently found that all Nestle baby cereals sold in India contained almost 3g of added sugar – but the same cereals sold in European markets had no added sugar. The harmful effects of sugar are now well known – it can contribute to obesity as well as multiple health complications later in life. The Centre has now asked the Food Safety and Standards Authority of India to look into this. Other news involved the government asking e-commerce sites to stop the classification of Bournvita and other such beverages under the ‘health drinks' category. And just before that, we were given the shocking news that many protein powders not only do not have the amount of proteins they advertise, but may also have harmful components. So what are the laws regarding baby food and processed food in our country? How are companies allowed to advertise these foods and drinks and can they be labelled healthy? Who looks into the safety of these products that are found in our supermarkets? And what does India need to do to classify which foods are healthy, and which are unhealthy, considering the huge burden of obesity, diabetes and heart disease that the country is grappling with? Zubeda Hamid speaks to Dr Arun Gupta, public health expert, central coordinator of the Breastfeeding Promotion Network of India and convener of the Nutrition Advocacy in Public Interest.

Tom opened the show by surprising Jill with a bonus recording-day treat: Funyuns. Jill then shared her impressions of the updated-for-2025 Ram 1500 pickup truck. Jill was generally impressed by the new truck, but had some reservations regarding the new $90,000 Tungsten trim level. I chat with a cognitive scientist who researched whether smell preference is cultural, personal taste or universally disliked among humans because of its chemical compounds.
