Many people love to eat ultra-processed foods. Think about those crispy French fries, or the delicious strawberry milkshake. Ultra-processed foods are heavily changed from their original form and made mostly in factories rather than kitchens. Instead of simple ingredients you might recognize—like flour, eggs, or milk—these foods often contain long lists of additives, preservatives, artificial flavors, and chemicals designed to improve taste, texture, and shelf life.Ashley Gearhardt, a University of Michigan psychology professor, studies how addictive processes may drive overeating. She joins the Michigan Minds podcast to share her insights on the impact of these foods on a global level and what drives over-consumption. "Many of those products are delivering these unnaturally intense and concentrated combos of rapidly absorbable carbohydrates and added fats," she explained. "That combination just does not exist in nature, and our brain never evolved to handle that amount of intense reward stimulation in a food."But it doesn't stop there. Gearhardt explains that the food industry uses special ingredients and descriptions to “wake up” your brain and make food taste more exciting. Scientists can create strong flavors—like something that tastes like a strawberry—even if there's no real strawberry in it. For example, the Froot Loops cereal tastes fruity, even though they don't actually contain fruit.Many of these foods send signals to your brain that remind you of natural foods your body is wired to enjoy, but they're actually made in factories using chemicals, she said.When these intense flavors are combined with things like refined carbs and fats, they stimulate your brain even more. This can make you start craving those specific tastes. We've been busy taste-testing some WILD snacks lately, so we decided to throw the last 5 snacks into one epic long-form video!

Doritos and Cheetos are getting a makeover. PepsiCo said in November that it's launching toned-down versions of its bright orange snacks that won't have any artificial colors or flavors. Doritos and Cheetos Simply NKD hit store shelves on Dec. 1. It's part of a broader shift underway at PepsiCo, which announced in April that it would accelerate a planned transition to using natural colors in its foods and beverages. Around 40% of its U.S. products now contain synthetic dyes, according to the company. Dye-free doesn't mean Doritos and Cheetos Simply NKD are colorless. Instead, they're just a lighter color, like a tortilla chip. Many other big food companies, including Kraft Heinz and General Mills, have made similar pledges. They're feeling pressure from federal regulators and U.S. Health Secretary Robert F. Kennedy Jr. who are urging companies to eliminate synthetic food dyes by next year. States have also been taking action. Texas recently passed a law requiring warning labels for foods that contain artificial ingredients. Other states are moving to ban or restrict synthetic dyes. PepsiCo has sold Simply brand Doritos and Cheetos without artificial dyes since 2002. But those products aren't designed to taste like the original chips. The Simply NKD versions are supposed to taste like the originals. But unlike the originals, they don't contain petroleum-based dyes. They also have shorter ingredient lists. For example, Simply NKD Doritos and Simply NKD Cheetos don't contain the flavor-enhancing additives disodium inosinate and disodium guanylate, which are found in the original versions. “We're turning expectations upside down—removing artificial colors, not the flavor—and proving that unforgettable taste can be colorless,” said Rachel Ferdinando, the CEO of PepsiCo Foods U.S., in a statement. PepsiCo said the Simply NKD line includes flavors like Cool Ranch Doritos and Flamin' Hot Cheetos. The chips are priced the same as the original varieties. For two decades, Flamin' Hot Cheetos has been one of the most popular snacks in America. In recent years its legend has grown, as word spread that they were invented by Richard Montañez, a Mexican-American janitor at Frito-Lay who went on to become a company executive. The story made Montañez something of a Latino icon, with two memoirs and a biopic based on his life. But when a journalist at the L.A.
