Most SFF authors will, at some point, close up their work in one world and start building a new one, but that comes with its own set of challenges! You know the old world so well; it's become comfy and familiar. The new world still has all its work yet to be done, and while it has the shiny lure of new discoveries, it also may seem daunting to start the process of figuring out how a world works all over again. In this episode, Fonda Lee and Melissa Caruso re-join us to discuss shifting focus from one world to another! Where do you start? How different do you need the world to be? We also chat about not just the mental challenges of clearing out one world to make room for the new one, but the emotional challenge of pulling yourself away from a place you love and know so well! Our Guests:  Melissa Caruso writes books of murder, magic, and mayhem. Melissa is a tea drinker, larper, and mom, and lives in Massachusetts with her video game designer husband, two superlative daughters, and assorted pets. Fonda Lee is the author of the epic fantasy Green Bone Saga, consisting of the novels Jade City, Jade War, and Jade Legacy, along with a prequel novella The Jade Setter of Janloon and a short story collection, Jade Shards. She is also the author of the science fiction novels Zeroboxer, Exo and Cross Fire. Her most recent work is the fantasy novella, Untethered Sky. Fonda is a winner of the World Fantasy Award, the Locus Award, and a five-time winner of the Aurora Award (Canada's national science fiction and fantasy award), as well as a multiple finalist for the Hugo Award, the Nebula Award, and the Oregon Book Award. Her novels have garnered multiple starred reviews and appeared on Best of Year lists from NPR, Barnes & Noble, Syfy Wire, and others. Jade City has been translated in a dozen languages, named to TIME Magazine's Top 100 Fantasy Books of All Time, and optioned for television development. She has also written acclaimed short fiction and been an instructor at writing workshops including Clarion West, Viable Paradise, and Aspen Words. The Delmonico Way Max Tucci From Scott Warner, President, Culinary Historians of Chicago I just couldn't pass it up. When I attended the International Association of Culinary Professionals Conference in New York this past September, one limited-seating event had me signing up immediately: an historic dinner in the board room at Delmonico's, hosted by third generation partner and global brand officer, Max Tucci. Max regaled us with the luscious history of what is widely recognized as America's first fine dining restaurant, that began in 1827 in Manhattan as a small cafe and pastry shop. It was opened by Italian-Swiss immigrants, the brothers Giovanni and Pietro Delmonico. Ten years later, in 1837, they moved nearby to what is still Delmonico's present location at 56 Beaver Street — in the heart of Manhattan's financial district. The rich, powerful and famous frequented the eatery. Fast forward 100 years, to 1926, and Italian immigrant Oscar Tucci (Max's grandfather) buys Delmonico's, opens a speakeasy in the basement, continues attracting celebrities and world leaders (i.e.,Elvis, Jackie Kennedy Onassis, Marilyn Monroe, Richard Nixon) and institutes many of the professional restaurant standards in use today, known as the Delmonico Way. During the height of the Tucci era, Delmonico's, with its many rooms was considered the largest restaurant in the world. (63,000 sq. ft.) One of the lush private dining rooms included an en suite bedroom — if only the walls could talk! Delmonico's is also credited with being the first U.S. restaurant to use white tablecloths, and the creator of Delmonico steak, Eggs Benedict, Baked Alaska, Lobster Newberg and the Wedge Salad. Get 10% off your first month at https://www.BetterHelp.com/burning    CHEESY BISCUIT EGGS BENEDICTION   BISCUITS INGREDIENTS: Buttermilk Sour Cream AP Flour Baking Powder Baking Soda Salt Cold Butter Shredded Cheddar Cheese Sliced Scallions STEPS: 1. Whisk together buttermilk and sour cream in a small bowl. 2. In the bowl of a food processor, combine flour, baking powder, baking soda, and salt; process until blended. 3. Scatter cold butter patties evenly over the flour and pulse until the mixture resembles coarse meal 4. Transfer to a large bowl. 5. Add the buttermilk mixture to the flour mixture; fold until just combined. 6. Transfer the dough to a floured work surface; knead until it just comes together, adding extra flour as necessary. 7. Roll the dough into a 12” square; fold sides in to form a 4” square. 8. Press the square down and roll it out again into a 12” square. 9. Sprinkle cheddar cheese and sliced scallions over the dough square; fold into a 4” square again. 10. Roll the dough again into a 12” square.  11. Cut six 4” rounds out of the dough with a floured biscuit cutter. 12. Transfer to a parchment-lined baking sheet, spacing them about 1” apart. 13. Form the dough scraps into a ball; knead and repeat rolling process until big enough to get more biscuits. 14. Brush the tops of the biscuits with the melted butter; bake at 425° until golden brown and well risen, about 15 minutes, rotating the pan halfway through.  EGGS BENEDICT INGREDIENTS: unsalted butter large eggs egg yolks fresh lemon juice cayenne or hot paprika Kosher salt and freshly ground pepper white distilled vinegar Kosher salt English muffins Canadian bacon chopped chives chopped dill, tarragon or parsley   STEPS: 1. Make the hollandaise:    * Melt unsalted butter in a small pot over medium heat until it's foamy but not beginning to brown, 3 to 4 minutes.   * Place egg yolks and 2 teaspoons water in a blender.   * Start blending, and, working very slowly, add the hot, melted butter until it's all incorporated.   * Add lemon juice and cayenne; season with salt and pepper.   * Transfer to a small bowl, and place plastic wrap directly on the surface so it doesn't form a skin; set aside. 2. Poach the eggs   * Fill a medium pot with 3” of water.   * Add vinegar, season with salt and bring to a simmer   * Using the handle of a spoon, stir the water with a clockwise motion.   * Gently crack an egg into the center of the pot, letting the water swirl around it and allowing the white to envelop the yolk.   * Repeat with remaining eggs — you could probably do up to four at a time.   * Check the eggs after 4 minutes: Use a slotted spoon to lift an egg out of the water, and feel the white for firmness. If it's not quite done, slide it back in for another minute or so.   * Let cook until the whites are just set, but the yolks are still completely runny 4 to 5 minutes; let eggs drain on a towel-lined plate. 3. Cook ham in a medium skillet over medium-high heat until golden brown and just crisp at the edges, about 6 minutes. 4. Apple says, “Increasing the distance the device is viewed from can help children lower their risk of myopia and gives adult users the opportunity to reduce digital eye strain.” Think about it, have you been dealing with symptoms that could be from using your smartphone too close? Apple has also stated, “Screen Distance in Screen Time uses the TrueDepth camera to encourage users to move their device farther away after holding it closer than 12 inches from their face for an extended period of time.”  Deodorant - Yay or Nay when spending time outdoors? Current Biology Journal has published a new study revealing that wearing deodorant reduces the risk of mosquito bites by 56%. Mosquitoes can pick up body odor 350 feet away! Wearing deodorant makes a person less attractive to mosquitoes because they do not like the fragrant smell or a compound found in deodorants called isopropyl tetradecanoate. After dark, people are less likely to be eating salads and exercising.
