Today, we dive deep into the world of fast food ingredients and their impact on health. Our guest for today is Mel Weinstein, a former food chemist who has spent decades studying industrial foods and additives. Mel and Rip discuss a variety of eye-opening topics related to fast food ingredients, how they end up in our food system, and the impacts they have on our health.  You'll learn about: Mel's personal journey to food chemistry, vegetarianism, and eventually veganism All cornfields are not the same! How field corn, or dent corn, differs from the sweet corn we buy at grocery stores. How this dent corn is grown and processed to create various products and components like starch, oil, protein, and fiber. The government's role in regulating the food industry and how this later influenced the creation of dietary guidelines. What the food manufacturing companies did to resist these recommendations and drastically alter the food industry (and our health).  The rise of fat-free products loaded with sugar and the unintended consequences of Olestra, an indigestible fat-like substance, as a response to the government's push to reduce fat in foods. Why it's difficult for consumers to know what they are eating when dining out in restaurants. The ridiculous amount of ingredients found in common meals at places like Taco Bell, Kentucky Fried Chicken, and Pizza Hut.  Mel's Processed Food Index (PFI) and what makes something lightly processed vs. extremely processed, or industrialized. What are some of these “Ingredients” commonly found in food products, such as azodicarbonamide, natural flavors, hydrogenated soybean oil, methylcellulose, pea protein isolates, and soy protein isolates, and do they get the “thumbs up” or “thumbs down” from Mel? What about carrageenan, alternatives like xanthan gum and enzymes, wheat gluten, and the industrialization of citric acid? Should we "fear our food?!"   We know fast food is, for the most part, crap, but what we didn't realize is just how bad some of it really is. In the last few months, the topic of artificial intelligence, better known as AI, has been at the top of people's minds. This is because of the new usage model brought about because of generative AI, or AI that can write as if it's a person. But, AI has a lot of potential uses, including improving online search results, creating almost real looking images, and automatic replies in email. However, HITS AI is looking to use artificial intelligence to improve medication research.What is HITS AI?HITS AI is a medication research group that uses artificial intelligence to help work out compounds. While this might sound like science fiction, it is already in action today. The general idea is that researchers know how certain compounds and chemicals interact with the human body.Using this existing information, an AI model has been trained to be able to create new combinations of these compounds and predict with a high degree of certainty how the body will react. Using this information, researchers can then apply the results to known diseases and conditions to see if they will be affected, positively or negatively, by the newly created compound.Depending on the level of confidence, researchers can eliminate certain compounds from consideration for treating particular issues. The elimination could be because the treatment is not effective, is more harmful than helpful, or something else. This process of using AI to eliminate potential treatments for known and potential issues can help researchers and medical companies skip the long and costly drug research process. It can even prevent possible harm to people by identifying harmful side effects before they appear in patients.Benefits of using HITS AIIn the US, we know that the FDA has long been a challenged organization. The administration is over burdened, under staffed, making it difficult to do the job effectively. Several high profile failures have happened, with drugs that had been safe in initial testing causing immense harm or embarrassment. Take, for example, Olestra, which was originally approved by the FDA as a fat-free cooking oil, but turned out to have some pretty bizarre side effects for some users.As it turns out, it was unlikely that clinical trials would have revealed the side effects of this one. However, if HITS AI had been available when Olestra was originally being developed, the effect on the body could have been uncovered through computer models rather than waiting until it hit the market. This would have prevented embarrassment for the company that produced it, the FDA that approved it, and for users who had to wear dark pants. When I saw the new Tufts Food Compass scoring system claiming that Lucky Charms is healthier than eggs I nearly pooped my pants - like the time I ate too many Fat Free Lay's chips (remember Olestra? Because he's been around for a while, GamerDude has seen a lot of changes in the world, and a lot of inventions, products, and things that have come and gone. This week, he talks about some of the supposedly wonderful products and inventions in his life that turned out to be anything but. He talks about how the plastic bag industry created the supposed need and demand for their product that resulted in the virtual disappearance of the paper bag industry. He talks about how there were no plastic bags when he was a kid, and how the old-fashioned brown paper bag was everywhere, and had many uses. He talks about how plastic bags took over that industry, and why that's not such a good thing.  He also talks about how polystyrene coolers and containers also came into widespread use, and why that was not a good thing either. GamerDude also taks about asbestos, and how he remembers it being a "miracle mineral," with uses in everything from floor tiles to automotive brake pads. He talks about how asbestos was used in so many every day things until it was discovered how deadly the inhalation of asbestos fibres actually was. He also talks about food addittives, like Red Dye #2 and Olestra, and how it turns out that things that were supposed to make our lives better actually did just the opposite. GamerDude also talks about how one of the more recent inventions - flushable wipes - was supposed to be a beneficial addition to our lives but how, in reality, they are creating more problems than they may be worth. And, he talks about how self-service checkout lines are not really a boon to society.

