Before I dive into our main topic, I want to highlight something I find truly ridiculous: the “Beefless ground beef” I saw on a Trader Joe's shelf. If someone wants to eat plants infused with toxic seed oils and preservatives, that's their call, but let's call it what it is, and that ain't beef! I also am not personally shopping for cheese-less cheese, grape-less wine nor olive-less olive oil. What is it with humans?!! Why do we take what Nature perfectly made, much with it, and listen to those who claim it's healthier?Another mini rant I discuss in this episode: the new USDA dietary guidelines (ahem, conflict of interest ridden same ole hot mess) set to come out in 2025. Nutrition Coalition's Dr. Nina Teicholz is one of my heroes for highlighting these conflicts of interest and lobbying to get better people who aren't owned by Big Food onto this committee whose “work” drives what's available in anything our massively obese government touches — for example, schools, hospitals, prisons, etc.Alright! Let's get down to biznass: avoiding the holi-daze and cultivating a nourishing, meaningful season. This starts with mindset, y'all! Ask yourself what is most important to you, how you'd like to spend your precious time. I can guarantee that you'll feel a lot better come January if you set some parameters as for how you will spend your time, money and of course nourish yourself.We discuss that Big Food is happy to offer you even more conveniences which will cost you more AND inevitably contain toxic seed and vegetable oils. While it might take 10 more minutes to wash and cut veggies and make your own quick dip — two dip recipes coming in November (!), you'll save money and have a healthier veggie platter, for example.I recommend four main tips for nourishing yourself while enjoying the holidays: 1) Nourish thyself with sleep, hydration, quiet time each day and of course nutrients; 2) establish a game plan for your non-negotiables such as sleeping 7 hours per night, moving 3-5 days per week (even if it's shorter than your traditional routine), a five minute calming practice when stress appears; 3) come up with some quick go-to menus for those busier nights; and 4) remember, it's ok to say NO or make a quick appearance at an event and then retreat. Successful entrepreneurs understand that their businesses can't “run” them. It's the same with the holidays — don't let this time of year run you. Think about what's important and honor what is best for yourself. This will help you glide into the New Year nourished, energized and ready for what 2025 will bring. To hear more, visit public.substack.com“People get fat because they eat too many calories.” “A calorie is a calorie.” “Saturated fats are bad.”America's leading dietary experts, the US government, and food manufacturers agreed on the above for decades. During that time, rates of overweight, obesity, and diabetes skyrocketed. Either the experts are wrong or people didn't follow the advice of experts. Two journalists, Gary Taubes and Nina Teicholz, say the experts are wrong. Saturated fats are good, not bad, and a calorie is not a calorie. The body doesn't process a 60-calorie serving of bacon the same way it does a 60-calorie slice of cake. Obesity and diabetes are a result of a hormone imbalance caused by eating more carbohydrates than the body can handle, they say. When we eat carbohydrates, they believe, the body works to keep the fat locked away in storage. The best diet is a high-fat, high-protein, and low-carb diet known as the keto diet.Naturally, many in the diet establishment, including at academic institutions like Berkeley and Harvard, have taken issue with the conclusions of Taubes and Teicholz. Mainstream experts argue that Taubes and Teicholz have misunderstood or misrepresented the science and downplayed the difficulty of sticking to the keto diet.Teicholz and Taubes have responded at length to their critics at their terrific Substack, Unsettled Science. And, now, Taubes is out with a response to his critics in the form of a major new book, Rethinking Diabetes: What Science Reveals About Diet, Insulin, and Successful Treatments. At 750 pages, Taubes clearly intended for this to be the best available review of the scientific evidence and history published to date. Any serious person who disagrees with Taubes' unorthodox views on diet and diabetes will need to contend with it. I interviewed Taubes about it for today's podcast. We talked about his critics and the challenge of sticking to keto, including for me. He told me that the book on diabetes flowed out of his 2016 book, The Case Against Sugar. “The liver has never evolved to see the doses of fructose that they get today… Biochemistry in the 60s and 70s demonstrated how fructose could cause this condition called ‘insulin resistance,' which is the fundamental disorder of type 2 diabetes.”

