In this Episode: For the first time in my life, my talents, abilities, and propensity for hard work could not solve my problems. Not only was I heartbroken and miserable, but I also did not even know who I was if I could not claim to be uber-successful at everything I did. About Meghan Gilroy: My story starts back in 1998, when I was living and teaching in inner-city Los Angeles, just a few years out of college. Having collected A+’s ever since kindergarten, my insatiable appetite for praise was now being fulfilled as an author featured in the Los Angeles Times, interviewed on ABC and even praised by the White House. It was all impressive on the outside, but deep inside I was not happy. Up to that point, you might say I was the self-appointed queen of the Overachieving, People-Pleasing, Perfectionist Tribe. But after experiencing major heartbreak, betrayal and an out of control classroom (ouch!), I had a huge wakeup call. My whole world felt like it was falling apart. I was an emotional mess. For the first time in my life, my talents, abilities, and propensity for hard work could not solve my problems. Not only was I heartbroken and miserable, but I also did not even know who I was if I could not claim to be uber-successful at everything I did. Thankfully, my guardian angels were working overtime. At my lowest point, they whisked me off and delivered me to don Miguel Ruiz, shaman, and international best-selling author of The Four Agreements. When don Miguel mentioned that he was leading a retreat to the pyramids of Mexico in a few months, I knew I had to go. On that trip, I learned to trust my heart and not just rely on my super, hemi-powered brain. I started tapping into my intuition. I discovered that the roles I played in my life – daughter, professional, girlfriend etc. — do not define who I am. I became gentler and kinder with myself, less harsh and judgmental. I also realized that it was essential to my soul to embark on a spiritual journey. And that realization changed the course of my life. Over the next decade, I followed don Miguel around the world, spelunking my way through my emotional baggage and mental limitations. Eventually I wound up co-teaching with him, running his international retreat business and even getting locked into Machu Picchu at night with the llamas. (Really! You just can’t make this up!) During this time, I met my husband-to-be at one of don Miguel’s events. On our first date, Jamie and I went to a beautiful meditation garden overlooking the Pacific, sat down to meditate, and each had a separate vision of being married on top of the Pyramid of the Sun at Teotihuacan, Mexico. Two weeks later, we were in Mexico, on a retreat, on top of that very pyramid getting married. Crazy right? I know it could have been a disaster, but it was one of the best decisions I have ever made. Jamie and I moved back to the East Coast and in less than four years created a seven-figure business. And so, it was that I became a multi-tasking mama, life-and-business coach, and TV-show host (whew). It was quite a ride, actually. Since we started out in debt, by necessity we had to do it all ourselves – branding, marketing, positioning, copywriting, bookkeeping, website development, systems implementation, you name it! Gary earned his Bachelor of Science degree in Mechanical Engineering from the U.S. Naval Academy in 1991 and a Master of Science in Nuclear Engineering from the University of Illinois in 1993. He spent 26 years serving as a Submarine Officer in the U.S. Navy, including commanding the nuclear attack submarine USS TUCSON from 2009-2011 and retiring as a Captain. His career was rewarding both personally and professionally with unforgettable opportunities to work with highly trained teams employing state of the art technology in support of our Nation and its ideals. In 2011 Gary began a process of replacing his traditional earned income with passive cash flow by purchasing income-producing real estate properties. You’ve grown and sourced some amazing food. Now you want to get it on your shelves and store it. One of the best ways to do that is with canning. Canning is becoming more popular than ever, thanks to its many benefits. So, how do you get started the right way? In this episode of Pantry Chat, Josh and Carolyn kick-off a brand-new series on preservation techniques with an introduction to canning. They cover the different types of canning and what foods they are good for, what equipment you should be using and why it’s so important to follow the rules and practice the right safety measures, especially when it comes to canning. In this Episode:For the weekly update, Carolyn has done a bit of harvest scrambling due to the freezes this past week and they butchered about 135 birds (mostly chickens), netting almost 600 lbs of meat in their freezer. She explains how being more efficient as a family has helped them get this done even quicker this year. How did canning originate? Carolyn and Josh trace its history all the way back to Napoleon during the war, to the evolution of the Mason jar in the 1850s, to the development of the standard two-part lid in the 1950s that is used today. What are the different methods of canning and why is each most effective for different types of food? Since canning is not a “natural” preservation method, there is a specific set of rules you need to follow and not just trust your intuition. Why is canning not called “jarring” or “bottling?”What are the two biggest fears that people have when it comes to canning and why they don’t need to worry. Can you use an Instant Pot electric pressure cooker for pressure canning? What are the differences between the types of canners and is one better than the other? Why it’s important to be practical and determine what foods you really need to be canning ahead of time.