Could wearing masks do more harm than good? Is it possible they could negatively impact physical health, mental wellbeing, or even our society's civility? I realize that opening this blog post with those questions will cause some people to question me. Who am I to question public health experts and politicians?  We're not supposed to question the “experts,” are we? They know what they're doing, right? After all, they: Came up with the Dietary Guidelines for Americans, which promote a diet known to exacerbate diabetes and obesityDecided vaccine makers cannot be held liable for damages caused by vaccinesApproved Phen-Fen to combat the obesity epidemic which caused heart valve problems and other major health issuesApproved the use of Olestra in foods which caused micronutrient depletion and anal leakageRemain silent about the impact food and supplements could have on reducing the risk of the coronavirus The list goes on, but I think you get the point. I'm sure by questioning whether we should "mask up" or not, some people will say I'm selfish. "You're supposed to wear a mask to protect others." "You don't do it for yourself." "To not wear a mask is an act of selfishness." Or to quote Biden recently, "It's not about your rights. It's about your responsibility." Those are some of the lines we've been conditioned to believe in the past few months. Before virtue signaling the unmasked, consider this: Many people who choose not to wear a face covering are the most selfless, caring, health-promoting people I know. I'm also among the unmasked. I don't avoid wearing one out of defiance or disregard for others. I'm not convinced the long-term risks of wearing masks outweigh the minor benefit they might provide. In my opinion, the following issues need to be discussed and vetted by unbiased healthcare practitioners and psychologists and require close observation in those who choose to mask up. Without confidence about these issues, I choose not to wear a mask, and wouldn't encourage friends or family members to wear one either. Could mask-wearing increase social disconnection? For more than six months, "experts" have told us to stay at least six feet apart. No hugs, handshakes, or other physical touch. Physical touch helps us bond with others. It helps us feel good, too. Now, we're not only supposed to be six feet apart, but we're also supposed to cover our faces. In fact, one of the Wisconsin state agencies expects employees to wear masks even when alone, on Zoom calls. Facial gestures play an essential role in human communication. We use 43 muscles to create 21 distinct facial gestures. Those gestures often tell more of the truth in communication than people's words do. Thanks to our mirror neurons, when we see others' facial gestures, we mirror their gestures to help us feel what they feel. That's the foundation for empathy. The MNS (Mirror Neuron System) is considered to be related not only with motor imitation and reading intention of other agents, but also with concepts in social interaction, such as emotion, empathy, and ToM (Theory of Mind). Hence, it is speculated that the cause of psychiatric disorders such as ASD may be strongly associated with dysfunctions of the MNS.Hyeonjin Jeon and Seung-Hwan Lee. To believe that covering people's faces won't affect our interactions with others is ridiculous. If others can't see our facial gestures, and we can't see theirs, we miss out on a large part of the emotional aspect of our interaction. On top of that, we shouldn't hug, shake hands or rub shoulders? During a time of significant social tension across the country, we need clear and compassionate communication. Covering our faces compromises communication and reduces empathy. Couldn't it lead to even more social stress than we already see today? Couldn't masks reinforce danger and deceit? You wear a mask to protect yourself from danger,

It’s why people are buying meat from local farmers and farmers markets. It’s why people have backyard chickens. And it’s why people seek out purchasing raw dairy legally (and it’s becoming increasingly more difficult to do that). ⁣ ⁣ In a couple of episodes of JIMMY RANTS, Jimmy shares about a couple of new startup biotech companies called BIOMILQ and new fake-fat company Epogee, companies backed by billionaires like Bill Gates, Mark Zuckerberg, Richard Branson, and Jeff Bezos who want to commercially manufacture fake breastmilk in a lab from human mammary glands to replace formula which they claim is harming the environment and global warming. And she needs to be as it’s necessary navigating the Bay trying to solve silicon valley’s greatest challenge: consumer packaged