Welcome back to Happy Half Hour! In celebration of the lunar new year on February 12 and the Year of the Ox, we chatted with Tony Guan, executive chef at Fortunate Son, the newest restaurant from CH Projects in Normal Heights. Fortunate Son replaced Soda & Swine last fall, and serves Tony’s spin on classic American Chinese dishes like General’s Tso’s chicken and sweet and sour pork. Tony was born and raised in Chula Vista and went to culinary school here. He worked the line at the Dana Hotel in Mission Bay and at The LAB: Dining Sessions, and then left San Diego for more training. He moved to San Francisco and worked as sous chef at the acclaimed Restaurant Gary Danko. Tony described the experience of being fresh out of culinary school and working at a high-end, professional, kitchen as a lot of pressure. It was the prospect of helping open Abnormal Wine Company (now called The Cork and Craft) with chef Phillip Esteban that brought Tony back to San Diego. He then became executive chef at Underbelly, and now at Fortunate Son. Tony says a lot has changed in San Diego’s culinary scene since he first started, and that the city is now becoming a draw for the field—he attributes the non-competitive atmosphere. Chefs can come to San Diego and establish themselves fairly easily compared to other culinary destinations, like San Francisco, where Tony said had he stayed he may still be a line cook or sous chef. While working at Cork and Craft in Rancho Bernardo, Tony got the unique experience of taking higher end food and bringing it to people at a more affordable cost. Having opened a restaurant both before and during the pandemic, Tony was able to share the differences. While the remodeling of Fortunate Son went smoothly, opening up was naturally a more difficult experience. Tony said that takeout becoming the new way of plating food and the typical demographic expanding were a few challenges. What kept him going as a chef was being able to get up every day and work with his staff who all share the same passion for cooking food. In Hot Plates, a new shopping center called Tremont Collective is opening this summer in downtown Oceanside, bringing with it new locations for Bottlecraft and Communal Coffee. A food truck specializing in Lao and Khmer street food, The Sticky Rice Spot, has found a home at 16th and G streets in East Village and will be serving dishes like lemongrass chicken stir-fry daily from noon to 7 p.m. Also in East Village, it’s been confirmed that a new speakeasy will be built inside Neighborhood, but there’s still no word on the name or the concept. Troy discovered during his visit at Bowlegged BBQ in Oak Park that the owners are looking to open a second location in San Diego. In Two People for $50, Tony’s pick was Yakyudori on Convoy Street for the ramen and Japanese curry. Troy’s pick was Bowlegged BBQ for the pork ribs, mac and cheese, sweet collard greens, and dirty rice that can be enjoyed in the lively backyard. David’s go-to place for burritos and beer before a Padres Game is Lolita’s Mexican Food, where he recommends trying the 2 in 1 and Tsunami burritos. Thank you for listening! AND ONCE INSIDE THAT BEAN ITS ALMOST IMPOSSIBLE TO REMOVE. BEWARE OF THE JAR AND MANY OTHER SYSTEMS. IT CAN POISON YOU. I WAS. REPEATED WASHINGS DOES NOT REMOVE IT. IT'S ALREADY EMBEDDED.------------------------------------------------------For most of my life I have always told myself, and the public, how good it was to eat GREEN food. That is, ALL edible green food. This is especially so of what the public calls "Sprouts".The word "sprouts" has been widely misused. 99% of people believe those small 1 inch to 3 inch green stems coming out of the ground are the sprouts. But they are not sprouts. They are the plants. They are full of nutrients that are important to the human body to stay healthy along with ALL the other green plants available from our gardens. But they are still the plant. Which are less valuable than the sprouts.A TRUE SPROUT is the baby which comes out of the seed the day it is born to life. It has a little white tail attached to it. At that moment of birth, 100% of the “God and Nature" given nutrients are in existence. During the birth cycle afterbirth also comes out with the birth of the baby. Afterbirth is what colors the water surrounding the babies just born. It is very visible if you use the common jar system in which to grow them.  And isn't this a very cozy warm place for bad bacteria and mold to begin growing.At 35 years of age, when I started to read about nutrition in the public libraries in Toronto and Etobicoke, I learned that sprouts should be grown in Jars for simplicity. In fact almost any book you pick up today still states exactly the same thing. And most of the articles were written by scientists and scholars with degrees after their name. However the work to keep those baby sprouts both clean and healthy is more than most people want to endure. Ninety-nine percent of all people will give up using the glass-jar system because it is not convenient. People simply don't have the time or are not that interested in doing the daily chore of washing the baby sprouts to eliminate any contamination from the afterbirth. ( contamination means mold and bad bacteria ) The jar-method simply doesn’t work efficiently. In fact, any system where you put many seeds or beans on top of each other will automatically contaminate each other. And once contamination