(2:00) Nina has done an extensive deep dive on why this is happening. The big question is, why are Harvard and Walter Willet so anti-meat? She gives a great example of why correlation is not causation. (3:45) She elaborates on her deep dive into Walter Willet. (7:15) He keeps trying to assert that the science is settled on the topic of red meat to avoid debate. (14:30) Vinnie asks Nina a pointed question—What's in it for Willet? (16:45) There are a lot of parallels between him and Ancel Keys. Nina gives more details about the research she has done for her book. (19:30) There are many conflicts of interest regarding funding; there is a price for propaganda. She has written about this topic several times and revealed such conflicts. Actual clinical trials do not support Willet's claims. He always makes hypotheses but never completes clinical trials. There are so many data points that he ignores. Follow the Money There are plenty of fake food companies that are expanding their business interests. (31:00) They are the ones creating the narrative that meat is bad for the planet so they can claim they are saving the planet. Coincidentally, the claim of cow burps affecting the climate didn't arise until after the low-carb movement became popular. (34:45) The Barilla pasta company came up with a $40 million campaign to get meat off the plate, so you could replace it with pasta. (44:50) Ruminants are essential for soil sustainability and health, so why the attack on cows? (38:30) They chat a bit more about recent funding behind Harvard; it includes a donation of $350 million. (40:00) Even the Harvard Crimson, the student newspaper, called out the $350 million donation as disingenuous. (43:00) Nina ends on a positive note that there are plenty of people who conduct N=1 experiments who find their health improving when going low-carb and eating meat. Nina Teicholz is a science journalist and author of the New York Times bestseller, The Big Fat Surprise, which upended the conventional wisdom on dietary fat–especially saturated fat—and spurred a new conversation about whether these fats in fact cause heart disease.  Teicholz's work on nutrition, policy, and health has been published in the BMJ, PNAS Nexus (a journal of the National Academies of Sciences), the Wall Street Journal, New York Times, Financial Times, The Atlantic, among many other national publications. She now writes a Substack column called “Unsettled Science.” Teicholz has appeared on numerous podcasts and TV shows including ABC's Nightline, Good Morning America, CBC Radio, NPR shows, MSNBC, the Joe Rogan Show and more. Her book was named a “must read” by the BMJ and The Lancet, as well as one of the year's *Best Books* by the Economist, Wall Street Journal and Mother Jones; It continues to be called a must-read for anyone seeking to understand the amazing story of how we came to believe fat is bad for health—and what a better diet might look like. Nina is also the founder of the Nutrition Coalition, a non-profit working to ensure that nutrition policies are based on the best and most rigorous science—work for which she was asked to testify before the U.S. Department of Agriculture and the Canadian Senate. Teicholz is a graduate of Stanford and Oxford Universities and previously served as associate director of the Center for Globalization and Sustainable Development at Columbia University.  Teicholz attended Yale and Stanford where she studied biology and majored in American Studies. He explains 3 key messages he is trying to spread: public health needs animal foods a sustainable food system is only possible with livestock, particularly ruminants. livestock and animal foods are a part of our (and others) varied cultural heritage Vinnie gets tired of the fast narratives put out by popular vegan doctors. (4:00) He referenced recent guest Dr. Bill Schindler who has studied human development back as far as 3 million years. (5:15) Peter adds that grasslands need ruminants for soil to be healthy and growth to be sustainable. Early humans discovered tools that helped their brain development; they went from being scavengers to apex hunters. They discuss the disconnect that happens as certain tech progresses. (11:30) People are becoming even more removed from certain aspects of life which makes things feel as if they are going in reverse. Peter asks: is it the tech, or what we choose to do with the tech? He gives an example of how Gary Taubes is doing some current research. They discuss the politicization through such campaigns as “meat is murder,” etc. (15:00) Reconnection with the hard wall of physics, biology, and endocrinology should make people realize how negative campaigns against meat are misguided. The proof is the current Pandemic of Metabolic Illness happening. Obesity is a symptom of malnutrition—he elaborates. Ruminant Revolution Peter is encouraging a “ruminant revolution,” which is to improve the productivity and efficiency of ruminant agriculture globally. (20:00) He and Vinnie also remind people that doctors are not your boss, they work for you. (22:00) People need to become better informed for their benefit. They discuss how politics has entered the food system. (26:30) Peter gives examples from both Germany and Brazil about processes that both didn't work and do work. (28:00) He explains what arable land is (able to be plowed and grown). All arable land is agricultural, but not all agricultural land is arable. Vinnie asks Peter's opinion about the recent uproar in Ireland about killing thousands of cattle to reduce emissions. (41:00) We must figure out how to feed the world the appropriate amount of animal-sourced food, for public health. Even if the U.S. got rid of animal agriculture, it would only reduce global emissions by approximately 2%. However, it would also imbalance the food system and reduce nutrition globally. One study that is never discussed states that a wildlife-dominated savannah and a livestock-dominated one are equal. (58:00) Those who are pushing the Dietary Guidelines for metabolic health are at least 10 years behind on the science.
