A year of criticism has ended with Woolworths settling on a tougher earnings result. ASX200: up 0.31%, 7,850 AUD: 66.27 US cents GOLD: $2,508 US/oz BITCOIN: $91,901 AUD Supermarket giant Woolworths lifted by 3.3% after it gave a special dividend to shareholders, as underlying profits fell 0.6% to $1.7 billion. Flight Centre has well and truly put the pandemic behind it, with strong demand for travel seeing earnings hit a new high.. Shares were up 3.7%. Not able to cash in a winning bet was Tabcorp, with new CEO Gillon McLachlan saying the company would not meet cost-cutting targets.. shares plunged by 15% today. Gas infrastructure operator APA Group saw its earnings lift to $1.89 billion, but shares fell by 1.5%. And after shipping nearly 200 million tonnes of iron ore over the last financial year, Fortescue's underlying profit rose 3% to $US5.7 billion, but shares dropped 1%. Wall Street started the new trading week in record territory for the Nasdaq and S&P500 driven by market optimism around the AI movement and ahead of the Fed officials' speeches later this week which could shine light on the rate cut outlook. The S&P500 ended the day up 0.77% at a record high 5473.23 points, while the Nasdaq soared to a close up 0.95% at 17,857.02 and the Dow added 0.5% to close at 38,778 snapping a four-session losing streak.European markets closely mostly higher on Monday despite instability on a political front across a number of regions and against a clouded economic backdrop leaving investors questioning the direction of rate and inflation outlook across Europe. The STOXX600 rose 0.12% on Monday, while France's CAC returned to positive territory ending the day up 0.9% after mixed reactions to the possibility of a political victory for the country's far-right national party in the country's upcoming election. In Germany the DAX rose 0.37% on Monday and, in the UK, the FTSE100 ended the down just 0.06%.The Asia region it was all eyes on China yesterday with a slew of economic data painting a mixed economic picture out of the world's second-largest economy's recovery post-pandemic. China's CSI index fell 0.15% on Monday, while Japan's Nikkei tumbled 1.83% on a slide in energy stocks, and South Korea's Kospi index fell 0.52% at the closing bell.Locally on Monday, the ASX200 started the new trading week down 0.31% as a sell-off in tech and energy stocks weighed on the key index. Disappointing economic data out of China weighed on investor sentiment around the big miners yesterday while investors also fled tech stocks around concerns over the outlook of interest rates which will be announced by the RBA later this afternoon.ANZ-Indeed data out yesterday showed Australian job advertisements fell 2.1% in May which at first glance appears supportive of a slight loosening of the country's tight labour market, however, this slight decline keeps the job ads data 20% above pre-pandemic levels indicating the labour market remains tight, especially following the nation's unemployment rate falling to 4% in data out last week.What to watch today:Gold miners rallied yesterday on a rise in the price of the precious commodity as investors hold high hopes that the Fed will cut rates soon.Shares in wagering giant Tabcorp rallied on Monday after the company announced former AFL CEO, Gillon McLachlan will step in as Tab's new Chief Executive from early August.On the commodities front this morning, oil is trading 2.61% higher at US$80.48/barrel, gold is down just over half a percent at US$2320/ounce and iron ore is up just 0.2% at US$107.33/tonne. Iron ore prices have jumped overnight after China's crude steel demand jumped 8.1% in May from April indicating recovering demand in the world's second largest economy which is a much-needed boost to the outlook for exports from Australia's biggest iron ore miners. While this was a key step forward for the country's post-pandemic recovery, China's new home price data also out yesterday indicated new home prices fell at the fastest pace in more than 9 years in May, painting a further dire picture of the economy's struggling property sector.Taking a look at the Aussie dollar, 1 AUD is buying 66 US cents, 104.31 Japanese Yen, 52.05 British Pence and 1 New Zealand dollar and 8 cents.The highly anticipated RBA rate announcement will be handed down this afternoon where it is widely expected Australia's central bank will maintain the current cash rate of 4.35% for the next period, however, we are likely to see investors and markets react to commentary out of the RBA that indicates the rate outlook and a timeline to cuts.Ahead of the local trading session here in Australia the SPI futures are expecting the ASX to open the day up 0.38% tracking Wall Street's rall

