We've done 500 episodes of Dirty Linen! To celebrate, we're spending time at a restaurant that's been a special place for Melbourne milestones for more than 20 years. Vue de monde was founded by a fiercely ambitious Shannon Bennett in 2000. From its beginnings in a quirky terrace in Carlton, it moved first to Normanby Chambers in the city and then in 2011 to its current home on level 55 of the Rialto Towers. Our first guest is executive chef Hugh Allen, who first worked at the restaurant as a 16-year-old apprentice, and returned after three years at Noma in 2018 to be promoted to lead the kitchen when he was just 23. This is the first of nine episodes that will give a rounded portrait of a restaurant that's been both lauded and controversial over two decades. We are marking Vue de monde, but we're also marking a podcast anniversary. Thank you to every single guest who has trusted us with their story. Thank you to every listener who has blessed us with their time and attention. Thank you to executive producer Rob Locke, who founded the Deep in the Weeds network with Anthony Huckstep. We're looking forward to the next 500. https://vuedemonde.com.au Follow Dirty Linen on Instagram https://www.instagram.com/dirtylinenpodcast Follow Dani Valent https://www.instagram.com/danivalent Follow Rob Locke (Executive Producer) https://www.instagram.com/foodwinedine/ Follow Huck (Executive Producer) https://www.instagram.com/huckstergram/ LISTEN TO OUR OTHER FOOD PODCASTS https://linktr.ee/DeepintheWeedsNetwork Dirty Linen is a food podcast hosted by Australian journalist Dani Valent. With a solid foundation of French technique under his belt, Scott Lord (New Quarter) was given the chance to learn new techniques and ingredient pairings at a Japanese restaurant. Soon enough he found himself cooking all manner of Cuisines from south east Asia and realised the potential of mixing French technique with the lighter side of Vietnamese cuisine.https://www.instagram.com/scott__lord/?hl=enFollow Deep In The Weeds on Instagram https://www.instagram.com/deepintheweedspodcast/?hl=enFollow Huckhttps://www.instagram.com/huckstergram/Follow Rob Locke (Executive Producer)https://www.instagram.com/foodwinedine/LISTEN TO OUR OTHER FOOD PODCASTShttps://linktr.ee/DeepintheWeedsNetwork
Everyone in Australia is living on unceded Aboriginal land but not many hospitality businesses put that fact at the core of their identity. Brendan Keown owns Yarra Falls, a Melbourne bar developed in consultation with Traditional Owners. He's come a long way from the 14-year-old who loved polishing glasses in an Irish restaurant and it's fascinating to hear about the journey.https://www.instagram.com/yarrafalls/?hl=enFollow Dirty Linen on Instagramhttps://www.instagram.com/dirtylinenpodcastFollow Dani Valenthttps://www.instagram.com/danivalentFollow Rob Locke (Executive Producer)https://www.instagram.com/foodwinedine/Follow Huck (Executive Producer)https://www.instagram.com/huckstergram/LISTEN TO OUR OTHER FOOD PODCASTShttps://linktr.ee/DeepintheWeedsNetwork
Although he's had a few head chef gigs at very different influential restaurants Toby Stansfield (Old Fitz Hotel) was always limited on how he could express his own ethos on a plate. But when the chance to to take on the roll as head chef for one of the country's most dynamic young hospitality groups emerged, he realized it came with a license to take the food in which ever direction he saw fit.https://www.instagram.com/tobystansfield/?hl=enFollow Deep In The Weeds on Instagram https://www.instagram.com/deepintheweedspodcast/?hl=enFollow Huckhttps://www.instagram.com/huckstergram/Follow Rob Locke (Executive Producer)https://www.instagram.com/foodwinedine/LISTEN TO OUR OTHER FOOD PODCASTShttps://linktr.ee/DeepintheWeedsNetwork

How does a talented, veteran actor end up breaking all sales records on ITV's “Ideal World”? Rob and I talk about acting, the acting game, the realities of pursuing an acting career in Hollywood, & how he has become a legend on “Ideal World”. You gotta love Rob Locke. In fact, to know him is to love him. We met on the set of an industrial “commercial” for a defense contractor, almost 8 years ago. The first thing I noticed was that he was a cut above the other actors. And…he didn't take himself too seriously. He took the work seriously…but not himself. To me, that's everything. The guy's not full of himself, like most actors are. I love acting. I love it. But the one thing that I don't like about it is dealing with lame, boring, superficial, self-absorbed, insecure, neurotic, actors. He's very intelligent, quick witted, and has a natural charm…as you'll hear in his episodes. He has an impressive repertoire of characters, voices, and impersonations…much like me. He's a kindred spirit. As we got to know one another better, we noticed that we had many similarities. One of the most striking was our knowledge of neurolinguistics, influence, persuasion, and sales…and of course, acting, comedy and showmanship. I've never met another actor that shared those interests with me. He's never used them for bad purposes, either. You see, once you learn those topics and then master them, it's very easy to use them to manipulate people and situations to do… bad things… and to be unscrupulous. I've seen it happen many, many times. Rob is not “that guy”. He has integrity. He's hilarious. He's a good guy. I think those are the reasons he's having such a resurgence in his career. Sometimes your ‘break' comes from the least likely place… sometimes it's from something you gave up on years ago.
