The ConversationThe Restaurant Guys want to speak with writer Sam Gugino after reading his fantastic article about coffee. They talk about its journey from farm to roasting to brewing. After his deep dive, Sam shares five criteria for making the best coffee. The Inside Track The Guys chat with Sam about quality coffee and, in typical Restaurant Guys fashion, they don't choose the lesser variety.Sam: There are actually two basic different kinds of coffee, Robusta and Arabica. The robusta, the cheap stuff that goes into the cans and supermarkets, actually has more caffeine than the more expensive stuff. So if you really want that caffeine jolt, get the cheap stuff.Mark: I'd rather have two cups of something good. Is that okay? Kaffepriset rusar.

Welcome to Top of the Morning by Mint, your weekday newscast that brings you five major stories from the world of business. It's Friday, February 21st, 2025. This is Nelson John, let's get started. Your daily cup of coffee is set to become more expensive. Global coffee prices have surged due to supply shortages in major producing countries like Brazil and Vietnam. Brazil faces its worst drought in over four decades, severely impacting coffee yields. Similarly, Vietnam has been hit by typhoons and erratic rainfall, disrupting harvests and lowering bean quality. These challenges have pushed Robusta futures to a record high of $5,849 per tonne, with Arabica prices rising about 70% in 2024. In India, coffee consumption is steadily rising, making price hikes more impactful than ever, reports Suneera Tandon. Specialty coffee chains like Blue Tokai have already increased prices and may implement further hikes. Packaged coffee brands are also feeling the squeeze, with the Indian Coffee Roasters' Association announcing a ₹200 per kilo hike in powdered Arabica and Robusta. Major brands like Nestlé, which sells Nescafé, acknowledge the impact of skyrocketing coffee costs, with coffee prices up 75% year-on-year. While some chains strive to avoid passing the burden onto consumers, the sustained rise in global coffee prices makes it challenging to absorb the increased costs. As a result, your morning brew is likely to see a price increase in the near future. Microsoft has unveiled Majorana 1, (MayoRANA) a breakthrough quantum chip that could bring industrial-scale quantum computing within years, not decades. Built with an innovative material called a topoconductor, this chip is designed to scale up to a million qubits on a single processor—potentially transforming computing as we know it. Unlike classical computers, which process information in binary (0s and 1s), quantum computers leverage qubits, which can exist in multiple states at once. This enables them to perform complex calculations exponentially faster, with potential applications in AI, financial modeling, drug discovery, and climate research. Microsoft's approach relies on Majorana particles, a unique type of theoretical particle that could make quantum computing more stable and scalable. While tech giants like Google and IBM have also made strides in quantum computing, Microsoft's announcement signals that commercial quantum applications could be closer than anticipated. With this breakthrough, the race to harness quantum power is accelerating, bringing us one step closer to solving problems beyond the reach of today's computers. When switching jobs, you probably focus on transferring or withdrawing your provident fund (PF), assuming all your savings are covered. But what if part of your money was stuck—unclaimed and inaccessible? That's what happened to Mr. A. While he successfully withdrew his PF, his Employees' Pension Scheme (EPS) contributions remained unmerged. Without linking past EPS accounts, his withdrawal request was denied. Unlike PF, EPS doesn't transfer automatically—it requires an extra step that many employees overlook. Here's the rule: Employers contribute 8.33% of your salary to EPS. If you've worked with both private PF trusts (exempt) and EPFO-managed (non-exempt) employers, your pension funds could be scattered. To withdraw or claim benefits, EPS must be transferred and merged. If you've worked for less than 10 years, you can withdraw your EPS—but only if it's properly linked. Cross the 10-year mark, and withdrawal isn't an option. Instead, you'll need a pension scheme certificate to claim benefits at retirement. To avoid complications, always transfer EPS when changing jobs. Staying proactive ensures you don't lose your hard-earned pension savings! Read Aparajita Sharma's detailed report on this in today's Mint Money.

TS.

