The Cuban sandwich. If it's made with ingredients different from someone else's recipe, you might find yourself in an hours-long argument in the middle of Little Havana. In Miami and Tampa, Florida, restaurant owners, historians, and Cuban Americans recount their own memories of the Cuban sandwich, as well as the story of its origins. In this episode of Gravy, reporter Kayla Stewart explores the sandwich's long-standing origin story, new research about the Cuban sandwich, and how the South influenced the sandwich's popularity and the current identity of Floridian Cuban Americans. Gravy thanks La Segunda Bakery, Sanguich de Miami, and Ana Sofia Pelaez, author of The Cuban Table, for contributions to this episode. Kayla Stewart is a James Beard Award-winning food and travel journalist, cookbook author, and a Senior Editor at Eater. Also on the show, it's the tale of the two VP nominees as we discuss the validity of Tim Walz' stolen valor allegations and JD Vance's surprise media interview at the airstrip where VP Kamala Harris was also at. Climate change is affecting the foods we love and need for their nutritional value, including some of Florida's favorites such as the Cuban Sandwich, fried gator bites, key lime pie, and the Rum Runner. Using foods and drinks like these is an exceptional way to tell the climate change story and get the attention of everyone. After all, we all eat to live. Rising temperatures, how, when, and where precipitation falls, and even the air, which now has 50% more carbon dioxide than in the past, are affecting the availability, flavor, price, and nutritional quality of our food. And getting them to our table is getting more complicated as transportation routes face new risks. The changes happening to our food are unlimited, as are the stories to tell. What is being done to keep our favorites and staples on the menu and what we can all do to tackle the grand challenge of climate change will be discussed. Michael P Hoffmann, Author and Professor Emeritus at Cornell, joins us to tell the story of climate change as seen through its effects on the food we eat. His message is science-based, and if you want to hear more after today's episode, check out his Ted Talk - TEDx, Climate Change: It's Time to Raise Our Voices; or consider buying his book, Our Changing Menu: Climate Change and the Foods We Love and Need. More than a year ago, Jeff Houck told us he was working on a book that would shock the world's understanding of where the Cuban sandwich came from. You always hear Tampa vs Miami. But Jeff and the lead author on this book went beyond the debate. To write “The Cuban Sandwich: A History in Layers,” they looked at primary sources — advertisements, restaurant menus and newspaper articles, dating back to the 1870s. The result? Two new cities entered the chat: Havana and New York. Jeff's origin story is just as interesting, though. He's a former food writer, editor and restaurant reviewer for the late Tampa Tribune (pour one out) whose work has been nominated for Pulitzer Prize. He now tells the food stories of Florida's oldest restaurant, the Columbia. Plus! Amy returns from a Detroit crab boil and we discuss Miami's version of Buddy's Detroit pizza, Vice City Pizza. Rane Roatta's Homestead farm, Miami Fruit, figured out early on that if they posted videos of the phallic-looking rare exotic fruit they grow, those videos would go viral. Imagine that — the internet likes phallic things! Rane and his partner Edelle Schlegel have been growing ultra-rare exotic fruit in the Redland for more than 8 years. They also partner with hundreds of local farmers to sell this fruit strictly online to the tropical-fruit barren places across the country. He's a talented musician, a competitive cyclist — He's going to Italy for a championship race soon — and he's devoted to living an environmentally friendly lifestyle. PLUS! New fodder for the Cuban sandwich origin debate. Havana (duh!) and New York (yikes!) have entered the chat! My guest co-host is Alex Harris, the Miami Herald environmental writer and host of the podcast "Smoked," which tells the story of Randy Lanier, who financed a racing team by dealing marijuana(!). With Kids Day Tampa coming up at Raymond James Stadium Sunday, I did a list last week of 5 great places to grab a bite to eat after the kids have their fun with the super heroes, alligators and water slides. Mom and Dad are going to need to chill out and refuel. One of the spots I picked I haven't visited yet, but I included them because so many friends have recommended The Boozy Pig.Andrew from The Boozy Pig came by and brought along his take on the Cuban Sandwich called "El Mixto." We talked about the significance and meaning of the name both for the sandwich and the restaurant name. I'm about to say something that could get me run out of town. I'm NOT a big Cuban Sandwich guy. Cuban sandwiches are often too bready and dry to me. Not the El Mixto. It's a great mix of meats with great flavor. I would suggest adding their fresh marinated peppers and onions though. I know many would roll their eyes when I say that, but it took it the next level. This Cuban was phenomenal. The Boozy Pig is located at 3255 W. Cypress Street in Tampa … about two minutes east of Dale Mabry Hwy. It's a butchery with an attached café restaurant, and the meats are all from local farmers (within two hours of Tampa) who practice regenerative farming (grass fed, free range). What's also special about Boozy Pig is that they process all of their sausages, deli meats, hot dogs, everything … in-house … home-made, smoked right in the back. The Boozy Pig is currently open Wednesday through Sunday – both the butcher shop and restaurant, for breakfast and lunch/brunch. Sometime in August they're expanding their hours to include dinner, and adding on some new dinner menu items, on Friday and Saturday nights.

Copeland Moore is the 4th generation at La Segunda Bakery, which was started by his great-grandfather in 1915 in Ybor City, near the port in Tampa Bay. It's here where Cubans, Spanish, Germans and Italians all settled together. The city was a huge cigar producer and gave birth to the Cuban Sandwich (but with the addition of Genoa Salami, which you don't find in Miami). This melting pot really influenced the bread, the pastries and the pizza in the area. There are now a half dozen well-known bakeries in the area all offering slightly different versions of scachatta, but the OG is La Segunda.