Raspberry Ricotta Cake -         Cooking spray, for greasing -         220g (1 ½ cups) plain (all-purpose) flour -         1 tablespoon (12g) baking powder -         1 teaspoon (4g) salt -         365g (1 ½ cups) ricotta cheese -         275g (1 ¼ cups) sugar -         3 large eggs -         ½ teaspoon (2g) vanilla extract -         Grated zest of 1 lemon, line, grapefruit or orange (optional) -         115g (4oz unsalted butter) -         340-450g (12-16 oz) raspberries or blackberries, fresh or frozen Method 1.      Preheat the oven to 180c. Spray a 23cm round cake tin with cooking spray and line with a round of baking paper 2.      In a large bowl, whisk together the four, baking powder and salt 3.      In a medium bowl, whisk the ricotta, 220g (1 cup) of the sugar, the eggs, vanilla and citrus zest (if using) until smooth. Whisk or gently fold into the flour mixture just until blended. Fold in the melted butter, followed by half the raspberries, crushing them ever so slightly as you fold – you don't want them to disappear into the batter, just distributed evenly to create a nice, streaky look, almost like tie-dye. 4.     Transfer the batter to the cake tin and scatter the remaining raspberries and 55g (1/4 cup) sugar over the top. 5.      Bake until the cake is golden brown, and a tester or toothpick inserted into the centre comes out clean, 55-65 minutes. One Tray Chicken 6 chicken thighs, bone in, skin on 500g kipfler potatoes, peeled and chopped into roughly 2 cm pieces 500g cherry tomatoes, left whole ½ cup green olives in brine, pitted and halved ¼ cup of olive brine ½ cup capers in vinegar, drained 4 garlic cloves, lightly smashed ½ lemon – halved, then finely sliced, skin, flesh and all ½ cup fresh oregano, leaves picked Salt flakes, freshly ground pepper 4 tablespoons red wine vinegar   Preheat over the 200C, in a large deep sided baking dish add potatoes, cherry tomatoes, olives along with their brine, capers, garlic cloves and lemon slices. Place your chicken pieces on top. Using a mortar and pestle (or small food processor), smash together your oregano leaves with a generous pinch of salt. You're looking to create a chunky paste. Stir in olive oil and vinegar. Drizzle your oregano oil all over the tray bake and massage it into the chicken pieces. Snuggle the chicken, skin side up, on top of everything. Season with extra salt and pepper. Bake in the oven for 40-50minutes or until golden, bubbling, juicy and irresistible.  Learn more about your ad choices. Visit megaphone.fm/adchoices

One-pan spiced chicken with green olives, chorizo & peppers Serves: 4-6 Prep time: 30 minutes Cooking time: 1 hour Ingredients 850 g bone-in chicken thighs (about 6), skin on sea salt and black pepper 3 tablespoons extra-virgin olive oil 1 onion, diced 4 garlic cloves, roughly chopped 1 red capsicum, finely sliced ½ teaspoon ground cinnamon ½ teaspoon ground cardamom 1 teaspoon sweet smoked paprika 1 cured chorizo, casing removed 1 tablespoon tomato paste 250 g calasparra rice 125 ml (½ cup) dry white wine 500 ml (2 cups) chicken or vegetable stock 3 fresh bay leaves 3 oregano sprigs 100 g pitted green olives chopped parsley leaves to serve lemon wedges, to serve   Method Preheat the oven to 200°C. Season the chicken generously with salt. Warm the olive oil in a large ovenproof frying pan over medium–high heat. Add the chicken, skin-side down, and cook for 2–3 minutes, until the skin is golden. Turn the chicken over and cook for another 1–2 minutes. Remove from the pan and set aside, skin-side up. Reduce the heat to medium–low and add the onion, garlic and capsicum with a pinch of salt. Gently cook for 7–8 minutes, until softened and beginning to colour. Add the spices and crumble in the chorizo. Cook for a further 3–4 minutes, until the chorizo is beginning to colour, then add the tomato paste and rice and stir to coat, allowing the rice to toast for a minute or two. Increase the heat to medium and pour in the wine, scraping the base of the pan to release any caramelised bits. Pour in the chicken or vegetable stock and add the bay leaves and oregano. Stir so that everything is evenly distributed throughout the stock. Season with a little more salt and some pepper. Nestle the chicken thighs back into the pan, skin-side up, then transfer to the oven and cook for 20 minutes. Remove from the oven and scatter in the olives, then return the pan to the oven and cook for a further 10 minutes or until the rice is tender and the chicken is golden and cooked through. Serve with plenty of chopped parsley scattered over the top and lemon wedges on the side.

Drain anchovies and mash with a fork. Melt oil and butter. In a fry pan add the asparagus, anchovy and pepper. Cover and cook over low heat, turning frequently until asparagus is cooked. Taste for seasoning.Heat olive oil in another pan and fry slices of bread til golden brown and serve with asparagus.