Trump plans to add a 10% tariff on imported goods from China and 25% tariffs on goods from Mexico and Canada. The tariffs are part of a broader effort to discourage migration and curb drug trafficking. These new tariffs would complement his earlier plans for 60% tariffs on Chinese imports and 20% on global imports.US Winter Wheat Conditions Improve with RainfallUS winter wheat conditions improved dramatically last week thanks to recent rainfall across the High Plains. The crop is now rated 55% good to excellent, a marked improvement from 49% the prior week and 45% on average. The 17% improvement since the end of October is the best for this time of year since 2018. Only 12% of the crop is rated poor to very poor, down from 23% last month.Brazil Soybean Planting Near CompletionBrazil's soybean planting is nearing completion, with 86% of the expected area already planted by last Thursday. This is up from 80% the previous week and significantly ahead of last year's pace of 74%. US Halts Mexican Cattle Imports Due to Screwworm DiscoveryThe US has halted Mexican cattle imports after the discovery of New World screwworm in a cow near the Guatemalan border in Chiapas, Mexico. This parasite causes severe infections and can infest both animals and humans. As Mexico is the largest source of US cattle imports, this halt is expected to dramatically reduce the supply of feeder cattle, sending futures soaring to their highest levels since July. Imports from Mexico, which were up 21.3% this year, are expected to be restricted for at least the next month.Coffee Futures Surge Amid Supply ConcernsCoffee futures saw a significant surge on Monday, with Arabica coffee climbing 3% to its highest level since 1997. Robusta futures also hit their highest since the 1970s. Concerns over supply shortages in Brazil and Vietnam are driving prices up. While Brazil experienced heavy rains in October, earlier hot and dry conditions have damaged coffee trees, impacting the upcoming season's production. The USDA forecasts Brazil's coffee stockpiles to fall 26% by the end of the season, exacerbating concerns.Scott Bessent Expected to Soften Trump's Economic PoliciesFinancial markets reacted positively to Scott Bessent's appointment as US Treasury Secretary. Bessent, the founder of Key Square Group, is expected to advocate for a more gradual use of tariffs and a focus on economic growth through regulation reduction. His appointment has led to a rise in currencies worldwide, with investors anticipating a softer stance on some of Trump's more extreme economic policies. US Soybean and Corn Export Sales UpdateUS soybean shipments declined last week, with 2.1 million metric tons (77 million bushels) inspected for export, a 7.3% drop from the previous week. However, they are still +34% higher compared to the same week last year. On the other hand, corn exports soared, reaching 903,049 metric tons (36 million bushels), which is +115% higher than last year. Wheat exports were also strong, with 360,513 metric tons (13 million bushels) sold, a +25% increase from the same week last year.