food. Apsartame, better known as Nutrasweet, or AminoSweet, and its new cousin, Neotame, a much larger, much sweeter, and potentially even more toxic update of the Aspartame molecule, are all over the place. Virtually everything you put in your mouth labeled ‘sugarless’ or ‘diet’ contains these pernicious, toxic substances.Nutrasweet’s original manufacturer was Searle corp. They tried to get Nutrasweet declared safe for consumption, but the body of evidence against it was too strong. In the lab, it caused the following forms of cancer tumors in cellular cultures: brain, pancreatic, breast and uterine. In more recent tests, leukemia, lymphoma and kidney cancers were discovered.If one examines the structure of the Aspartame molecule itself, it’s easy to see why it could be so deadly. The molecule mates what is essentially a precursor to wood alcohol, the type of alcohol that causes blindness and seizures, to two amino acids, so that your body readily recognizes it as a nutrient. During digestion, this deadly methanol and also formaldehyde form from these precursor chemicals.I happen to know a researcher who worked in Cornell’s neurochemistry program when Searle came calling with their new product. They asked the chairman of the department what percentage of people would be adversely affected by ingesting their new sweetener. When he replied that he thought that 15% could suffer ‘irreversible neurological damage’, the Searle people actually smiled. 15% was a reasonable number to these people, given that the Cyclamate artificial sweeteners had just been pulled from the market, and there was pressure to do the same with saccharine. There was just too much money to be made to let the health of a few million people get in the way.Since those early studies were not encouraging, (and in fact the FDA was set to rule against them), Searle started paying for their own studies, and to increase their chances of getting to market even more, they hired consummate Washington insider Donald Rumsfeld as CEO. The day after Ronald Reagan’s inauguration, the FDA (with the hasty addition of a 6th voting member) abruptly reversed course, and legalized Nutrasweet.Nutrasweet, Neotame and the venerable Monosodium Glutamate are all classified as Excitotoxins, toxic compounds mated to amino acids in such a way that the body sees them as nutrients and absorbs them readily. It’s like some kind of diabolical Trojan Horse, ushering in the most potent poisons masquerading as nutrients.Many people know of the MSG headache, or the fuzziness that can accompany a Nutrasweet binge, but are unaware what these warning signs really attest too. They portend potential cellular changes, neurological destruction, endocrine imbalances, and immune system chaos.There is striking evidence that Nutrasweet can also cause or help cause Macular Degeneration, Multiple Sclerosis, Parkinson’s disease, Alzheimer’s disease (it’s been shown to produce pinholes in the brains of rats), Graves Disease, Irritable Bowel Syndrome, and several other neurological and autoimmune conditions, as well as the numerous, aforementioned cancers.Both Searle, and their later parent purchaser, Monsanto, vociferously fought any attempts to get this highly-toxic substance off the market. Their only concern is shareholder equity; Profits, growth and dividends trump any moral qualms.If the FDA really cared about you and I, every cow would be tested for mad Cow disease, factory farms would be forced to deal with their huge waste lagoons, cruelty to animals, and antibiotic and steroid use. Nutrasweet, Neotame, and a host of other dangerous chemicals including trans fats, Olestra, and genetically-modified crops would be illegal. Instead, we have all become unwitting lab rats, with a stew of biochemical experiments and genetically modified substances combining and recombining in completely un-knowable ways in our guts, our bloodstreams, our nerves, and in our brains.There was a hoax on the Internet that Neotame would be allowed, unlabeled, in Organic foods. I’m very relieved to know that this is not true. But beware: Monsanto, and all of the big agribusiness companies are constantly working to weaken the USDA Organic standard to the point that it’s as utterly meaningless as the word ‘natural’ has become on food labels.Rid yourself of these toxins. Grow your own food and get involved with your local organic food growers and purveyors, and petition the federal government to maintain and enhance the integrity of the USDA organic standard, and to return the FDA to its mandate: serving and protecting the people, instead of furthering corporate interests at the people’s expense.
