It is an exciting development to see an increasing number of dairies legally selling raw milk. Raw milk, which is milk that is not pasteurized or homogenized, has gained popularity in recent years due to its numerous health benefits. Supporters argue that raw milk retains its natural enzymes, vitamins, and beneficial bacteria, making it easier to digest and boosting the immune system. Additionally, raw milk is believed to contain higher levels of nutrients, such as Vitamin C, D, and B6, as well as minerals like calcium, magnesium, and iron. Many consumers also appreciate the rich and creamy taste of raw milk, as well as its potential to reduce allergies and intolerances. However, it is important to note that there are still concerns regarding the safety of raw milk, as it may harbor harmful bacteria, such as E. coli or Salmonella. Thus, those interested in consuming raw milk should ensure that it comes from reputable dairies with strict quality control measures in place. TODAY'S MAIN TOPIC: Cold Food For Dinner Since we're in the middle of the hot summer I suggest having a larger meal during the day and lighter foods at dinner time. When I was a kid, summertime dinner often was antipasto platter and included such things as sliced deli meats and cheeses, tomatoes, pickles, potato or macaroni salad, and fruit salad. The idea was not to heat up the house and to have cooling foods. Recently we had fruit and yogurt for dinner; a large bowl of homemade yogurt with sweeteners such as honey or maple syrup and a selection of fruits to add to the yogurt. Similarly, foods like quiche and salad, or soup and a sandwich can be tasty for dinner on hots nights. Here are a few more ideas to kick around: Orzo salad with rotisserie chicken Panzanella salad; bread cubes, salted tomatoes, herbage, simple vinaigrette, pecorino cheese or some really great ricotta salata Tuna or chicken salad stuffed avocado Tuna salad with cucumber, tomatoes, chip peas, onions, and marinated artichokes Nicoise salad; tuna, cold green beans, avocado, potato salad, hard-cooked eggs tomatoes, w mozzarella, olives, cucumbers, and simple olive oil vinaigrette, feta cheese Homesteading Psunami: Check out Perma Pastures Farm-Billy, William and Michele PRODUCT RECOMMENDATION: Pro One Water Filter We decided to get another water filter after we scraped the Berkey and then spent 5 mos with a pile of shit from Acqusana. We always wondered why some much scale came through our Berkey, calcium deposits, etc., and the fact that they had no real water quality testing and we also had the plastic version started bothering me as I learned that plastic does indeed leach. I then ordered a model from a company called Acquasana, they make under-counter and whole house systems with lab test results which I liked, I bought the countertop model with half gallon capacity, HUGE mistake, we were filling that damn thing 3-4 times per day. Since our switch in late July we have been very happy with the Pro One system, the packaging, system itself, water quality, looks, and performance is spot on.
Things you should know: Restaurant kitchens are not as hot as they used to be. There is such a thing as oyster ice cream. And if you're going to charge $16 for a pre-mixed cocktail, at least shake the damn thing!

Eating rituals are behaviors that encourage positive eating. I recommend always eating on a plate and with cutlery. I throw some of my nice china in the mix as a reminder that every day can be a special day. It's a reminder of my good fortune. Even when I have takeout, I transfer it to a plate or bowl. Sit down, slow down. It's hard to gauge a portion size when you're eating out of a container. Another fun ritual is plating my food. Making it look pretty also encourages eating a greater range of nutrients, eat the rainbow. A great example is a Nicoise salad. The french understand that you eat with your eyes too. Salad with green beans, purple onion, red tomatoes, white and yellow eggs, brown olives. Setting the table is a ritual that signals the food is almost ready. If you have small kids or friends over, have them help. Transferring things like olive oil and vinegar into lovely cruets or salt and pepper into special grinders. Keep fresh herbs on hand for last minute garnishing. Clip some flowers from the garden for the table. Want answers? Television that filled my heart with hope and made me guffaw, food I inhaled like a ravenous bear, and the best of the best in this year's podcast conversations. Stories of triumph and survival. Stories that showed me the strength of the human spirit, stories that made me cry, stories of community, and just damn good stories. It was hard to pick only three from so many folks who took time out of their busy lives to share, but here they are. If you had to pick just three to represent a year of great development and change, both in my world and the world at large, this would be a pretty stellar start. I rant about how well-meaning folks sometimes say stupid things, the importance of knowing your value even if your paycheck doesn't match it, and express wonder and gratitude about all the talent and magic happening in our amazing community. I hope wherever you are this holiday, that you're happy and well and understand that no matter what happens, everything will be okay. Because it will. Thank you to everyone courageous and gracious enough to share their stories and congratulations to all the winners. I'm so excited for what lies ahead. Make Friends with Salad: Lemony Bulgur Salad with Shrimp and Spinach, Tomato-Chicken Salad, and Nicoise Salad with Anchovy-Lemon Vinaigrette Summer is finally here and the Dinner Sisters are celebrating its return with some light but dinner-worthy salads. Try a lemony-shrimp spinach and bulgur salad for dinner and great lunch leftovers. Or have friends over for dinner and serve a beautiful Nicoise salad with a lemony-anchovy vinaigrette. We especially loved the tomato- chicken salad with tangy feta cheese which, in all honesty, was put over the top when we served it over grilled bread. Wrap up your meal with refreshing treats from the Smorgasbord like a fruity agua fresca or granita. This week we cooked... Lemony Bulgur Salad with Shrimp and Spinach: Food and Wine Light but filling, this salad has poached shrimp, bulgur, and spinach, rounded out with a lemony dressing. Perfect to make ahead for dinner or lunches. Tips: If you plan to make this ahead, leave the spinach out of the dressing step. Instead, add the spinach just before eating. Poaching your own shrimp is likely less expensive but for a real no-cook meal buy precooked peeled shrimp. Tomato-Chicken Salad : Southern Living Herby chicken, tomatoes, and feta are piled on top of grilled bread in this dinner salad. Or serve it over a bed of greens for a lighter meal. Familiar flavors make this an across-the-board hit for all family members or as a potluck dish. Tips: If you are short on time, use a rotisserie chicken instead of roasting your own. Make this at the same time as a cucumber salad and have two salads done at the same time. (Just keep slicing that cucumber!) Nicoise Salad with Anchovy-Lemon Vinaigrette: NYT Food A Nicoise Salad is a composed salad- a platter of tuna, olives, potatoes, green beans, cucumber and tomatoes dressed with a anchovy-lemon vinaigrette. A low-cook meal, just boil the potatoes and blanch the green beans, that is perfect for a summer night on the patio. (Or cooling off in the A/C.) Tips: Dress the potatoes while warm- they will absorb the dressing this way. Feel free to add or leave out any ingredients your crowd doesn’t like. Break out your nice platter, chill the rose and have a perfectly summery dinner party with this salad and a crusty baguette. Weeknight dinner party gold.