The Environmental Impacts of Coffee ProductionFor most of us, coffee is a part of our daily lives. 62% of Americans drink coffee every day, with 7 in 10 drinking coffee every week. In 2024, the coffee market amounted to over $86.7 billion in gross revenue, with numbers only predicted to rise. Americans consume over 400 million cups of coffee each day, leading many to wonder of the harms of such rapid consumption. Unfortunately, for coffee-lovers, the reality is that coffee has a poor environmental footprint. The average total harvested area from coffee production is over 11 million hectares – an area larger than Scotland. Coffee production is associated with various environmental consequences such as water pollution, deforestation, soil degradation, and decreased biodiversity, to name a few. Traditionally, coffee beans are produced in the shade of trees, but due to heightened demand, many farmers are beginning to relocate production to sun grown coffee, which requires large scale forest removal. Every cup of coffee consumed destroys roughly one square inch of rainforest, making coffee the leading cause of forest destruction. Not only is coffee production extremely land intensive, but just one singular cup requires 140 liters of water to produce.Coffee production not only contributes to environmental changes, but is especially vulnerable to the effects of climate change. By 2050, predictions reveal a vast decrease in coffee-suitable land, leading to worldwide decreases in yields. The consequences of climate change on coffee production can trigger changes in soil, water, crop, and nutrient management of the land. Interestingly, sustainable coffee systems may provide favorable ecological services, such as maintaining soil fertility, biodiversity, and carbon sequestration. Thus, it has been proposed that making coffee production more resilient will not only help in adapting to a changing climate, but can reduce the environmental consequences of this industry, even promoting positive environmental benefits. How can coffee production become more sustainable? The two main strains of coffee produced globally are Arabica and Robusta, both of which are extremely vulnerable to climate change due to rising temperatures, altered rainfall patterns, and increased incidence of pests and diseases. Such climate impacts could lead to reduced coffee yields, affecting the quality and availability of coffee for consumers, and putting farmers' livelihoods at risk. The impact of climate change will be particularly noticeable in the coffee belt, the region around the equator where most coffee production occurs. In this area, even small changes in temperature and rainfall patterns can have adverse effects on coffee production, decreasing yields.Liberica coffee has been proposed as one alternative to conventionally utilized coffee strains, as it withstands climate change-induced heat, long-term drought and disease. Farmers across the world are looking to reintroduce Liberica as the common crop plant used to sustain the global coffee industry and mitigate the adverse effects of climate change. Excelsa coffee has also been considered due to its high yields and heightened conversion ratio from pulp to clean coffee, with minimal mechanical and labor-intensive activities required. Farmers across the coffee belt have begun to implement such changes themselves as they are first-hand facing the negative effects of climate change.Potential Benefits of Alternative Coffee Strains Coffee varieties such as Liberica are being utilized in countries like Uganda, one of the world's largest coffee exporters, as a means of adapting to the effects of a changing climate. Hybrid coffee varieties have potential for increasing welfare and enhancing resilience of smallholder farmers against climate change. With an expected doubling in coffee demand by 2050, it is necessary that more sustainable methods are adopted in order to respond to adverse climate consequences. Hybrid varieties thus provide a solution as they can increase productivity by enhancing yields and are less vulnerable to stressful environments. Ongoing Research is NeededThere remains a lack of research on the potential improvements such coffee varieties can have when applied to a larger scale. Furthermore, more research needs to be done to determine the optimal temperature ranges for precise yield levels. In areas with high production yields, more on the ground work is needed in order to support sustainable development of coffee. There is large uncertainty in climate projection data, socioeconomic factors and interactions which influence coffee plants and potential yield capacity. Furthermore, the initial concerns mentioned in regards to the environmental harms of coffee production still remain. About our guestCatherine Kiwuka works with the Plant Genetic Resources Center of the National Agricultural Research Organization of Uganda, researching climate resilient coffee varieties in Africa to withstand climate impacts. In order to sustain livelihoods, resilient coffee systems can both protect local smallholders, and improve environmental quality, paving a way for a more sustainable future.Further ReadingA Systematic Review on the Impacts of Climate Change on Coffee …“How Climate Change is Affecting Coffee” - Clive CoffeeImpact of climate change on coffee productionNew coffee varieties as a climate adaptation strategy: Empirical evidence from Costa Rica“Rising temperatures in tropics to lead to lower coffee yields and higher prices, study suggests” - The GuardianThe re-emergence of Liberica coffee as a major crop plantWhat Climate Change Could Mean for the Coffee You Drink For a transcript of this episode, please visit https://climatebreak.org/adapting-coffee-production-for-climate-resilience-with-catherine-kiwuka/

In this episode, Kenneth sits down with the 2015 World Barista Champion Sasa Sestic to talk about his innovative Paragon brewer. He explains what inspired him to develop this brewing method and why it makes coffee taste better. KEY TAKEAWAYS Most of what we taste is related to what we smell. The more aromas there are, the more complex the taste is. It is possible to enhance certain aroma compounds so that the coffee tastes different. The hotter you brew the more aromas you access, but the more of it evaporates in the steam. Paragon captures these volatile aromas, keeping them in your coffee. BEST MOMENTS‘80 to 90% of what we taste comes from the nose. ´ ‘Sometimes we need 2 or 3 even 4 volatile compounds to give us a specific tasting note.'
