Joining Jill and Doron on the 19th episode of the podcast, the first of our second season, to tell us his story, is Rabbi David Rosen (1958-67), the youngest son of Carmel College's founders Rabbi Dr. Kopul and Bella Rosen, and brother of Rabbis Jeremy Rosen and the late Micky Rosen.   David, known to his old school friends as Buster, is currently Special Advisor to the Abrahamic Family House in Abu Dhabi.  He is the former Chief Rabbi of Ireland, and previously Senior Rabbi of the largest Jewish congregation in South Africa during the apartheid era.  For his interfaith work, he has received a papal knighthood and was named a Commander of the British Empire by the late Queen Elizabeth II.  David lives in Jerusalem and is married to Sharon, with whom he has three children and seven grandchildren, ranging in age from 2 to 23.     Hear David talk about sibling rivalries, playing cricket with the Chief Rabbi, hearing Danny Kaye sing Hebrew in Wallingford on Faye Day, and his IDF service.   Thank you, Rabbi David Rosen, for turning us again to Carmel days!   Dedication: at David's request, this episode is dedicated to the memory of his late mother Bella Rosen, who made often unrecognized yet invaluable contributions to Carmel College as its co-founder.  In the school's early years, she shouldered responsibilities as Catering Manager and Household Supervisor.   During one of the institution's dire financial periods she selflessly pawned her engagement ring to ensure breakfast for the school's boys, an act that resonates with profound dedication.  She later joined the Board of Governors.  Sadly, Bella Rosen passed away in Jerusalem in 1999. Personal mentions in this episode: Rabbi Dr. Kopul Rosen (Founder and Principal) Bella Rosen (Co-founder) Rabbi Jeremy Rosen (Headmaster) Ron Evans (Mathematics) Mary Evans (Mathematics) Rabbi Sidney Leperer (Jewish Studies & Ancient History) Miriam Leperer Moshe Dover (Preparatory School Head & Jewish Studies) Zahava Dover Timothy Healey (History & Cricket) Joshua Gabbay (French) Mrs. H. How do you make Michelin Star-level food, for hundreds of people, in a kitchen you just built in someone's garden, and with no access to cooking gas? That's just a typical scenario facing chefs in the world of high end mass catering. In this episode, we hear from John Downey, the Catering Manager at the Web Summit tech conference, on the pressures of feeding high profile figures, and VIPs who've spent $26,000 on a ticket. We also hear from Matt and Ted Lee, authors of the book Hot Box: Inside catering, the food world's riskiest business. They tell us about the stresses and often extraordinary challenges of providing high end food, at scale, at some of the USA's most fancy weddings and galas. Who's job is it to create your timeline? Be the point of contact for your vendors? Cut your cake or work with your guests on their food allergies? Do these jobs fall to your catering manager or wedding planner? In this episode, we're chatting with Amanda Douglas, the Director of Catering and Conference Services at the Four Seasons Ko Olina on Oahu, about catering managers vs wedding planners, and the benefits of having a wedding at a hotel vs an offsite event. If you're considering a wedding at a hotel (or even if you're not yet thinking about it), this episode is a MUST. Support us: patreon.com/unveilingparadiseCatering Manager vs Wedding Planner - Who's job is it?Roles of your Catering Manager - manages your food and beverage needs, should be informed of any allergies, schedules your venue walk through, creates a floor plan, assists with cake cutting, room blocks and champagne pours.Roles of your Wedding Planner - creates wedding day timeline, point of contact on the wedding day, assists with budget planning, runs the rehearsal, sets up your day-of items like favors, welcome sign, place cards, and assists with your personal needs like bustling your dress or tying your tie.NOTE: Amanda talks about a DMC (destination management company) - they assist with tours and activities during your stay. What's the main difference between catering managers and wedding planners? Wedding planners will take it all on - all vendors and services from start to finish. Their job is to take the burden off the couple and to manage all aspects of the wedding. Hotels and catering managers focus on delivering on their food and beverage, service, and venue space.Hotel vs Off-Site Wedding - The benefits of having your wedding at a hotel.Hotel weddings are a lot more inclusive and convenient for your wedding planning - little things you wouldn't normally think about are included, like extra forks, napkins, glassware, tables, chairs, linens, etc. The collective experience for your guests at a hotel is easier. Room blocks at a hotel allow guests to all stay together, and also you and your guests to drink responsibly and get back to their rooms safely. Transportation isn't needed for your guests.Overall hotel amenities include air conditioned reception sites during summer, air conditioned bathrooms, a staging area for the couple, and indoor backup spaces if needed. These perks are not often available at off-site venues! There are less restrictions on sound and music at indoor venues so dancing late into the night is totally doable.Amanda's pro tip - you can plan as much as possible beforehand, but on the wedding day, try to enjoy yourself and let it go! Links and Musings from this episode:Instagram:  @fsoahu @fsoahueventsWebsite: fourseasons.com/oahu Find Us on Instagram:Unveiling Paradise @unveilingparadiseJoe @josephesserTessa @fredandkateeventsEmail us with your burning questions about destination weddings, Chicago deep dish pizza, or anything ePassive AggressionA Midwestern look at hot button, taboo and dated topics with Kyle and Jess WassingListen on: Apple Podcasts SpotifySupport the show

Career highlights include Catering Manager for D’Amico + Partners’ Atrium Catering, General Manager at Cossetta’s Market and Eatery, General Manager at Suite Life Catering at Target Center, Chef Instructor for Le Cordon Bleu and CFO of Nova Restaurant Group. Mr. Nelson leadership style incorporates ethics, humor and a fair dose of sports analogies. His business philosophy teaches that all forms of free commerce are predicated on both customer and business benefiting from the exchange of goods and services. Being a successful business operator does not mean creating a scenario where one party can win if the other party loses but to develop an environment where both parties win. Therefore, successful businesses need to look at the goal of profitability as a puzzle to solve, rather than a battlefield to conquer. Mr. Nelson’s passion lies in teaching restaurant operators how to solve the profitability puzzle.   Facebook: https://www.facebook.com/Restauranttopia/  LinkedIn: https://www.linkedin.com/company/restauranttopia Instagram: https://www.instagram.com/restauranttopia/ Youtube: https://www.youtube.com/channel/UC9aRVuDUYsV370Rfh-QxDag
