In this episode of the Kate Bush Fan Podcast, Seán introduces Darrell's chat with Pat Martin, bass guitarist with British band Unicorn. Because of his close association with Dave Gilmour of Pink Floyd, he was asked to play for the young Cathy Bush's first ever recording at the age of fifteen in 1973. Pat can be heard on ‘Passing Through Air' from this session which was released as a B-side to ‘Army Dreamers' in 1980. The late, Ricky Hopper is also discussed. It was through him that Kate's music was heard in the first place, championing her relentlessly. We get to hear how Pat was invited to this session at Gilmour's house, and his fond remembrances of the young and shy Cathy. He knew there was something very special and that here was an artist, sure and confident about her craft. We also get to hear wonderful stories about Pat's involvement with Unicorn, and the amazing artists they worked with, including Patti Smith, Fleetwood Mac and Linda Rondstadt among many otters. Unicorn's song 'Ooh Mother' was recently played in the USA TV drama ‘Paradise'. It has resulted in the song being streamed 115k times on Spotify. It's worth a listen.

On Play Me a Recipe, your favorite cooks will walk you through their most treasured recipes, offering all the insider tips, stories, and tricks you won't get from a written recipe—and you'll be right alongside them, every step of the way. On this episode, Pitmaster Pat Martin talks about the quintessential hoecake and some of the principles of barbecue. If you're cooking along, here's the recipe we're making today. Go ahead and grab the ingredients below Recipe10 to 12 hoecakes (1 or 2 per person)2 1/2 cups medium-ground white cornmeal3/4 teaspoons freshly ground black pepper1/2 teaspoon Diamond Crystal kosher salt1 egg, beaten3 cups whole buttermilk1/4 cup lard or bacon grease, melted, plus more for cooking4 tablespoons butter, melted for brushingPrepare a medium-high grill (4 to 5 seconds using the Hand Test)In a medium bowl, whisk together the cornmeal, pepper, and salt.In a separate bowl, whisk together the egg and buttermilk to combine. Wile whisking, add the warm pork fat to the egg/buttermilk mixture slowly to prevent the egg mixture from cooking. Add the buttermilk mixture to the cornmeal mixture and use a whisk to stir until smooth but do not overmix. It should have the same consistency as pancake batter.Set a cast-iron skillet on the grill and let it heat up for a few minutes. Brush the skillet with a 1 teaspoon of the lard and heat until it looks shiny. Working in batches, scoop 1/3 cup batter into the pan for each hoecake and cook, without moving, until the batter starts to slightly lift around the edges, 3 to 4 minutes. Flip the hoecakes, brush the tops with the melted butter and cook until bottom is golden brown and crispy, 3 to 4 minutes longer. Place the cooked hoecakes on a platter and cover with a kitchen towel to keep warm.Repeat until all the batter is cooked. Serve immediately; hoecakes will dry out if you try to rewarm them. He has had to redo his whole labor model because you 'can’t ever pass your inefficiencies on to the guest'. He explains middling and some cool special things to order you wouldn't think of. We talk about what it was like growing up in the business and what he had always dreamed about as a kid. There is a whole lot of whole hog talk. He goes through 20-25 whole hogs a week and they take 24 hours to cook. We talk about how he wants to give back to the community right now in people's time of need and talks about how the community reached out to him after his father passed and he took over the business immediately. This seventh episode features Bill Goldberg, director of the Summer Peacebuilding Institute (SPI). He speaks on the importance of grassroots and domestic peacebuilding, even in Eastern Mennonite University’s (EMU) own backyard and campus.Goldberg jokes that he “married in” to the Center for Justice and Peacebuilding (CJP) through his wife, former faculty member Lisa Schirch. His background was in international relations that often dealt with negotiations between world leaders. At CJP, though, he saw the value of grassroots-level peacebuilding.“It actually was more important than the high level. That the high level negotiations would always fall apart if it wasn’t backed by lower level and by communities working together,” Goldberg says. He started taking classes at CJP, then picked up a few short-term contracts, like arranging transportation for SPI. He became the director in 2014.Goldberg’s predecessors, Pat Martin and Sue Williams, taught him a lot.“Pat had an open door policy that no matter what she was doing, no matter what time of day it was, if someone came to her office to talk, she would just drop everything and be with that person,” he says. “And with Sue, her analytical mind was just incredible,” whether it was arranging classes or “speaking truth to power.” One major change Goldberg has witnessed in his time at CJP is a shift towards domestic work, rather than focusing on international conflicts. In his early days he recalls international students challenging the faculty and staff - “you have to fix your own problems as well as help us fix ours. And I think it took 10, 15 years for that realization to set in.”This change has accelerated in the last few years, he says, due to fewer visas being approved – meaning domestic-born students are now in the majority at CJP – and a surge in white supremacist rhetoric across the U.S. and in Harrisonburg itself.“It’s just become much easier to be open about racism and bigotry, and to actually be a racist and a bigot out in the open, and so we’re now seeing the need to combat that more,” says Goldberg.While Goldberg sees this as a necessary and powerful shift, there are still ways he thinks EMU as a whole could improve: like hiring non-Christians as full-time faculty. Goldberg himself is Jewish, and while he understands the value of a Christian Mennonite university, the hiring policy “implies to others, only those who are Christian have the values to teach here.”

