Victoria is a Veterinary Surgeon and Certified Coach experienced at resolving personal and professional challenges. Manager within Dogs Trust's veterinary team to provide the best possible care to dogs within UK-based rehoming centres, outreach and worldwide projects. I first met Victoria in her role as Lead Veterinarian for UKISAR where he is in charge of Coordinating a team of three vets to ensure high welfare standards, health and safety of the canine team during training exercises and international deployment.She is also a Trustee for the international development charity, PENHA, including leading a project to improve working animal welfare and community resilience in the Horn of Africa.Her other voluntary roles include mentoring disadvantaged women through Luminary Bakery. Benjamina Ebuehi says for a long time, she never saw baking as a career. "I didn't want to work in a restaurant kitchen or run a bakery," she says. "And I didn't really know what else I could do with it." So she carried on with her degree in Economics at the University of Leicester, and kept baking for friends at the weekends. But that all changed, when she appeared on The Great British Bake Off in 2016. In this episode of the Career Conversations series, Benjamina tells us all about her time on the show: "As a watcher, it does look like a lot of fun.. but being in the show is definitely more intense than I was expecting. "You're practicing at home all the time, every single day... it was tough but really enjoyable." And being on Bake Off wasn't her only career-defining moment. Benjamina says one day she was making a cake for a food video, when she met a food stylist - and that sparked something in her. Meghan has once again displayed her cake baking skills in preparing a lemon olive oil cake using lemons from hers and Harry’s Montecito garden. The cake was a gift to volunteers.This is not the first time since marrying Harry that Meghan has baked a cake by way of a thank you.During 2018 tour of Australia, Meghan baked a banana bread loaf during her stay at Admiralty House and brought it with her to the Woodley family’s farm in Dubbo, along with a tin of Fortnum & Mason Royal Blend tea, as a gift. In November 2019 whilst still living in the UK, Meghan helped to celebrate the opening of the second Luminary Bakery social enterprise café in London. During her visit she helped prepare a beautifully iced cake. The recipients of Meghan’s most recent baked creation were the Chicago based volunteers, working  with World Central Kitchen through the YWCA Metropolitan Chicago and Fat Shallot restaurant. Meghan does not hide the fact that she is a bit of a foodie. Prior to dating Harry she had her own lifestyle blog called The Tig where she would share all of her favourite recipes with fans.In her early days as a Royal, Meghan took this love of food with her to many of the charities that she visited, and it helped her to connect with people from many different cultures and faiths. One successful collaboration Meghan has is with the ladies of the Hubb Community Kitchen, in London. Meghan met with the ladies on many occasions. She came up with the idea of a cookbook containing recipes that the ladies were already cooking. It was a way for the Hubb  to raise funds to improve and expand their kitchen, and provide even more meals to the local community and beyond. Meghan has from time to time received royalties from the book sales which she has ploughed back into other good causes.The most recent recipient of some of these funds was this past week when we heard that Meghan had donated about $13,000 dollars to a food bank and kitchen in a deprived area of Nottingham in England. The organization that Meghan donated to this week is called Himmah. Per their website the organization services the needs of the people in their local community in various ways; by tackling food poverty; and in campaigning about racism, gender equality, LGBTQ and people facing disability and mental health issues.Working side by side Himmah is The Salaam Shalom Kitchen a joint Muslim / Jewish project to provide free meals to people in Nottingham who may be struggling.You can see why Meghan donated to this organization. It ticks all the right boxes in terms of what Meghan stands for.Having one charity cookbook under her belt I can see Meghan teaming up with Chef Andres at World Central Kitchen and doing another for the benefit of his organization.Keep listening for future podcasts on all things Meghan, Harry and Archie. I'm not anymore - we've postponed - but as it happens this episode has a bit of wedding theme, since Luminary Bakery are making my cake! More importantly, they have also just published a brilliant new cookbook, Rising Hope: Recipes and Stories from Luminary Bakery. If you aren't familiar with them, they are a bakery and cafe with branches in Stoke Newington and Camden - and are an incredible force for good, training women who've experienced severe disadvantage, from homelessness to domestic violence, in baking and patisserie - and thereby offering them a future route to employment. You might remember them from the visit they received from the Duchess of Sussex (she also featured them in her guest-edited edition of Vogue). I loved chatting to Rachel Stonehouse and Kaila Johnson from their team about all of this - as well as the challenges presented by the lockdown, both in terms of finances and maintaining contact with the vulnerable women they work with. Many tributes were made for Meghan on her 39th birthday this week. The Queen, Prince Charles and Camilla, and William and Kate all posted photos of Meghan on their Instagram accounts and wished Meghan a very Happy Birthday. There were many and varied birthday messages tweeted for Meghan from private individuals and from organizations such as Black Lives Matter, Entertainment Tonight, United Nations Women, and the Girl Scouts. One of the 'sweetest' tributes came from UK Luminary Bakery. Meghan visited these small, modern, combined bakery / cafes on at least two occasions when living in London. These are not ordinary bakers shops. They run on a part business part charity model. In keeping with Meghan’s attention to organizations that see women empowering other women, the two Luminary bakeries are set up as social enterprises, providing skills training and on-going mentoring to women from disadvantaged backgrounds.The bakery invest in the women offering first employment training, then often paid employment and mentoring, empowering the women to follow their dreams, with the aim of breaking cycles of poverty, violence and disadvantage once and for all. 80% of the women assisted between 2014 and 2019 graduated the program, and out of these, an amazing 10 women went on to start their own businesses.In honour of Meghan’s birthday, Monica, a Luminary graduate who Meghan met with when she visited last year, baked, iced and decorated a beautiful lemon cake. People in the UK were able to make a 10 pound donation to charity and have the chance of winning the cake. Benjamina Ebuehi is a London based baker and food stylist. She featured on the seventh series of the BBC's Great British Bake Off in which she finished as a quarter finalist and impressed the judges with her modern style and flavour combinations. She runs the food blog Carrot & Crumb where she regularly shares recipes and baking tips. She is also an ambassador for Luminary Bakery - a social enterprise working to empower and support disadvantaged women. Benjamina recently co-founded The Sister Table - a series of monthly brunch clubs and events for women, creating space for them to be part of a community and enjoy one another around the table over good food.
