Today we're speaking of all things sweet in life, with French trained pastry chef, and Group Head Pastry Chef at Black Star Pastry, Arnaud Vodounou. Arnaud describes how his six year long training in Paris, covering all the basics of pastry making, gave him the foundation to be confident, flexible and creative in his craft today. A kind of intensive training that is rarely seen today.Despite his extensive training, Arnaud hesitated when offered his first opportunity as head pastry chef, initially turning it down from fear of letting others down. (A type of humility that is arguably also missing today.) Jo and Arnaud discuss how others' confidence in our potential can push us into places we didn't think possible for ourselves. Now a confident expert in his field, Arnaud speaks to the importance of continuing to look for creative inspiration for innovation, not just in coming up with new products but in improving the technical processes that form the foundation of pastry making. He describes this kind of creativity as the ability to improve with modern techniques but without a quality compromise. Chefs around the world are doing this and sharing new methods with each other today, which Arnaud says is a critical part of innovation for a traditional field that benefits from open collaboration. Having worked as pastry chef - including at 2 Michelin star Parisian restaurant Taillevent - across France, Switzerland, Vietnam and Australia, Arnaud also speaks to diversity of experience he has lived, alongside personal learnings of adapting his approach as a leader. Anthony Thalassinos is the head chef of George Calombaris' new restaurant, The Hellenic House Project in Highett, a bayside suburb about 35 minutes from Melbourne's CBD. I think you would have to have been under a rock if you didn't know that George Calombaris had opened a new restaurant and I, like many was following the lead up and opening as well as the star-studded diners, such as Nigella Lawson and Gordon Ramsay who have been sharing their love of this new venue on social media. What I love about the Hellenic House Project's own social media is that it seems important to them to introduce the whole team as being part of a family who believe in the same things and want to share a sense of community as well as celebrating Greek culture. Anthony is introduced third post in as the head chef and “a proud Greek-Australian with a wonderful background cooking in some of Australia's best restaurants.” Obviously, my interest was piqued. In Dani Valent's podcast, Dirty Linen (side note, happy third birthday to that glorious podcast), Calombaris tells her that he has told everyone to keep an eye on Anthony because he has a really good feeling about him, that he's “ambitious, he's driven and he's a way better version of George Calombaris.” When I arrived at The Hellenic House Project, Anthony showed me around the more casual downstairs Kitchen and then we went upstairs to the more elevated dining space, The Good Room and explained that, three months in, they are far busier than they would have expected and are having to renovate to create more space and another kitchen. Anthony is one of those chefs who exudes passion for the industry. I found his enthusiasm for cooking, the hospitality community and for The Hellenic House Project intoxicating and I was hanging off his every word. There were countless moments in this conversation where I think I had the goofiest smile because what Anthony was articulating was absolute gold. I can't wait for you to hear this conversation and I can't wait to go back to The Hellenic House Project for dinner.

The past week's news centered on various individual public figures. We go through the newsmakers with Senior Editor of The Unshackled Damien Ferri. The UK has a new Prime Minister after the members of the Conservative Party elected by a margin of 2-1 Boris Johnson as their new leader to replace Theresa May. There is now a lot of optimism that as a Brexit supporter he can deliver what the British people voted for in 2016 and the UK can leave the European Union by October 31st. New Zealand Prime Minister Jacinda Ardern visited Australia last week to give a speech at Melbourne's Town Hall on Good Governance and met with Victorian Premier Daniel Andrews to discuss her wellness budget. But Ardern failed in her diplomatic mission with the Morrison government not backing down on its policy of deporting New Zealand born criminals from Australia. The Adam Goodes Documentary the Final Quarter about the booing saga in the final years of his career premiered on Network 10 last week. The media narrative now is that the booing was racially motivated but that is only because Goodes, once he becomes Australian of the Year labelled Australia as racist. This led to resentment from AFL fans and the booing began. Masterchef Judge George Calombaris has admitted to underpaying workers at his chain of restaurants to the tune of $7.83m. He was fined $200,000 by Fair Work. There was a lot of pressure on Network Ten to sack him from the show but in the end, all judges are leaving the show because ironically, they believed they weren't being paid enough despite being on million dollars salaries.