As an educator, he was a co-founder and co-director over a decade, of Changing Scenes, an OBIEAwardwinning arts-based crisis intervention program for juvenile offenders. There he created a theatre workshop wherein participants explored their relationship to issues of human needs, power, control, self-concept, personal responsibility and societal expectations. Currently, Dr. Green teaches community health and interpersonal relations at Hostos College, of the City University of New York, and has taught theatre at New School University, Brooklyn College, and SUNYcampuses at Old Westburyand Nassau Community College. Directing credits include: "The Rootwoman" by Michael Bradford at Harlem Stage, "Three Sisters," "Willie’s Cut & Shine," and "A Different Flava" at Ensemble Studio Theatre, "The Hand that Slapped Kate" at Bay Street Theatre and "Spiritual Journey" at the Apollo Theatre.
I just traveled to Los Angeles for the LA times food bowl where Franklin BBQ, Slab, Moo’s, Horn BBQ, Hometown BBQ, Pat Martin and Sam Jones all cooked for an eager west coast crowd. In this Episode I take you with me to the LA food Bowl All-Star BBQ Event which happened Sunday May 12th. LA Food Bowl is a Food Festival that has hundreds of events all around LA with a mix of local and world famous chefs, it lasts 31 days and starts on May 1st. I wasn’t going to take my recorder because I didn’t want to bother any of the Pitmasters who were going to be busy serving... in the end I brought it along to interview some of the local fans & get their reactions. It turned out to be much more than I expected! The tradition of West Tennessee style whole hog cooking is an endangered species, with only three known business owners staying true to the method of hogs cooked under beds of wood coals. Pat Martin of Martin's Bar-B-Que (multiple locations in Tennessee and beyond), Ramey's BBQ in Parsons, Tennessee, and B.E. Scott's Bar-B-Que in Lexington, Tennessee are still carrying on this tradition. We had the pleasure of dining at all three places on our recent whole hog road trip and were fortunate to be able to sit down with owner/operator Zach Parker of B.E. Scott's to talk about his life growing up in the business and how their restaurant operates. B.E. Scott's was opened in 1962 and owned by Early Scott until 1989 when Zach's father, Ricky, bought the business after working there for several years. Zach grew up working in the restaurant at an early age, learning the laborious step by step method of cooking whole hog from his dad. Zach was going to school to be an EMTÂ when his father passed away in 2013. Zach left school to run the restaurant and carry on both the family tradition and the tradition of West Tennessee style whole hog barbecue. On this episode of “Hot Off the Press,” Chef Pete shoots the bull, or the hog rather, with barbecue royalty Pat Martin at his newly-opened Martin’s Bar-B-Que Joint in downtown Nashville, and special guest Billy Durney from Hometown Bar-B-Que in Brooklyn, New York. Two years in the making, the downtown Nashville location of the Martin’s Bar-B-Que Joint empire opened this past August and is a 13,000 “pit master playground” that includes a private dining area upstairs, a downstairs casual restaurant and a beer garden bar. Pat Martin’s whole-hog approach to barbecuing makes him one of the most popular pit masters in the restaurant industry. Martin says the legendary West Tennessee-style whole hog technique to cooking that he uses creates the most unique taste you can get with barbecue pork — slowed-cooked over coals, but not overly smokey, with a delicate, floral flavor. Martin jumped in with both feet and opened his first location 10 years ago in Nolensville, Tennessee—just south of Nashville—with only one employee and a $65,000 line of credit. What started out as a very small operation with no refrigeration, his dad washing dishes and mom making coconut cakes to sell, has now grown to four restaurant locations and features on Food Network, Travel Channel, Cooking Channel, and The Today Show.
