The Delmonico Way Max Tucci From Scott Warner, President, Culinary Historians of Chicago I just couldn't pass it up. When I attended the International Association of Culinary Professionals Conference in New York this past September, one limited-seating event had me signing up immediately: an historic dinner in the board room at Delmonico's, hosted by third generation partner and global brand officer, Max Tucci. Max regaled us with the luscious history of what is widely recognized as America's first fine dining restaurant, that began in 1827 in Manhattan as a small cafe and pastry shop. It was opened by Italian-Swiss immigrants, the brothers Giovanni and Pietro Delmonico. Ten years later, in 1837, they moved nearby to what is still Delmonico's present location at 56 Beaver Street — in the heart of Manhattan's financial district. The rich, powerful and famous frequented the eatery. Fast forward 100 years, to 1926, and Italian immigrant Oscar Tucci (Max's grandfather) buys Delmonico's, opens a speakeasy in the basement, continues attracting celebrities and world leaders (i.e.,Elvis, Jackie Kennedy Onassis, Marilyn Monroe, Richard Nixon) and institutes many of the professional restaurant standards in use today, known as the Delmonico Way. During the height of the Tucci era, Delmonico's, with its many rooms was considered the largest restaurant in the world. (63,000 sq. ft.) One of the lush private dining rooms included an en suite bedroom — if only the walls could talk! Delmonico's is also credited with being the first U.S. restaurant to use white tablecloths, and the creator of Delmonico steak, Eggs Benedict, Baked Alaska, Lobster Newberg and the Wedge Salad. So do join us as Max Tucci takes us on his personal tour of his beloved Delmonico's. Max has also captured his family's legacy in his book, The Delmonico Way. This episode I am joined by Kelly Hanseth of Lumberyard Brewing Company and Beaver Street Brewery in Flagstaff, Arizona. Kelly's parents, Winnie and Evan Hanseth opened Beaver Street Brewery, Flagstaff's first craft brewpub, in 1994. Kelly was a young girl when the brewery opened and has grown up with the brewery as her family's business. When the city of Flagstaff was looking for ideas on what to do with their historic lumberyard, the Hanseth Family pitched the idea of turning the facility into a production brewery and restaurant. Lumberyard Brewing Company opened its doors in 2010, after the family remodeled and converted the facility. Kelly is now the Marketing Manager for both breweries and the Vice President of the Arizona Craft Brewers Guild. We discuss growing up with a brewery in the family, marketing two breweries, converting a lumberyard into a production brewery, and more. Well it's official. We have hit the big time. The City of Flagstaff invited us along with prolific Nevada beer journalist and perennial Beer Freaks guest Bob Barnes out to their city to explore the magical world of Flagstaff brewing and space exploration. Yes, they do both. Our phenomenal tour guide, Meg, drove us to several tasty breweries, including Lumberyard, Beaver Street, Mother Road, Wanderlust, Grand Canyon Brewing, and Dark Sky, all within the city limits of the charming city of Flagstaff, most of which were walkable from our downtown accommodations, the very haunted Hotel Monte Vista. And yes, Derek got assigned to the most haunted room in the place. But wait, there's more! Not only did we get to experience the best brews Flagstaff had to offer (and there were too many to recount here), but we also got a VIP tour of Lowell Observatory with Dr. Danielle Adams, Chief Marketing and Revenue Officer of the observatory. Our hosts showed and told us all about how Pluto was discovered in Flagstaff, how the city still plays a major role in NASA (step aside, Houston), and how every single human that's ever stepped foot on the moon has spent time training in Flagstaff. This whirlwind trip was an incredible experience from start to finish (except for the unprecedented snowstorm that doubled our drive time) and we can't say enough great things about Flag and the wonderful beer culture, community, and craft they've cultivated in the charming mountain town. You better believe we'll be back soon. And we hope to see you there.Oh, there's one more thing. Because this was our first of hopefully many city tours in the future, we are working on a short film of the experience so that you can virtually come with us as we interview brewers, owners, general managers, and astronomers on this historic occasion. More details to come!Support the show
//Literatur David Kamp. This episode of Editing Writing consists of an interview and chat I had with Robert Rosen on April 10. He was in New York City and I was, as usual, in Ottawa, Canada. Robert is a writer and editor who has produced several books and whose work has appeared in many magazines and periodicals.I was particularly interested though in his book about when he worked in the porn industry as an editor and writer in the 80s and 90s. It's called Beaver Street, and when it came out in 2010 it was well reviewed in both popular magazines and academic journals. It was a really fun (and funny) and informative talk—and stay tuned till the end, when he reveals how he came up with the title.

