We began the episode with Morgan and Deb Manchester who own CraveWell Cafe in Pennsylvania. The husband and wife partners began their path to a fast-casual healthy concept after Deb had a medical scare. The duo decided that they didn't want Deb going back to work for someone else, and they wanted to focus on healthy food options--something they found was lacking when they were out and looking for a quick bite to eat. Now, they've just celebrated their 5-year anniversary of owning CraveWell Cafe and are excited to share their healthy smoothies, sandwiches, cold-pressed juices, and more with all of you!Liam Kelly is no stranger to hard work, and even began helping out a family member's business at the age of 8. Later on in life, he found himself drawn into the culinary world when Ireland competed in the 2010 world cup and was hooked. So, in the late 90's he made the decision to move to the states and was offered a job inside a Manhattan bar. Soon after, he became a managing partner of the place and helped to open Tir-Na-Nog, a well-known Irish Pub & Restaurant chain. After that, he took a break and worked in Australia on boats...but eventually was drawn back to the states with a desire to open his own place in Philadelphia. Today, Liam is the Managing Partner of Con Murphy's Irish Pub in Philadelphia, Con Murphy's Ocean Bar & Grill in Florida, and he is a buyer for Aylesworth's Fish and Bait, Inc.There's some sweet rewards when you stay tuned for our last guest, Gize Negussie, who owns and operates Negus Winery which is located in Alexandria, VA. Why is this such a sweet reward? Gize is the first Ethiopian Honey Wine maker in the US, with strong familial bonds. The recipe for his signature blend was the one he was raised on. According to Gize, Tej (the honey wine, which is similar to mead) is always on the table when there's an occasion to celebrate. The signature wine also happens to be his mother's recipe but modernized to meet the needs of US regulations, and stamped with his mother's approval. Greetings Glocal Citizens! This week's episode is like the jetway bridging me between my two locations this week. From my Continental base in Accra, South Sudanese-Ethiopian-American, Nyamal Tutdeal, who is a conflict resolution and healing practitioner, joins us again to talk about, among other things, one of her homelands--Ethiopia, where I found myself (in Addis Ababa) for the weekend. Nyamal is a Co-Director and Co-Founder of the NyaEden Foundation. She also works as an Adjunct Professor at both Arcadia University and Webster University in Ghana, where she provides academic support and teaches Introduction to Human Rights, Refugee and Migration Movement, Advocacy, NGO and Civil Society at Webster University Ghana campus. She has worked with various immigrants, migrants, refugees, indigenous communities, and women groups, both domestically and internationally. She is a notable international speaker and an advocate for displaced communities. Her advocacy work took her to the White House during President Obama's term in office. She has hosted cultural events and facilitates dialogue on conflict resolution, antiracist/race relations and peacebuilding. She is also a mediator and teaches mediation, conflict coaching, restorative justice and conflict transformation. Nyamal is the co-founder and Executive Director of the NyaEden Foundation, an Adjunct Professor at Arcadia University and Director of Equity and Inclusion for CORA Services, a Nonprofit in Pennsylvania. She previously served as the policy director for Pennsylvania Immigration and Citizenship Coalitions, a Nonprofit working on immigrants and refugees issues, and currently sits on the board. First off the guests chat to Jake about Jollof Rice and give us some great tips for cooking the various localised versions. It's one of those dishes that everyone has a recipe for but no one has exact measurements. Typical, but it's fun experimenting. In this episode of GoGreenfields, River and Terran return to their bread series and try their hands at a classic Ethiopian bread, Injera.  The outcome is both beautiful and delicious! It's not so much the bread itself that makes this dish good for you; it's the teff flour which contains a lot of potassium, calcium and other nutrients.  It is the most nutritious part of the bread.    This recipe comes from Ethiopia and is a sponge-like flatbread.  It is often used in rolls, tortillas and other meat and vegetable dishes. This recipe does require some patience.  It takes three to five days to complete the recipe because of the fermentation process. We strongly recommend that you give this recipe a try anyway.  It is absolutely worth it. If you are a social media rockstar, experienced with Instagram, SnapChat, and TikTok, we welcome you to submit your information here.   