has taken place it is completely impossible to take it out of the seed.When I started growing sprouts, I did exactly what those books stated, every day for 3 years and in Jars. I grew them not because I just wanted healthy nutrition but because I HAD TO HAVE THE BEST NUTRITION. During those 3 years I experienced the daily chore of growing sprouts in a jar. It was not easy. And I, like others still think today, thought that I should let them grow 2 to 3 inches high to be of full value. I remember how each day, 3 to 5 times a day, I had to shake the jars back and forth to try to keep them from getting moldy and forming a bad smell. There were times I gave up and wanted to quit. But because of my need for greater nutrition I continued.I learned a lot during those 3 years. I became ill twice during that time. The second time my doctor recognized salmonella poisoning as a cause. I could not accept this nor could we pinpoint the source of the poisoning. But after telling him about everything I eat, it was suggested by the doctor that I look at the sprout growing that I did as the cause of my problem. That is the main reason why I changed to a more expensive sprout grower which claimed to eliminate 50% of the problem.It was during those years I also read in a religious book that plants have afterbirth like humans and animals. I learned that afterbirth can contaminate the baby during the birth cycle and care had to be taken that the baby would not be soaked with the afterbirth. It should be kept apart as much as possible. That is not easily done. And that is why I came up with the screen above the water in my system.After 3 years of using the jar system, I purchased a glass domed unit similar in appearance to the ones I sell today. That was 55 years ago. I paid $50.00 for that unit which by today's dollar value would be approximately $130.00 or more. Most people would never spend that kind of money for a simple sprout grower. But I did. I used that system up until I was 70 yrs of age. During that time of growing and eating sprouts and plants I never got ill with any type of sickness. According to that report and a very recent report I have not aged beyond 31 yrs mentally or physically. A copy of that second and third report has been added.When the baby comes out of the mother seed or bean (the Womb) “God and Nature” gives ALL nutrients to that baby that same day. It's a miracle no one has ever thoroughly explained in any analysis in any book on earth. Then at the same time that birth takes place "Genetics come into place to direct that baby into its adult form. The baby says "I want to look like my mother and father" the same color, the same texture, etc. This is identical in ALL births of any living things on earth. As a result the baby now starts to define which nutrients it should keep and expand on and those that should be discarded as not important in life. That is why different nutrients dominate in different plants. That is why I developed the sprout grower I am promoting. My passion for what I have created allows me to guarantee the products I sell to the public for life "unconditionally". I want people to get healthy on something I know will make them healthy. Sprouts when born are given ALL the nutrients they will need. ALL means all the enzymes we know of today and all the proteins we know about. And if you walked into a vitamin store and read the names on those some 3000 different manufactured products you would learn that every one of them were derived from a green plant, placed into a pill, bottled or packaged in powder form, and then sold to the public as a cure. The nutrients in those packages have been analyzed by scientists. Your one-month supply is just the beginning of a lifetime of investments that do little for your body.Generally the public do not want to work hard for their nutrients. A pill is convenient. That is why the Vitamin Stores have proliferated and succeeded in supplying the public with a simple alternative. But it is a very expensive and inadequate one. The nuclei are in place. The same values are in place for proteins of which we know of 560 (according to articles I have read on the web). Every one of those 3000 different named vitamins on shelves in stores had to get their beginning in a baby sprout. Yet thousands of different supplements are an expense that most of the public cannot afford.Some articles in listings on the web - 2017 state that there are up to 20,000 different proteins in a human body. And up to 20,000 different enzymes known . But I could not find the list anywhere.We know that Mung beans when sprouted are sweet in taste. They are part of the Pea family. MOST but not all people love them the best because of their taste and simplicity to grow. One pound of beans can supply a person with one month of vegetables more healthy than any other vegetables in the world (see study about sprouts at University of Ulster in my LINK section on my website). Most Mung beans now come from China. As this is a main vegetable grown in China they have very strict rules about growing methods. Farmers there are very careful to make sure they are Organically grown. In India they are becoming much more organized now and are starting to implement stronger controls to grow Mung beans Organically.. I have been told that farmers in India are only paid from 1 cent to 5 cents per pound. Imagine 5 cents for one month of green vegetables at your