 Although The Southern Fork Summer Tour is over, we still have a few weeks together, and the weather has started to turn in much of the South. I don't know about you, but soon after I feel that first cool breeze, I can't wait to have a plate of barbecue. Maybe it's because in my North Carolina childhood, barbecue “stands” as it were, popped up at church parking lots and auxiliary halls each Autumn, using good food to raise money for good causes, but no matter where I am this time of year, I'm thinking about the combo of time, smoke, and the skill of a pitmaster to create this iconic Southern food. The South is full of barbecue styles, each with throughlines of technique but different nuances, and unlike a barbecue purist, I love them all. The iconic Big Bob Gibson Bar-B-Q restaurant in Decatur, AL was founded in 1925, its classic neon sign still shining brightly today. Chris Lilly, a 4th generation partner, is now pitmaster, as well as the head of the restaurant's competition cooking team, a team that's won a record five Memphis in May World Grand Championships. I'd eaten Chris' cooking before at festivals, but we first connected personally at a Yeti store meet and greet, a company for which he is a sponsor. Alabama barbecue tradition has Big Bob Gibson in its bedrock, and Lilly has not only honored tradition but built on it with creativity, drive and respect for ingredients and the time it takes to learn the craft of cue. He was inducted into the Barbecue Hall of Fame in 2016, and we sat down after he fired up the pits for the first Holy Smokes BBQ Festival here in Charleston, SC.

If the name Big Bob Gibson sounds familiar to you, we’re not surprised. It’s one of the oldest and most prestigious barbecue restaurants in the world! Founded in Decatur, Alabama, in 1925 by Bob Gibson, a railroad worker who spent his weekend barbecuing with friends and family over a hand-dug barbecue pit. His ‘cue was so delicious, it attracted people from miles away! He was a backyard barbecue enthusiast interested in taking his BBQ to the next level. He opened a family BBQ restaurant and the rest is history; 80 years later, there have been four generations of Big Bob Gibson Bar-B-Q pitmasters in the family. Gibson Bar-B-Q in the 1970s and 1980s, and he ushered in some great changes. Originally, the restaurant was all about smoked pork and chicken over hickory fired brick pits. When McLemore took over, they began also serving pork ribs, beef, and smoked turkey along with a few sides, like baked beans and stuffed potatoes.

Our “Under the Radar” segment returns as we find out about “Two Krackers Kookin’ BBQ” with pitmaster Nathan Hudson. And the guys review the recent “Smoke at the Barn” where Steve knocked it out of the park in the SCA Steak Competition, earning a Golden Ticket to the SCA World Championships later this year.
