Why did this author start the book with tasting, rather than history, regions or grapes? Was that because you wanted to get right into the sensory experience, rather than maybe some of the drier knowledge? Why is your experience of what tastes good as personal as a fingerprint? When it comes to wine, what do you mean by structure? Why are these important, these structural components? Do you think they matter more than identifying that, that wine's from Burgundy, that wine's from Bordeaux? In this episode of the Unreserved Wine Talk podcast, I'm chatting with Jordan Salcito, author of Smart Mouth: Wine Essentials for You, Me, & Everyone We Know. You can find the wines we discussed at https://www.nataliemaclean.com/winepicks. Giveaway Three of you are going to win a copy of Jordan Salcito's terrific new book, Smart Mouth: Wine Essentials for You, Me, and Everyone We Know. To qualify, all you have to do is email me at natalie@nataliemaclean.com and let me know that you've posted a review of the podcast. I'll choose three people randomly from those who contact me. Good luck! Highlights Why does our first impression of a wine's aroma matter more than we realize Why did Jordan ultimately walk away from the Master Sommelier service exam? How did the title Smart Mouth come together and capture the spirit Jordan wanted for the book? Why did Jordan choose to begin Smart Mouth with tasting instead of regions, grapes, or wine history? Why does Jordan see point scores and rigid wine hierarchies as a form of ego rather than a useful guide for drinkers? How do different people visualize or conceptualize wine while tasting? How does Jordan's concept of wine personas differ from traditional tasting language? What does the TALL framework explain about wine structure? How can simple sensory exercises help drinkers identify tannin, alcohol, acidity, and earth-driven flavors with confidence? About Jordan Salcito Jordan Salcito is an award-winning sommelier, author, and entrepreneur. A wine industry veteran, she has over a decade of experience as a sommelier at restaurants including Momofuku, Restaurant Daniel, and Eleven Madison Park (where she was part of the team to win the award for Outstanding Wine Service from the James Beard Foundation). What makes a wine feel soulful, transporting you beyond taste into a deeper emotional connection? What does experiencing harvest firsthand reveal about winemaking that never show up in books? What makes Northern Rhône Syrah come across as black peppery, smoky, and reminiscent of pastrami? In this episode of the Unreserved Wine Talk podcast, I'm chatting with Jordan Salcito who has published Smart Mouth: Wine Essentials for You, Me, & Everyone We Know, which was just selected as one of the best wine books of the year by the New York Times. Good luck! Highlights How did Jordan's father shape her earliest understanding of wine as family and connection? How did working at Restaurant Daniel shift how Jordan understands wine, fine dining, and food and wine pairing? What does Jordan mean when she describes certain wines as soulful? What's the difference between the old world approach focused on place and the new world approach focused on control and construction? Why did working harvests in Burgundy teach Jordan that could never be learned from books? How did molecular gastronomy pioneer Wylie Dufresne help her see restaurants as a legitimate intellectual and creative path? How did an early rejection from The New York Times become a signal to redirect her goals? Why did failing the advanced sommelier tasting exam become the foundation for eventually passing the Master Sommelier tasting on her first attempt? Today's Episode with Anthony Salcito:Anthony Salcito is the Vice President of Microsoft Education, helping others do more with technology as a tool around the world. Microsoft Education's main goal is to help drive student successes and have students leave schools with talent aligned to workplace needs and entrepreneurial spirit. Some specific work Microsoft Education does is provide tools like Windows, Office365, LinkedIn, FlipGrid, Minecraft, and more!Anthony's story began when he got his first computer and started to see a life beyond his neighborhood in Bronx, NY. His limitations to his own thinking were expanded once technology came into his life. He ended up working at Microsoft at a very young age because he was passionate about the work he was doing, spoke out and took on projects, and was open and transparent with his team. Anthony speaks on two universal truths: students always over deliver and teachers are not the problem, but the solution for transforming education. Education can sometimes be a challenge, specifically how to keep students engaged and help them want to learn. It is important to support teachers and bring teachers together so that they can share their ideas and learn from each other.Anthony explains his understanding of how the world's perspective of what it means to be a teacher has changed throughout COVID-19. Everyone has developed a deeper understanding of what it means to be a teacher, valuing education and technology in much more purposeful ways. Teachers possess valuable skills that can be transferred to other areas of life and other career paths. They are great educators, communicators, public speakers, and have great salesmanship.Anthony talks about how technology is going to change the workplace and careers that exist. There are and will be emerging technologies that need people who are interested in reshaping these technology building blocks. The biggest challenge Anthony is facing right now is dealing with the COVID-19 dynamic. Anthony is conscious about gaining energy and insight from helping others, being around, etc.You can follow Anthony on Twitter @anthonysalcito and find out more about Anthony's work at micrsoft.com/educationHot seat answers! In this episode, we’re joined by Jordan Salcito, founder of Ramona, a fast-growing brand of canned wine and wine spritzes. Following high-profile roles as the sommelier at acclaimed restaurant Eleven Madison Park and as the wine director at David Chang’s Momofuku, Salcito launched Ramona in September 2016. Lauded by critics and consumers for its striking package design and commitment to high quality organic ingredients and sustainable production methods, Ramona is distributed nationwide at Whole Foods along with independent retail chains and restaurants across the U.S. As part of our interview, Salcito spoke about the origins of her passion for wine and the inspiration for Ramona, why she identified cans as the ideal package type, why she’s not prescriptive about how and when people should drink the products and how cultivating industry relationships prior to the brand’s launch was critical to its fast start. Show notes: 0:33: Cupcakes, Meal Kits & What To Ask Consumers Post-Sale -- The show opened with Ray discussing a sweeter than usual start to his mornings, and Mike and Melissa praising two better-for-you snack brands. The episode’s hosts also responded to three questions posed by listeners this week, including ones about crafting consumer surveys for post-DTC sales and how brands can align with corporate gift programs and meal kit companies. 12:27: Jordan Salcito, Founder/CEO, Ramona -- Taste Radio editor/producer Ray Latif spoke with Salcito about why she named the brand Ramona, how she fell in love with fine dining and parlayed her experience into a career in wine and how restaurateur David Chang played a pivotal role in the decision to launch her own brand. She also discussed why “the vision for Ramona was never the can” even though that’s how the brand is visually defined, understanding the reasons that consumers buy the products, communicating values on packaging and what’s next for the company. Brands in this episode: Ramona, Belgian Boys, Pillsbury, Project 7, Quinn’s Snacks, Al Chapino, Blue Apron, Purple Carrot, Sunday Provisions, ButcherBox, Starbucks
