Barbecue Renaissance Man, Carey Bringle AKA The Peg Leg Porker and Prolific Best-Selling Author, Peter Golenbock, Writer of Some of Sports Biggest Works Carey Bringle developed a love of barbecue when he was young and he still remembers family gatherings at iconic barbecue places.  At age 17, he lost a leg to cancer, but recovered from the disease, and after success for years on the competition BBQ circuit, celebrated his second chance at life by naming his restaurant Peg Leg Porker when it opened in Nashville in 2013. His Peg Leg Porker sauces and rubs, a new line of professional-grade home smokers, and Peg Leg Porker Tennessee Straight Bourbon Whiskies have expanded the BBQ into a full-fledged brand.  Carey is even an author as he is the writer of the book, BBQ For Dummies. As a Nashville native with deep-seated roots in the West Tennessee food and beverage culture, Pitmaster Carey Bringle was born into Barbeque, his appreciation for smoke, fire and, of course, flavor is second-to-none. Bringle was raised on iconic West Tennessee barbecue where thick smoke, a spicy rub and a trusty smoker is “the secret sauce.” For the Bringle family, barbecue is more than eating; barbecue is about bonding and bringing people together as a community. Being mentored in competitive barbecuing by his uncle, Bruce Bringle, who competed in the very first Memphis in May World Championship Barbecue Cooking Contest in 1976, made quite an impact on Carey, who at the time was a budding BBQ enthusiast. Today, Bringle has demonstrated his talents in the “Super Bowl of Swine” for more than 26 years. Winning various awards including several top ten finishes, 2nd place on three separate occasions and 3rd place on “Whole Hog” is worth its weight in bragging rights. On a personal note, at the age of 17, Carey was diagnosed with Osteogenic Sarcoma, an aggressive bone cancer. After months of intensive chemotherapy, Carey lost his right leg. Instead of letting this tragedy set him back, he emerged from that experience with a new perspective and outlook on life. He realized that every day brings new adventures, new experiences, and another chance to enjoy great food, especially barbecue. It was then he vowed to place fun, food, friends and family at the very center of his life. Today Carey's zest for life and sense of humor is reflected in his signature “Peg Leg Porker” brand. Peg Leg Porker BBQ opened in 2013 to offer Peg Leg Porker sauces and rubs, a new line of professional-grade home smokers, and Peg Leg Porker Tennessee Straight Bourbon Whiskey. Peg Leg Porker has become a lifestyle that is built around a barbecue and bourbon brand. A Tennessee pitmaster who’s passion for barbecue and entrepreneurial spirit brought him to open up shop in Nashville. Carey Bringle didn’t let his circonstances define him. After making the decision to amputate his leg during a battle with cancer, Carey later went on to become an award winning pitmaster.With the help of his barbeque knowledge, he was able to make a unique bourbon. A hickory charcoal that’s a byproduct of barbecuing is used to filter the bourbon separating it from other charcoal-filtered whiskeys. Since then, the line has expanded, with a new pitmaster reserve bourbon released in 2020 and more on the way. This is great because Zach explains the whole process of his business, how to order(tell them what meat you want, sauce you want, slaw you want (vinegar or may based) and they try to make it exactly to your liking), what his favorite order is. He explains middling and some cool special things to order you wouldn't think of. We talk about what it was like growing up in the business and what he had always dreamed about as a kid. There is a whole lot of whole hog talk. He goes through 20-25 whole hogs a week and they take 24 hours to cook. We talk about how he wants to give back to the community right now in people's time of need and talks about how the community reached out to him after his father passed and he took over the business immediately. Carey Bringle developed his penchant for smoked pig pretty early on, following in the hoofprints of his uncle Bruce who competed in the first Memphis In May barbecue contest. He realized he could turn his passion into his profession, and opened up Peg Leg Porker (a nod to the limb he lost to cancer as a teenager) as a restaurant, then extended his entrepreneurial spirit over into, well, spirits with Peg Leg Porker bourbon. Bringle opened up about his path to the pit, how physical challenges inform his approach to hospitality, and how a busy restaurateur can keep the home fires burning.