table. Mung Beans are grown in every hot country in the world. I have never told anyone they should not eat baby plants grown in jars. That is their decision in the way they want to grow and eat them. However I tell everyone the consequences of growing them in a jar or similar methods and to be very careful with the fast growth of salmonella and mold on the sprouts. Most people DO NOT clean them properly when they grow them in jars. Ninety percent of the systems sold in stores produce salmonella. Yet people do not find that out until after they start using those sprouters. Incidentally, in India the most common methods are growing them on a wet towel or on a plate with water. Both these methods cause mold and salmonella growth resulting in sickness. Just think about what happens on a towel. The afterbirth is soaked up by the towel and then is also soaked up by the babies at the same time, causing growth of bad bacteria.When purchasing Sprouts or small plants in a store you should know what kind of water they used to grow them with. Is it pure and clean ?. Do they change the water during the growth cycle ?I passionately believe that growing sprouts for health is something that should be taught to children at schools across the world. They can learn about life, nutrition, health, and learn skills of empathy, caring and nurturing along the way. I want to talk to you about consistency. My mind is on this topic today because of a story I heard about a python coder in Hong Kong. Meet Tony. This guy tweets at me every day with his 100 days of code challenge progress. He does this consistently even though his city is burning. Wow. First of all, how thankful are we in the states that Hong Kong is not our reality. I sure reflected on this story and fell very humbled. The other thing that comes to mind is how amazing is this guy's commitment to self-improvement in the face of disaster. If you get this message, Tony, all I have to say is it's going to pay off in a big way to learn software development skills. The big lesson I am getting from this story is gratitude and inspiration. Meet Tony, a student in our Life Skills Training Program at Community Matters Cafe.  Tony came to Rebound in February and decided that the Life Skills Program was the next best step for him in his recovery process. He has enjoyed every part of his experience in the program. He says "I can smile today because I'm not that same broken man I came here being."  He is graduating from the Life Skills Program on November 21st. This will be his first graduating from anything and he is eager to put on his cap and gown.  He is happy for the support and love that people have shown him that helped him get to this point. Tony is hopeful for the doors that God will open for him and all the opportunities he will have after graduation.   Tony Blauer's image has been gracing the covers of Martial Arts and Self-Defense magazines for decades, he teaches tier-one operators,  and he is a big deal in that world, but the reason I wanted to sit down with him for 10,000 "No"s is that his system, and the way he articulates it, is so personal, practical and applicable to each and every one of us.  Contrary to the stereotype that a tough guy would go around bullying people, Tony believes that violence, and his own application of violence, should be avoided at all costs.  When you hear this conversation it will not only make you more aware of your surroundings, but also more aware of your relationship to fear in all areas of your life.  His rise to the top of his field was not without tremendous resilience to overcome the naysayers who mocked his new approach to self-defense.  I encourage you all to not only listen, but following the episode, to check out the links in the show notes to get to know Tony's work in more detail and possibly even arrange to have him come to your community at some point.  It could be the difference between life and death.      SHOW NOTES:  Self-defense is a way of life, (2:52 ). Why people need to think about self-defense more carefully, (6:38). "I’m a life extension insurance salesman”, (8:38). “You want to never be near a situation where you might have to defend yourself,” (9:18).  When you start implementing introspective changes your mindset is shifts, (13:13). Understanding the timeline of violence, (18:05). Startle Flinch is our fastest human reaction, (25:45). "Fear will creep its way into all of our lives, however the ability to protect ourselves and our loved ones is arguably the single most important skill one can possess", (27:17).  If there were sudden violence happening around you, you don’t have the time to dial 911, you have to be aware before the conflict, (30:03). You have to be the first responder of your confrontation, (30:23). “Our (self-defense) system is entirely scientific, it’s a blend of physics, physiology, and psychology”, (35:11). “I can take any person, world class or beginner, and make them stronger in minutes by helping them understand (the system)”, (35:22). As soon as you break contact, you must run to safety, (42:23). “Don’t let ego and pride dictate your next strategy”, (43:00). Muscle memory isn’t a thing, it’s all neuro programming, (46:00). “My big quest is to get the world to understand that practicing for self-defense to deal with a violent encounter is emotionally and psychologically very different than practicing a martial art of a combat sport”, (46:37).
