Winemakers in the Alentejo region of Portugal have been bringing back the ancient tradition of making wine in Talha, also known as Amphora, also known as clay pots. In fact, there is a specific designation for wines made in that method in Alentejo called Vinho de Talha. Winemakers are attracted to making wine in clay pots not just because of tradition, but because clay pots, like oak barrels, allow oxygen into the wine, but unlike oak, they do not impart the same heavy, oaky flavors. In addition, making wine in Talha is also usually accompanied by more natural, low-intervention winemaking techniques. In this episode, we dig into this winemaking method, explore the history of winemaking in the Alentejo region, discuss why wine in Alentejo is different from wines made in the more well-known Douro and Dão areas, and give our honest review of two wines from Alentejo made in Amphora. While very rare in western recipes, in Vietnamese cooking, mixing tofu with an animal protein is very common, and makes a great combination of flavors and textures. Chef Mai Pham from Lemon Grass Restaurant in Sacramento, CA shows us how to make this traditional Vietnamese clay pot with shrimp and tofu. Chef Mai explains that a chảo đất or clay pot dish, is an important part of a Vietnamese family meal, and also a convenient cooking vessel—because it's used to cook the dish from start to finish and is also how the dish is served. A sauté pan can also be used to make the dish, if you don't have a clay pot, however!
Chef Cam Van shows us how to make a classic Vietnamese dish -- Vietnamese clay pot with tofu and peanuts -- which she prepares with Chef Mai Pham from Lemon Grass Restaurant. Ordained as a Buddhist monk in 2019, Nguyen Dzoan Cam Van has since focused on teaching vegetarian cooking. God taught me so much that weekend that I broke my clay pot, and I cannot wait to read this chapter to you. If you are feeling broken, like for me, I went through a divorce. Or life circumstances are beating you down and you feel shattered; this chapter is for you! There is so much truth in this chapter and friend, there is beauty in the brokenness. "When we write about music history, we are mostly talking about artists. There are also fewer biographies, autobiographies and memoirs by instrumentalists. But can the instrument itself become the protagonist to tell us our story? This has been one of my concerns as a practitioner. The ghatam is present in music across the country. It is an instrument with personality and has a central role in folk music. But, in classical music, it takes a back seat. My quest was to foreground a lot of things that are not spoken about in writing about music. This is an attempt to make visible things that are not visible to readers and listeners. These microstories would be good for people to know. This book also comes from a strong conviction that women need to write their own stories; otherwise they don't get written. Difficult things come back to you while writing a memoir but you also make many beautiful discoveries on the way. For me, my ghatam embodies everything that has gone before. My entire life is held in the pot now; it holds my singing as well. PODCAST INTRO: The ministry of my guest, Reverend Cheryl Kincaid, focuses on giving voice to Christian women caught in violent situations and relationships, aiming to help them find wholeness and healing through God's instruction. Using her personal story of abuse combining that with her education in Marriage and Family Therapy along with her Master of Divinity from San Francisco Theological Seminary, Rev Cheryl talked about understanding abuse, boundaries, identity, righteous anger, and forgiveness as taught in the bible. The discussion on forgiveness alone was worth the conversation because so much about God's love and forgiveness has been hijacked with a toxic empathy that is used against tender hearted, conscious Christians especially the abused. We talked about the difference between forgiveness and denial. Reverend Cheryl states that forgiveness requires acknowledging the hurt caused by others and making a conscious decision to forgive, while denial involves minimizing the impact of the abuse or rationalizing it. One of the tools that Rev Cheryl shares is for the moments when you're having a flashback, you've been triggered or trying to resolve inner, emotional mental conflict in yourself. She shares this exercise, the therapeutic term known as classical conditioning and it involves using your dominate hand to represent yourself as the adult you are and your non-dominate hand as the child you were. Using your dominant hand you write down something like, I know you're in pain right now and Using your name, you ask yourself by writing down, what is going on? Then Using your non-dominant hand write down your emotions. There is a point to using your non-dominant hand because it looks like a child's handwriting. Then Looking at the emotions that surfaced you use your adult hand (that knows the truth about where you are now) to comfort your child hand (that is bringing forth the emotions that are connected to the pain). Reframe the emotions with truth whether it be with God's word/His promises, with facts such as Rev Cheryl said things like, You couldn't take care of yourself then but you can take care of yourself now and then you'd list truths. If it was about money, it could be, I have a job, I have a bank account, I'm working toward financial independence. If it was about not having control then say, I have control over myself, I'm responsible for myself, I am learning to set boundaries, I have boundaries in place etc Things that speak truth over where you are today. To me, I thought it was effective using your hands because it gets you outside your head. I think that would be beneficial because sometimes you have so much emotion and overwhelm in your head that if you can make it external, it seems to help you isolate and sort through your emotions in that moment. It reminds me of the effectiveness of journaling as a way to purge your thoughts on paper, it gets everything you can list out of your mind and you can sort through it that way too. So in short, us the classical condition exercise to take what you're believing based on your past and updating it with the truth of where you are today and where you're headed, toward wholeness and healing. And even if your current answers for today (as the adult) are not in your favor with regard to healing and wholeness it gives you a starting point, it helps you pinpoint the fact you need to take action. One of the things we didn't get a chance to talk about is that Rev Cheryl is an author of several books. Her stories are inspired from witnessing God's redemptive grace in the messy reality of authentic life for Christian's, including her own. In her stories she's not afraid to address violent issues that many women find themselves in. Using realistic life situations she reveals the heart of God, His love, care, concern, ability to heal and restore despite the brokenness of this life. Be prepared to stop this audio along the way so that you can digest what she is sharing; which is practical advice and things you can immediately implement to move from being a victim to becoming victorious! There is great symbolism in the Old Testament. In Leviticus 14.3-7 we see a cleansing ceremony to a person healed of leprosy (or a defiling skin disease). In that ceremony, there are two birds, a clay pot with fresh water as well as cedar wood, scarlet yarn and hyssop. One can quickly read over these elements and their potential symbolism, pointing to the gospel narrative. In this message we see how God saved, calls and equips all of us for His purposes. The size or effect is unimportant.
A major theme in 2 Corinthians is God's strength revealed in our weakness. The passage before us powerfully makes this point and, in so doing, provides the Christian with wonderful encouragement as we engage in gospel ministry. The passage divides into at least four main points: 1. Powerless Pots (v. 7) 2. Powerful Paradoxes (vv. 8–9) 3. Powerful Perspective (vv. 10–11) 4. Powerful Partnership (v. 12)
