This podcast is a two part  Ramadan special, bought to you by our partners, Gulfood - https://www.gulfood.com,  and Meelz - https://meelz.meFor the first part, I talk to one of the most exciting and prominent Chef's of the region!Mohamad Chabchoul started cooking at the tender age of 15. With Lebaneese origins, having spent most of his adolescence in Syria, it's not difficult to understand that he has a rich food heritage, spending the first few years making frozen pastries for Ramadan. He explains that his first taste of the chef life, was actually by watching chefs with big hats and big bellies on TV, this was always during the holy month.During his time growing up, the TV shows were the catalyst that helped him to write the recipes and experiment, sometimes succeeding, sometimes not. After sometime it was his mum that encouraged him to take cooking seriously, so he then went to Damascus to study. Not easy at first, however after perseverance,  the decision was made to really persue a full time career in the culinary arts. His first foray into a professional kitchen was yet be another challenge, big pots, pans, however soon enough the chef's took him under their wing and started to show him the ropes, it was the cold kitchen that was Mohamads first love, with all of the the French techniques that really appealed to him. He then went onto to work at his first 5 star hotel, after a few years, he made the big decision to move out of Syria completely and set his sights internationally.Dubai was the place, as he got an opportunity to go and work at IHG Intercontinental dubai Festival City - https://www.ihg.com/intercontinental/hotels/us/en/dubai/dxbhb/hoteldetailThis is where the career really started for him, as an Arabic Chef, he does not professionally cook Arabic food, but leans towards European food, as this was his passion from a young age.The opportunity arose with one of the best chefs in the world, the one and only triple Michelin starred legend - Pierre Gagnaire - https://pierregagnaire.comMohamad took the advice the of the gastronomic guru, the key is to keep everything simple, simplicity is the secret! Nowadays Chef Chabchoul can be found cooking in the Grand Millennium Business Bay located in Dubai - https://www.millenniumhotels.com/en/dubai/grand-millennium-business-bay-dubai/Discussing the holy month of Ramadan, the chef describes what it means, a time of reflection, a time of family, overall it is a lifestyle. The tents, the food, the Shisha, people love to try all of the small activities that happen during this time. For him, this year he has created a nostalgic “ Grandmother's corner “ where the chef transports people back to their childhood giving the guest the food they used to grow up with. Pre-dominantly the mezze is Anti-pasti, all vegetarian.A highly talented chef!To see check out all the latest news and to see what Chef Chabchoul is doing, you can go to his website - https://chefchabchoul.comDon't forget to subscribe and give the podcast a review, we are on all podcast steaming platforms.Thank you to our partners Gulfood and Meelz, make sure to click on their links at the very top of the page.Until next time, food is memories!Support the showFollow The Chef JKP Podcast on Instagram HERE

You may remember Xinyi, a Chinese glass manufacturer that wanted to try and build a plant just next door in Guelph/Eramosa Township. All but one of the township's councillors rejected the proposal in the wake of wide-spread public outcry about the effect on the local environment, especially the water supply, and that seemed to be the end of that. It wasn't. The story then moved to Stratford. Last fall, it was announced that Xinyi was trying again in the Festival City, and this time they had a Ministerial Zoning Order in hand. Typically, and MZO is meant to be used in the event of an emergency, or for projects of provincial significance, but according to Environmental Defence, more MZOs were handed out in 2020 than in the previous 20 years combined. One of those MZOs was intended for Xinyi's new plant. MZOs have been the great boogeyman for activists lately as they override the normal planning processes and timelines, and Stratford is just one of the places that is fighting back. An organization called Get Concerned Stratford organized, even though the Xinyi plant seemed like a done deal, but they still demonstrated, petitioned, delegated, and they forced Xinyi to put the entire project on pause. So does this mean public pressure still works? Melissa Verspeeten, who is a member and spokesperson for Get Concerned Stratford, will help us figure that out on this week's podcast. She will talk about her beginnings as an activist, and the political and planning conditions in Stratford that led to this project being proposed in the first place. Verspeeten will also talk about the difficulty in getting materials on the project, and Xinyi’s attempts to discredit Get Concerned. She will also discuss the future of her group, and what other groups can learn in their own local fights against MZOs.  