Southern Kitrchen & Bar-B-Q • 5 September 2024BBQ competitions are thrilling events that allow passionate grill masters to showcase their skills, compete for prizes, and engage with fellow enthusiasts. However, entering your first BBQ cook-off can feel overwhelming due to the various elements involved. This guide will help you navigate every aspect of preparing for your first BBQ competition, from understanding the rules to mastering the techniques and equipment required.1. Understanding the Competition FormatBefore diving into BBQ competitions, familiarize yourself with the rules and format. Each competition may have different guidelines, judging criteria, and requirements. Sanctioning Bodies: Many BBQ competitions are overseen by organizations like the Kansas City Barbeque Society (KCBS) or the Memphis Barbecue Network (MBN). Research which organization governs the event you're entering to ensure you meet all criteria. Categories: Most competitions include multiple categories, such as chicken, pork ribs, brisket, and pulled pork. Know which categories you'll be competing in, as this determines the type of meat you'll need to prepare. Judging Criteria: BBQ is often judged on appearance, taste, tenderness, and texture. Understanding what judges look for will help you fine-tune your recipes and presentation.2. Selecting the Right EquipmentSuccess in BBQ competitions requires using the right tools. You don't need the fanciest equipment, but your tools should be reliable and appropriate for your style of cooking. Grill or Smoker: Depending on the competition and your preferences, you'll need a smoker (offset, drum, or pellet smoker) or a grill (charcoal or propane). Choose equipment you're comfortable using. Thermometers: A good digital meat thermometer is essential for monitoring the internal temperature of your meat, which is key to ensuring it's cooked to perfection. Coolers and Storage: Bring coolers to keep your meat cold before it's time to cook and storage containers for sauces, rubs, and utensils. Other Essentials: Don't forget your knives, cutting boards, gloves, aprons, fire starters, and fuel (charcoal, wood, or propane).A new beginning is a fresh start or a chance to change, and it can apply to many aspects of life. It can be a time for growth and positive change.Examples of new beginnings: Starting a new job Moving to a new home Saying goodbye to friends Letting go of parts of your life Starting school Watching kids move outTips for embracing new beginnings: Stop fearing failure Take a risk Create an action plan Practice self-care Learn from setbacks Celebrate small victories Make peace with the past Declutter and organize your living spaceBenefits of new beginnings: Leave behind past mistakes and negative experiences Create a path towards personal growth and fulfillment Improve your well-being Lead a more fulfilling and satisfying lifeSymbol of new beginnings: The daffodil, which symbolizes hope for the future and marks the end of winter and the beginning of growth and renewal

What's in a name? Daryl Walker aka Sweetie has been in the bbq game for some time now. As a competitive bbq cook, as a backyard warrior, as a food truck operator, as a restaurateur, as a rub and sauce maker. He even did a little TV time for bbq. This makes him super well rounded as a Pitmaster but he remains the ultra humble guy in the room. Sweetie is also the guy that you know exactly how he feels. Especially when it's a winning weekend, dancing, singing, hooting, passing out or shedding a bit of a tear as he makes his way to the top. His raw emotion is as real as it gets. It's why the TV folks were after him to be on the show it's why he is one of my favorite bbq guys. He is real, he is raw, he is talent. The real deal trying to make his family proud and doing a great job at it. Sweetie was one of my favorites to have on the show and I can't lie talking to him gets you in your feelings too.
Making a business plan is an essential part of launching a new business. But it's not a skill an aspiring business owner necessarily has. Which is where Camille Terk comes in. Writing business plans is literally what she does for a living. Her firm, Terk Consulting, is a boutique consulting firm that specializes in business planning. Camille founded her firm in 2005 and in the nearly two decades since has served over 700 clients, helping them draft business plans and pitch-decks to present to investors and lenders. All told, she estimates she has helped her clients raise more than $350 million. Camille has an MBA, is based in New Orleans, and is one of the few firms specifically focused on doing business plans for small business. She counts among her clients some of our previous guests on this show, including: Falaya, Marex Services, Resource Environmental Solutions and Speedy Eats. If somebody went to Camille and told her they wanted to open a vegan restaurant in Zachary Louisiana, I don't know what Camille would say but she might suggest that that doesn't immediately look like a recipe for success, right? Maybe a poboy shop or a Bar B Q restaurant, but vegan. In Zachary? Well, Neshia Rowe opened Golden Vegan restaurant in Zachary in 2022, after launching the concept from her home in 2021. Was it a success? Sure was! And still is. In fact it's turned out to be such a success that Neshia has since opened two more Golden Vegan restaurants – one at LSU and the other at Southern University. Neshia will be the first to admit that Zachary was an unlikely locale for her first restaurant. She says she founded it there because the area didn't have a lot of healthy food options and the concept behind her menu is to educate her customers about healthy eating, to help them gradually transition from a diet of fast food and fatty food to plant-based options that don't deprive and taste great. And, talking of great tasting food, Out to Lunch is recorded live over lunch at Mansurs on the Boulevard. You can find photos from