Mayor of Flagstaff Paul Deasy talks housing, flooding, traffic, bike lanes and more. #1315: Thursday, March 2, 2022 https://youtu.be/_xaSmQPSWIM Affordable Housing? Mayor of Flagstaff Paul Deasy returned to the Jeff Oravits Show to discuss a host of issues. Affordable housing was an issue Deasy spoke about at length. Flagstaff, like many Arizona communities has seen a large increase in the cost of rentals and the median home price of homes. Several proposals are on the table to address affordable housing but Deasy asked, in Flagstaff, “what does that actually (affordable) mean?” Housing Regulations One area of housing Deasy would like to see more strictly regulated is tougher regulations on vacation and short term rentals? He is though, when it comes to owner occupied homes, in favor of allowing property owners more flexibility to add accessory dwelling units to their property which could be used as rentals or in-law quarters. Borrowing for Housing? With regard to a push by some of his colleagues to borrow money to address housing issues Mayor Deasy is not convinced this is the way to go. “We gotta be practical with it”. We've got public safety issues to deal with and houses that are actually flooding. Flood Control Deasy is frustrated with the speed of the Federal Government when It comes to a local flood control project, “let me tell you about bureaucracy” he said. He says the City has ponied up constantly but continues to run into a lot of “headwinds” and that it's a “constant 2 steps forward 1 step” backwards situation. But Mayor Deasy felt progress being made and hopes that projects like the Rio De Flag project, which when complete wil take most of the South Side and NAU areas out of the flood plane, are getting closer to reality. Roads and Bridges Is there an attempt to make it tough to drive on Flagstaff's roads with reduced lane sizes and a push towards public transportation? “Sometimes it feels like people want to punish cars” he said. When asked about a proposed Flagstaff overpass in the downtown area, Deasy says it's coming but design ideas continue to change. Bike Safety As for bike safety, Mayor Deasy discussed a pilot program on Butler Avenue and Beaver Street. The city placed curbs on the street to separate bike traffic from other vehicles. The problem has been snowplowing and the limitation of lane widths. Up for Re-Election Deasy is up for re-election and with three other declared candidates there will be a primary in August. Deasy, who participated in a mayoral forum on the Jeff Oravits Show last election cycle, would like to participate in a future one saying that he is “absolutely game” to doing that and hoped his challengers would participate as well. The Jeff Oravits Show will coordinate a Flagstaff Mayoral forum sometime in late spring of 2022.
Wednesday, December 16, 1835 was a bitterly cold day, known as ”cold Wednesday”. Hanover, NH only reached a high temperature of -17 degrees. It was -12 degrees at Boston by sunset. But it was in New York City that the cold did it's most damage. It was so cold that the East River was frozen: Fire fighter couldn't access the water, The Great NYC Fire of 1835 leveled 17 blocks that night, including most of Wall Street. The fire began on the evening of December 16, 1835, in a five-story warehouse at 25 Merchant Street, now known as Beaver Street at the intersection of Hanover Square and Wall Street. As it spread, gale-forces winds blowing from the northwest toward the East River spread the fire. The conflagration was visible from Philadelphia, approximately 80 miles away. At the time of the fire, major water sources including the East River and the Hudson Rover were frozen in temperatures as low as −17 °F . Firefighters were forced to drill holes through ice to access water, which later re-froze around the hoses and pipes. Attempts were made to deprive the fire of fuel by demolishing surrounding buildings, but at first there was insufficient gunpowder in Manhattan. Finally a detachment of U. S. Marines and sailors arrived at 3 o'clock in the morning, with gunpowder from the Brooklyn Navy Yard and began to blow up buildings in the fire's path. An investigation found that a burst gas pipe, ignited by a coal stove, was the initial source; no blame was assigned. Learn more about your ad choices. Visit podcastchoices.com/adchoices

My very first experience with Arizona craft beer was Railhead Red at Beaver Street Brewery. It changed my life. For better and worse. I now know what good beer tastes like. But I also gained a few pounds. Well worth it. After hitting up Beaver Street periodically over the next year or so II was super excited when word came out that they were expanding and opening a new bigger brewery and restaurant which became what is now Lumberyard Brewing Company. Owners of what is quite possibly the best patio view in downtown Flagstaff Lumberyard has become an oasis of freshly made craft beer and amazing food. In fact, another life-changing experience happened to me right on that very patio. I’m a huge fan of BBQ pulled pork. Hands down one of my favorite foods of all time. I also love mac n cheese because I’m an American. Seriously, you show me an American who doesn’t like mac n cheese and I’ll show you a terrorist. Well anyways, I’m looking over the menu and suddenly a single beam of light shone from the heavens with the sound of angels singing their heavenly tune filled my ears. I followed the shining heaven beam directly to the bottom corner of the menu and quickly realized the purpose of this beam: baked mac n cheese. Ok, you have my attention. But what fell slightly below is what really blew me away: “Don’t forget to include one of our add-ons” and on THAT list I quickly shuffled past everything and saw BBQ pulled pork. Done. Deal. I didn’t even look at the rest of the menu which is rare. My normal process is to narrow it down to about 4 things and then experience self-induced anxiety before making a decision that I immediately regret and dwell on for days. Not this time. I nailed it. And to top it off it was even better than I imagined it would be. So good that I think about that dish at least once a week and that was over 6 years ago! I have also not been able to eat mac n cheese without BBQ sauce ever since. Oh yeah, guess what?! They have beer too. Really good beer. The Knotty Pine Pale is one of my go-to Arizona pale ales and their Red Ale is stellar as well. I’m a sucker for reds and Lumberyards red is fantastic. They even started a single hop series which I love. I want to know what each hop tastes like so that I know what to look for when making future selections. These guys have won awards. Like, the big kind. Not the “Most Shotgunned Beer at Glenns Bachelor Party” kind of awards. I’m talking Great American Beer Festival Gold Medal type of stuff. They know what they’re doing. In this episode I sit down with Ken Wilson the sales manager at Lumberyard and an overall beer expert. Ken is also the president of the Arizona Craft Brewers Guild. Needless to say Ken knows his beer. We recorded this episode during the can release of “This Side Up”, the collaboration between The Shop, Dark Sky, and Helton so things escalated from a sound perspective really quickly. This was a misjudgment on my part but hey, you live and learn right. Anyways, Ken and I have a plan of doing a mini-series about the business of beer so you’ll be hearing more from him in the future. Enjoy the show! Intro/Outro music is "La Negra Tomasa" by the awesome local Arizona band Fayuca Want to show your support and help this show grow?