So let's get back in the fight against Xinyi on this week's Guelph Politicast! You can learn more about Get Concerned Stratford and its activism via their website and social media pages. The Stratford Beacon Herald had complete coverage of Xinyi, and you can check that out here. The host for the Guelph Politicast is Podbean. Conductor Bruno Walter said that the first Edinburgh International Festival was a ‘magnificent’ experience, which ‘renewed human relations’ after the war. But not everyone felt included. For some years Glasgow Unity Theatre – led by a former factory shop steward – had been discovering working-class talent and presenting popular, professional theatre. International Festival director Rudolf Bing thought Scottish work unlikely to meet his standards; and making the Festival accessible to a wide social range of ‘local visitors’ was not a consideration. Glasgow Unity came anyway but had to perform, self- funded, on what later became ‘the Fringe’. This two-part event examines the origin of the ‘culture wars’, an under-appreciated part of the development of Edinburgh as a Festival City. Supported by Edinburgh Trades Union Council and Scottish Trade Unions. Part one: Through a combination of docu-drama and readings based on contemporary sources, we look at how the first Festival came about in 1947. This is a true story, sourced from contemporary – albeit incomplete – records, performed by Helen Mackay and Kevin Lennon, and narrated by Terry Brotherstone. Brace yourself: our theatre editor Gareth K Vile confesses he's actually enjoying himself at the Fringe. It might be down to his enthusiasm for Wild Bore, which he describes as the 'most important piece of work I'll see this year at the Fringe, or anywhere else for that matter'. Today's episode is a little inspired by that show, as he looks at different ways of making theatre, starting with traditional, script-based director and ensemble cast. First up, director James Haddrell of Greenwich Theatre introduces to the festival two shows from female playwrights, Under My Thumb and Gazing at a Distant Star. In part two, Sha Nazir, Art Director and Publisher of BHP Comics and Founder of Glasgow Comic Con, shares a couple of festival picks. Finally Gareth talks to Rachel Briscoe, director of Lists for the End of the World, and they discuss that show, theatrical form, and the meaning of dramaturgy.Show notes: 00:00:00 – introduction00:01:11 – interview with James Haddrell, director of Under My Thumb and Gazing at a Distant Star00:11:09 – Sha Nazir (Glasgow Comic Con, BHP Comics) festival picks: One Man Shoe, Ahir Shah: Control00:19:41 – interview with Rachel Briscoe, director of Lists for the End of the WorldCredits:Festival City Podcast is co-created by Gareth K Vile (host) and Scott Henderson (producer). It's a special triple bill as we move into week two of the Fringe: and we are getting serious and excited about the plethora of performers banging on the door to get onto the podcast. Kicking off with a chat with a bin-man, host Gareth K Vile decides to share the reasons for his fear of baked beans with performer David William Bryan, whose show Trashed at Underbelly is a booze-fulled sucker punch of a play. Gareth moves swiftly onto his next guest, Nicola Wren from Replay (Pleasance Courtyard), who admits that she rather likes being at the Fringe. Finally, Joanne Ryan delves into Ireland's sexual health history in Eggsistentialism, an autobiographical comedy about trying to figure out whether to have children and all the cultural baggage that comes with that in her home country.Show notes00:00:10 – Intro and David William Bryan interview for Trashed00:14:08 – Nicola Wren for Replay00:23:18 – Joanne Ryan for Eggsistentialism00:36:09 – Outro and thanksCredits:Festival City Podcast is co-created by Gareth K Vile (host) and Scott Henderson (producer). Episode three of Festival City stays in Glasgow (outrageous!), or at least meets a couple of artists who are either from or living on the West Coast. They are still, of course, at the Fringe during August.First up, there is more Vile conversations with the National Theatre of Scotland: this time, Graham Eatough dives into the problems of making theatre as he reveals the process behind How to Act. Musical interludes come from the new musical, The Local, featuring songs about that subject dear to all critics at the Fringe – the pub. Gareth then decides to 'indulge himself' by giving his opinions on what he wants to see, and goes on and on about clowns... before the show is rescued by the arrival of a comedian Rachel Jackson. Gareth asks her for some dating advice, even though she is a bit of a Bunny Boiler.Show Notes:00:00:00 – Introduction 00:00:58 – Graham Eatough interview00:12:31 – Music from The Local00:14:36 – Gareth's clowning picks: Hi. It's here folks, the city is awash with lanyards, Spiegeltents (yes, plural) have been erected, the purple cow is upside down and the circus has most definitely come to town, literally and figuratively. For episode two of Festival City our intrepid host Gareth K Vile headed to National Theatre of Scotland's new, multiple purpose venue Rockvilla for two conversations on plays showing at the Traverse Theatre during the Festival. His first interview is with Jo Clifford on her autobiographical play Eve in which they discuss the lack of trans-narratives in the arts and how these pieces have universal dimensions, after all, we're all just trying to figure out who we are. After critic Lorna Irvine stops by with some theatre recommendations, Gareth is joined by director Cora Bissett to discuss Adam, which tells the story of a boy born in a girl's body in Egypt and who travels to Glasgow in search of liberation. There may also be some Glasgow spruiking in a podcast about the Edinburgh Fringe... cheeky.Show notes:00:00:00 – Introduction from Gareth00:01:47 – Jo Clifford interview for Eve00:11:57 – Music, Derailed 'Oxytosin' Pleasance Dome00:13:23 – Lorna Irvine, theatre picks from Fringe.