this show by Ian Ledo and Miranda Albarez at itsbatonrouge.la. Do you like hazy IPAs? Do you hate hazy IPAs? I dug into this cloudy phenomenon with the help of New Trail Brewing partner and Director of Brewing Operations Mike LaRosa. It seemed to be a subject he had been waiting for someone to ask him about, and we went at it. We also talked about New Trail's amazing growth, their excellent big beers, the Crisp lager family, and the shape of craft brewing in general. I tasted their collaboration with Old Thunder Brewing in Pittsburgh, Mini Storm Cell, a 3.75% cold IPA that blew me away, and Crisp Amber, the next member of the family. What else? I visited two local favorites on the way home from New Trail: Henry's Bar-B-Q in LInden, PA, and had some delicious pork shanks; and I picked up half a dozen divine doughnuts at Nan's Donuts in Loganton, the super-hyped Amish bakery that's open two days a week (and kinda lives up to the hype). I'll take you inside a whiskey judging competition, and tell you about how my buddy Sam "Mr. Rye Whiskey" Komlenic was honored at West Overton Village. Next episode? It's hot stuff! We'll talk about hot sauces, hot peppers, and horseradish, the stuff that keeps central PA sweating...in two weeks! Until then? TELL YOUR FRIENDS ABOUT THE PODCAST! In this week's No Lowballers podcast by GoWild presented by GunBroker.com, we're talking all about handgun history and even let a few weird gun words fly! In this week's No Lowballers podcast by GoWild presented by GunBroker.com, we're talking all about hand guns including their history and the evolution to today's gun. Alan jumps right in with a history of hand cannons! Early hand cannons emerged in the 14th century with a flower vase design that necked down smaller. Originally designed for use with arrows, which did not work well, they evolved to anything that hurt being loaded such as: gravel, chain, or nails. Logan goes through the timeline of early hand guns. Starting with Hand Cannons that were extremely uncontrollable and inefficient. Much of early handguns was trial and error to see what worked or didn't work. The next evolution was Matchlock which is a very simple design but with a constant lit match it was an extremely limited design. Some of the Matchlock downfalls included being put out by rain, potentially catching your own coat on fire, or even worse – showing the enemies exactly where you are! Jacob asks an important question about effective range of early hand guns. Allen and Logan bring up the multitude of scenarios that play into that question. Are you shooting nails or chain? Everything out of a hand-cannon would have different effective distances but overall the consensus is if within conversational distance it would be much like the modern hand gun. We speak on the purpose of early handguns. On the battlefield hand-cannons were more to spook cavalry vs actual effectiveness. When speaking of the wheellock, generally it was more of a boutique “Bar B Q” gun. Owned mostly by very wealthy individuals who had these custom built more as a conversational piece. They were extremely inefficient to shoot, imagine shooting a 2x4! Next, we're talking about the flintlock! Allen speaks of some of the flintlocks you can find on Gunbroker.com along with their price ranges. Allen tells us all about the different options for early hand guns. Flintlocks, Wheellocks, Matchlocks, and even Hand Cannons are available at a wide price range depending where you'd like to start your collection. He speaks on the Germanic Wheellock which was the sweet spot of them being produced. We close the episode with all sorts of weird gun words. Touch-holes?? Nipples?? What are some of your favorite weird gun words? If you like what you're hearing, please leave us a rating and review!! The No Lowballers podcast is a brand new joint venture between GoWild and GunBroker.com to explore the history and heritage of firearms. We hope to expose you to the vintage guns of the golden age along with newer, modern guns, specialty items, and a few other odd balls along the way. Jump in and come along for the ride! Ed Mitchell has been cooking whole hog barbecue since he was a teenager, but it wasn't until his mid-40s that life steered him to devote his life to the tradition when he founded the famed Mitchell's Ribs, Chicken & Bar-B-Q in North Carolina. His son Ryan brought his background in finance to the family business; after eight years working in commercial and investment banking, he returned to his roots in BBQ to work with his father. As the family business grew, so did their reputation. Ed has cooked all over the world, including at the James Beard House in New York, and has featured on several television series, including Michael Pollan's “Cooked” on Netflix, Anthony Bourdain's “A Cooks Tour,” and “Beat Bobby Flay.” The family restaurant has transitioned to The Preserve, which opens this summer in Raleigh, and Ed's sauces and rubs - True Made Foods, are available at stores nationwide. In this episode, Ed and Ryan chat about the history of whole-hog barbecue and their cookbook, Ed Mitchell's Barbeque, which celebrates the tradition of whole-hog barbecue. Chris lost everything and ended up in jail. There he discovered his love for cooking. He now feeds the "homeless", or who he calls the outside community. Chris's cooking is given for free and with love, with a taste that will challenge Phil's Bar-B-Q. Should you give the outside community money? How should you treat people who live outside? Chris shares his opinion. Christopher Ibanez is the senior servant and administrator of God's Kitchen, a mobile van that provides 200 home cooked meals for the outside community that challenges the taste of Phil's BBQ. Chris refers to what some call the homeless, as his brothers and sisters. Chris has a BS in business management and organizational leadership. He is a recovered addict and author of the book 9:11: The House of Steel, available on Amazon.