Injera Bread Ingredients 2 cups Angelica Mills Tartary buckwheat flour 2 cup all-purpose flour 1/2 teaspoon salt 5 cups lukewarm water Directions  Gather the ingredients. In a large mixing bowl, combine the flours and salt until well mixed.  Add the water, stirring until combined. Cover loosely with a paper towel and let stand, undisturbed, overnight. Gently agitate the mixture with a wooden spoon in the morning (there should be bubbles already forming on the surface, and the fermenting water should have risen to the top). Cover again and let stand at room temperature, undisturbed, overnight. Repeat the process of agitating the mixture the following morning, and then one more round of overnight resting. After 3 to 4 days, your injera should smell sour and be very bubbly, which means that it's ready! Stir the mixture until combined. Heat a large, lightly-oiled heavy-bottomed skillet over medium-high heat. Add about 1/3 cup of the batter to the skillet, forming a thin layer of batter over the pan. Cook until bubbles form on the entire surface of the flatbread (do not flip; only cook one side like a crepe). Using a metal spatula, remove the injera and transfer to a plate. Repeat until all of the batter is used, adding oil to the skillet as necessary. Rabia Kamara grew up outside of Washington, D.C. as a child of immigrants, in a community of immigrants. The diverse cooking styles Kamara was exposed to at an early age followed her into the kitchen. Kamara pulled from those life experiences when creating flavors for her ice cream and dessert business Ruby Scoops. "Most of my friends were also first-generation Americans. So I grew up in a neighborhood where my next-door neighbors, one family was Ethiopian, one family was Vietnamese. So l would go to someone's house and eat Injera one night, or go to someone else's house and have Pho," she recalled. "We explore flavors that I think are important to us. My business partner grew up a military brat, so they got to experience life in different countries and also here... [we're] not afraid to try new flavors and be open to the criticism that comes with that." Kamara said they also look to what's in season when setting the flavor menu. "We use local dairy and local produce whenever we can," she said. "Since it's a beautiful summer produce season, we're gonna be doing some peach flavors, some peach and berry combinations as well as a corn ice cream [at their next pop up]." Kamara, who first came to Richmond to attend VCU, said she hoped Ruby Scoops would also serve as an inspiration for others to follow their dreams. "Growing up, I didn't see anyone that looked like me cooking. So I figured even if [our logo] was a cartoon, if I could make this logo of this little girl that looks like me, other little Black or brown girls would see that and be like, "oh, she looks like me. Her hair is curly like mine,' it will represent us in a way that we're not used to seeing," she said. "So I didn't mean to be a walking logo, but I'm happy to be if it's going to encourage other people to kind of try to follow their own back the path and dance to the beat of their own drum." After a false start opening a brick and mortar location earlier this year, Kamara is raising money to open Ruby Scoops in Northside Richmond. When the Instagram page Shades of Injera was started in 2014, the slogan was “We don't follow the culture, we create the culture.” On the page, they discuss sensitive topics like dating outside the Ethiopian community, sex and nontraditional religions. They also talk about the status of women.For instance, on International Women’s Day this year the page featured the face of the country’s first female president photoshopped onto an image of Rosie the Riveter. It got thousands of likes. But Shades of Injera didn’t tackle the issue of sexual assault in a big way until the Lifetime documentary series “Surviving R. Kris & Chris spiser "Injera" - surdejsfladbrød - med forskellige toppings, drikker kaffe i solen og må gå hjem uden chef's special dessert. For å bli en bedre løper dro jeg i februar 2018 på en tre ukers lang treningsleir i Etiopia. Her bodde jeg og trente på 2700moh. Jeg gikk vitenskapelig til verks for å måle effekten høyden hadde på kroppen min og tok blodprøver, VO2maks-test og laktat-profil hos Nimi før og etter oppholdet. Konjit Zewge, at the age of 89, documented her succulent dishes in her book Yemouya Kouncho. She wrote her book for the sole purpose of passing the art of preparing traditional Ethiopian cuisine to the next generation. Her parents' home was always filled with extended family, neighbors and other visitors who delighted in the savory dishes. Running the household was traditionally the women's job and learning how to prepare food started at an early age. As an ardent student, Zewge made it a point to write down procedures, the various ingredients and amount used in recipes. Her book has been translated to English by her daughter, Mesrak Mekonnen. Mekonnen lives in San Francisco.
