Brewers and hop growers are closer today than they ever have been before, but Bale Breaker (https://balebreaker.com)—in the Yakima valley town of Moxee—takes that proximity to a level rarely seen in beer. The brewery literally sits on the Loftus Ranch, in the middle of a hop field, with trellises and bines surrounding the production brewery and taproom. Trellises surround the taproom patio. Trellises stretch out from the parking lot. Hops are everywhere, so it's no surprise that Bale Breaker focuses on hop-forward beers. Brewmaster Kevin Smith started his brewing career on the other side of the cascade range, in Seattle, before returning to the family farm and joining with his sister and brother-in-law to launch the brewery. But through Bale Breaker, he's been able to showcase a hop-forward identity that embraces the crop he grew up around. Hoppy West coast and hazy beers are the brewer's forté, and in this episode, Smith stays focused on hops. In it, he discusses: building a new approach to West coast IPA and pale ale understanding the impact of cohumulone levels on bittering creating unexpected hop blends with underutilized hops like Loral the sensory range driven by pick time in popular hop varieties like Citra and Mosaic dry hopping methods that maximize hop flavor and minimize vegetal matter building a common sensory language in the brewing team selecting and processing hops from the farm and more. In the 1920s when the practice was more common, Meghann Quinn's ancestors followed the railroad west and wound up settling a farm in Washington's Yakima Valley. Following the repeal of Prohibition, they got into the hop industry and have ridden the wave since; supplying the larger brewers through the uninspired decades of large-scale American brewing, and into the boom days of today's craft surge. Seeing the success of hops in the larger market coupled with an interest in homebrewing Quinn, her husband Kevin, and her brothers launched Bale Breaker brewing on the property in 2013. Kevin Quinn is my guest today. How close is the brewery to the field? It takes less than five minutes to get from the bine to the kettle, he says. It's more than hops here as well. There's an apple orchard on the nearly 3,000-acre farm, along with fields of Hungarian Wax Peppers, some hemp, and 2021 marked the third barley harvest. Last year they processed more than 200,000 pounds of barley, some of which went into Bale Breaker beers as well. There is a real sense of pride that comes with growing ingredients where they are used and it's clear from the steady stream of visitors that come through during this season and year round, that drinkers and other brewers feel the same. What is Yonder? Yonder Cider is made at the production facility in Wenatchee, Washington. Cider are made with both culinary and classic cider varieties that co-owner Caitlin Braam, who is our featured guest in this episode, says is key to the Yonder label. Wenatchee is also the home of Snowdrift Cider Company where Tim Larsen is based and who also co-owns Yonder. Listen to episode 37 featuring Tim Larsen to learn more about his background and why this region of Washington state is so important the apple industry of the Pacific Northwest. Caitlin Braam What is The Source The Source is a separate business, but also based at the Wenatchee site. Sourcing juice is jargon widely used in the cider industry for makers needing to "source" juice from orchards to make cider. The Source provides both customized blends and apples to makers. The Source in Wenatchee The Future of Yonder The future looks bright despite the closing of the Yonder Bar on February 15, 2021. The garage bar for Yonder was set up in Caitlin's own garage in response to Covid. Despite the overwhelming support of neighbors, one anti cider fan was out to close the "garage bar" and the city finally conceded. Later this year (2021) a new Tasting Venue will be opening with ample outdoor seating. This new site is a collaboration with Bale Breaker Brewing and will be located in the Ballard Brewery District of Seattle, which is 15 minutes to the north of the Seattle Fish Market. Expect 6200 feet of outdoor space and a shared Tasting Room inside. Thinking out Yonder of the Box Because of licensing regulations, Caitlin had to secure the licensing for a distillery so that the Bale Breaker and Yonder project could work. This week on The Session, we welcome Bale Breaker Brewing Company from Yakima, Washington. Crafting fresh-off-the-farm brews from the middle of a hop field, Bale Breaker is a family-owned brewery located in the Yakima Valley. Backed by four generations of hop farming experience, Bale Breaker started in 2013, and has grown to become the fifth largest independent craft brewery in Washington. Hops are in the family's DNA: the great-grandparents of sibling-owners Meghann Quinn, Kevin "Smitty" Smith, and Patrick Smith first planted hops in the Yakima Valley in 1932, the year before Prohibition ended. Now, Meghann, Smitty, Patrick and Meghann's husband Kevin Quinn are crafting brews that celebrate the world-class hops grown in their backyard. With a 30-barrel brewhouse at a 27,000 square foot facility, Bale Breaker crafts four year-round canned beers, including the widely celebrated Topcutter IPA, and a diverse offering of seasonal beers on draft.
