Ektoras Binikos opened Sugar Monk cocktail bar in Harlem just 9 months before the COVID lockdowns kicked off, after a career in both art and mixology, having emigrated to Manhattan from his native Greece. While weathering the storm of the lockdown, he and his team started making and selling amaros and liqueurs, and this venture has blossomed into a company, Atheras Spirits, which has a distillery and a cocktail bar/tasting room, Bitter Monk, in Industry City, Brooklyn. We sat down on a gorgeous day and talked about his career, opening a bar, trying to keep the wheels turning during a lockdown, the delights of gin/aquavit martinis, and the frankly wild inspirations of each of his amaros and liqueurs which, of course, we tasted our way through. Ektoras Binikos has had quite a life in the New York cocktail scene. From Sugar Monk up in Harlem (which was recently named a 50 Best Discovery) to Bitter Monk in Industry City, the boozy entrepreneur is now at the helm of Atheras Spirits. They're making a bunch of new creations, ranging from a straightforward distillate flavored with fig leaves (which may or may not be pre-used by The Speakeasy's hosts) to an amaro based on the preservatives used in mummification. What happens when a Brooklyn neighborhood takes on deep-pocketed developers? In this episode, we talk to the directors of "Emergent City" and the organizers who fought to preserve Sunset Park's future.“Emergent City” (emergentcitydoc.com) documents the 10-year saga of how Brooklyn's Sunset Park community came together to fight a rezoning wanted by deep-pocketed developers. Against all odds, residents won. Filmmakers were there from the very beginning, when developers proposed transforming Industry City, a sprawling industrial site on the Brooklyn waterfront, into a high-end retail and office complex – or, as some residents put it, a “mall.” They were there when Sunset Park residents protested that the Industry City complex, if it won rezoning, would accelerate gentrification and displacement in a neighborhood where about 70% of households are renters. Joanna Ebenstein is the founder and creative director of Morbid Anatomy, which is the world's leading community that focuses on, among other things, the culture and contemplation of death. Morbid Anatomy has taken many forms since its founding in 2007. It's been a wildly popular blog, a library, a museum, a project-in-residence at Green-Wood Cemetery, just to name a few, and it's currently both an in-person gathering space in Brooklyn's Industry City, as well as a thriving online community that features lectures, workshops, and merch, as well as in-person experiences including field trips, conferences, and other events. An internationally recognized death expert, Joanna is the author of several books, including Anatomica: The Exquisite and Unsettling Art of Human Anatomy, Death: A Graveside Companion, and The Anatomical Venus.
