It's our 20th (!!!) radio show. On this episode, we talk about- Tasty Tomatoes and Affordable Vineyards Have you ever wondered why store-bought tomatoes never taste as good as ones grown from the garden or at the farmer's market? Scientist's have discovered that 93 percent of modern, domesticated tomato varieties are actually missing the gene that gives tomatoes their flavor. A study of genomic information of 725 wild and domestic tomatoes was compared to the domestic tomato Heinz 1706. A side by side comparison showed that the Heinz 1706 was missing close to 5,000 genomes that the others had. Besides making the tomato tastier, these genomes also allowed the tomatoes to defend themselves against pathogens better. The tomato lost these genes via selective breeding from farmers, and not from genetic modifications. Luckily the gene is making a comeback, what used to be found only in 2 percent of tomatoes in now found in 7 and will hopefully rise to greater heights. All I can think about is how much better my Pomodoro sauce is going to be in a couple of years when scientists and farmers figure this out. Also what other fruit and vegetables are nowhere close to their potential because of selective breeding? I'm sure 99 percent of apples don't taste as good as their supposed to, and there are probably some bananas with more banana-y flavors or a carrot that only tastes like a carrot. Napa has become so expensive that a winemaking husband and wife who wanted to start making wine in Napa, the place that they called home. Steve Lawrence and Diana Lucz have worked in the wine business for decades, were both making high salaries, had impressive resumes, but simply could not afford anything in Napa. Most Napa Vineyards up for sale are being bought by large corporations or the top of the 1%. Even small vineyards can start at $7 million. Steve and Diana bought an entire Chateau in Bordeaux for under $500,000 instead They now own a 7 acres Chateau with 5 acres of grapevines and are able to sell their own wine back home in California for an incredibly affordable price. Now you understand a bit of background, some science, and the why behind what we are doing... but it's time to learn how all of this actually works in your life! The next few weeks will get you prepared on how to eat at restaurants, go to parties, travel on an airplane or road trip, eat in a hotel, perfect your coffee, make quick dinners, and pack lunches. Onto today's topic: coffee! Don't panic... coffee can still be a HUGE part of your keto life. Today you'll learn 3 things that you can change to make your coffee boost your ketones, instead of knock 'em down. 1.Switch your sweetener Avoid sugar, honey, artificial sweeteners, or any other substance that can spike blood sugar. I recommend using stevia or monk fruit. If you prefer unsweetened coffee- that is even better! 2. Add the right fat Most people don't do well with dairy- especially if it isn't raw and grassfed. Skip the skim milk, or try swapping out whatever dairy creamer you are using for something else. If you are doing dairy, choose full-fat, raw cream from a grassfed cow. My favorite non- dairy choices are Nutpods creamer and Perfect Keto powdered MCT oil. You can also try the Bulletproof recipe with grassfed butter and MCT oil. Step up the quality Look for these things if you want the healthiest coffee: Organic. Coffee is one of the most highly sprayed crops. Do what ever it takes in your life to avoid pesticides/roundup/glyphosate like your life depends on it.Mold-free. Coffee is also one of the moldiest crops. Seek out a company that guarantees mold-free or mycotoxin free coffee.Add some mushrooms. You'll find more and more coffee companies adding mushrooms to their coffee. Certain mushrooms (lions mane, chaga, cordyceps, reishi, ganoderma) give you adaptogenic effects with the coffee. They can make you feel less anxiety, less stomach pain or acid reflux, and fewer jitters. Basically, the mushrooms assist with the negative side affects of coffee while you drink it. Meet Doug Winter, founder and CEO of Seismic, an enterprise SaaS tool for sales enablement that’s been around for 8 years. It helps sales and marketing teams work together more effectively and efficiently as it relates to sales cycles. Thanks to our friends at Cox Business for their support of this episode. While Doug grew up in Ohio, he went to Virginia Tech and studied electrical and mechanical engineering. After college, he took a job with Westinghouse in their Navy Nuclear program training sailors on running the nuclear machinery on boats at sea. It was a great leadership experience as he was given a lot of responsibility quickly but decided to go back to school - for a degree in Leaders for Manufacturing at MIT, a combo of business and engineering with an eye towards operations. His last winter there was ‘the worst winter in Boston’ and he asked ‘how far away from this can I get? Enter San Diego. Doug landed a job at Qualcomm in 1996. Qualcomm had just won the battle of CDMA and just started a division building their own phones and infrastructure. He took new products from engineering and was the bridge to put them into production. He had great bosses and mentors at Qualcomm but kept hearing about the Dot Com buzz and knew that he’d eventually leave Qualcomm and become an entrepreneur. His dad was an entrepreneur and Doug saw how happy his dad was doing this kind of work and it stuck with him. Doug rode through the Dot Com boom and bust and tells some sentimental stories that paint a graphic picture of the times. It was exciting for him to sit front row and ride the rollercoaster of starting a company and was a valuable learning experience. Over the next decade, Doug started another company, Objectiva. Objectiva was hired to rebuild Document Science’s product line. Great relationships were formed from this partnership and Document Sciences ended up buying Objectiva and Doug became COO of Document Sciences, which was then bought by EMC. EMC had also bought Carlsbad-based Captiva. Very quickly he realized that the big company culture wasn’t for him so worked through a transition to leave, but observed that the existing tools for content management were clunky and nobody was doing a real SaaS business around content development. The problems they saw at Document Sciences were real and thought they could do what Salesforce and Workday - taking CRM/HRM and consumerized it and put in on the cloud. Nobody was doing this for content management and they set out to fill this void. Enter Seismic in 2010 to solve this problem. The first office was a basement in an apartment building in downtown Encinitas. By the time they left they had about 12-14 people working there so it was quite cozy. Through all the growth they’ve remained in North County, to Solana Beach and now residing in Del Mar Heights. One of SD’s challenges is how wide-spread out everything is so they’ve tried to stay central for their employees. One of the founders, Ed Callan, is born and raised in Boston. Started an office in Boston in an addict and really grew as a two-office company from the very beginning and both offices are about the same size. They recently acquired a business in Chicago - their competitor Savo - and now have a foothold in that major hub. Curious where the term sales enablement came from? Listen in!
