Matt Katase and partner Asa Foster of Brew Gentlemen (https://www.brewgentlemen.com) (Braddock, Pennsylvania) started writing the business plan for their brewery a decade ago, before they were of legal drinking age. They weren’t homebrewers when the idea gripped them, but they became homebrewers as they pursued the idea, creating batches and iterating recipes from the garage of their fraternity house at Pittsburgh science and engineering powerhouse Carnegie-Mellon University. They launched in 2014, at a time when soft and hazy IPAs were of growing interest in the Northeast and mid-Atlantic. And while they embraced the hazy IPA trend, they never let it consume them—their flagship IPA General Braddock’s includes some hops in the blend that would be more common in 90’s and 00’s West coast IPAs than in the hazy IPAs of their peers. For Katase, the idea isn’t to throw out the past and start over, it’s to build a bridge, and create a continuity between old and new. The effort has been successful, too—over the years, Craft Beer & Brewing Magazine®’s blind review panel has tasted a number of their beers, and four of those IPAs scored 96 or above. Ten of the twelve beers this magazine has reviewed scored a 92 or higher. There’s beauty in the connections they’ve made. Like most brewers, you’ll hear Katase use the word “balance” many times, but struggle to define it. Yet, for Brew Gentlemen, another key axis in the quest for balance is time and inspiration. While they’ve committed the brewery to making beers that are soft and balanced, they’ve also committed to making beers that feel as comfortable and classic as they feel new. In this episode, Katase discusses how they do that, from leaning on old school American hops in IPA blends to knocking down ABV in their barrel-aged beers, to perfecting their mixed culture feeder-aged table beer. He also discusses the impact of this past year of COVID on how they think about retail, and why they’ve chosen to keep the taproom closed while they reimagine a brewery experience that makes sense now. For Katase, integrity matters and slow growth with intention is far better than rapid expansion. They’re committed to putting in the work, and the work is never done. *This episode is brought to you by: * G&D Chillers (https://gdchillers.com): As the brewing industry’s premier choice for glycol chilling, G&D Chillers has set the standard on quality, service, reliability and dedication to their customer’s craft. Special episode, special beer, and special guests abound in the latest Drinking Partners release. Podcasting live from Brew Gentlemen to celebrate their 5th anniversary, Ed and Day welcome the brewery’s co-owner Matt Katase and Braddock’s new mayor Chardae Jones. Ed promises to be politically correct, and Day promises to be himself as they learn about Mayor Jones’s rise to become part of the “millennial mayor” association. Matt jumps into the conversation to speak on the connection between business and community and how the two must rely on each other before he expands on how Brew Gentlemen got its start during his college years. Keep listening to learn the meaning (and vibe) behind Akamai, a double IPA offering with Hawaiian history and discover how Brew Gentlemen uses a mixed culture fermentation approach for their Mise En Rose series. In the latter minutes of the podcast, the conversation remains beer-specific with Matt detailing their new offerings brewed specially for their outdoor expansion. A fun and engaging listen. Podcast 31: Preshow Beers : Alex - Nobody's Robot, Nick - Warm Hand Splash Another low-key week for us, but we're back and we're going to entertain you. Jake talked about his adventures on Hanover St. and Alex has opinions on cupcakes and wants to know everyone's take on the word moist. We discuss at length the correct amount of icing on cupcakes and our other favorite desserts. Moving back to beer, we hit on what adjuncts can be used in beers and how over used some flavors are. Some of these flavors are winners and some are stinkers. Coming into the holiday season, we're gonna have some stellar stouts and Christmas ales. We're gonna focus next week on trying some of these styles and commenting on these to gear up for the holidays. Our hatred of pumpkin spices and pumpkin beers is strong. Overall we're looking for balance and still drinking a beer from these flavors. Brew Gentlemen released Double Mex on Sunday. Were you able to get your hands on this special release? We'll be tasting this one on Christmas Eve probably. We talk about traveling for beer and what we factor into going to these places that are further away than our normal stops. In that conversation we hit on Full Pint and Brew Gentlemen and Jake and Alex relive California with Russian River. Beer #1: Jake - Red Currant Fated Farmer - Trillium Brewing (American Wild Ale - 6.7%) Jake raved about this beer. Excited to see how this series evolves. Very sour and heavily carbonated. Beer #1: Alex/Nick/Sara - 120 Minute IPA (2015) - Dogfishhead (Triple IPA - 18-25%) Alex was shocked by how smooth this beer was. Very malty and cloudy, but not hazy. The holy grail for hopheads does not disappoint. There's no way to guess that the ABV is as high as it is. Brew News! Sixpoint was acquired by Southern Tier/Victory Beer. Steel City Beer Wholesalers are bringing Hoof Hearted Brewing, Rotunda Brewing and Maine Beer Co to Pittsburgh. Beer #2: Nick/Alex Etch - Dancing Gnome (IPA - 6.6%) Much better batch this time. We're drinking Christmas beers next week! Check back then!
