INGREDIENTS: · 10 Jalapenos – slit in two with the seeds removed · 1 tub of Hungry Soul – Garlic & Chives vegan cream cheese · 10 tortilla chips – ground into crumbs · Sour cream – vegan cream, a little lemon juice and some fresh chives INSTRUCTIONS: - Pre-heat the oven to 200C - Split the jalapeno in two and remove the seeds or they will be too hot! - Fill each one with Garlic & Chives hungry soul - Cover with the tortilla crumbs - Plate in a hot oven for 10 minutes or until the crumb starts to brown - Serve with a little sour cream … to keep things cool

On this week's episode of Taste Of The Week, Alan Morrissey welcomed Jacques Brennan to the show. Jacques is the owner of the Vegan Factory and Shop in O'Briensbridge and is also the author of Hungry Soul. This week, Jacques prepared a vegan-friendly Moroccan aubergine with harissa & tahini. INGREDIENTS · 2 large aubergines, cut into 10mm round discs. · 4 tsp. harissa paste · 2 tablespoons of olive oil · 2 tablespoons of maple syrup · 6 tbsp of tahini · 1 clove of garlic (optional) · Juice of one lemon · 200 ml of water · Pine nuts and chives for as toppings · Salt and pepper INSTRUCTIONS 1. Salt the aubergine slices for 20 minutes or so, then pat them dry. 2. Fry them to lightly brown each side. 3. Make your harissa dressing: harissa paste, maple syrup, olive oil and a pinch of salt and black pepper 4. Brush both sides of the aubergine slices with the dressing. 5. Place into a hot oven at 180°C for 5 minutes, brush with a little more harissa, and turn and return to the oven for another 5 minutes. 6. While the slices are in the oven, make the tahini sauce: tahini, lemon juice, water, and, if you like, minced garlic. This can be done by mixing it all in a bowl, or if you have a blender, it makes it super quick and smooth. 7. Serve the slices on a bed of tahini sauce with a scattering of pine nuts and chives. Perfect as a small dish on its own or along with a nice chickpea couscous.

Although an avid lover of philosophy, psychology, and neuroscience, he knows these mechanisms can never fulfill the appetite of the soul, and often we fail to recognize the hunger in our soul because our attitudes toward its existence are passive and mute instead of bold and lively, as God intended. He says must go beyond the biology of who we are to embrace what God wants to give us, communion with Him. Tune in to learn more.
On this week's special Christmas edition of Taste of the Week, Peter O'Connell was joined by Paul Knapps, The Firefighting Chef, and Jacques Brennan, owner of the Vegan Factory and Shop in O'Briensbridge and author of Hungry Soul. Paul made a mulled wine winter fruit crumble served with custard, while Jacques brought in a savoury dish: tomato farcies (stuffed tomatoes) to have before the wonderful fruit crumble. The recipe for Paul's Mulled Wine Winter Fruit Crumble is as follows: Serves 6–8; prep time: 20 minutes; cooking time: 30-35 minutes. Fruit Ingredients: 3 apples, chopped 3 pears, chopped or 4 plums, 75g blackberriesblueberries 50g sultanas The mulled wine: 2 tablespoons of vanilla bean paste, the peel of 1 orange, 4 cloves, 1 cinnamon stick, 75 grams of sugar, and 300 ml of red wine. The Crumble: 150g demerara sugar/golden castor sugar, 225g flour, 150g plant-based butter, 50g flaked almonds/porridge oats (optional), Custard to serve. Method: 1. Pre-heat the oven to 180°C, and now we can bring the wine, sugar, cinnamon, cloves, orange, and vanilla to a boil. 2. Add the fruit. Take off the heat and cool to room temperature (this allows the fruits to soak up some flavour). 3. Drain the fruit and add it to an ovenproof dish. 4. Boil the sauce for 5 minutes to thicken (we need to reduce this down to create a syrup) and then add it to the fruit. 5. Topping: rub the crumble mix, and now we can spoon on top. 6. Bake at 180°C for 30–35 minutes, until golden. 7. Serve with hot custard and a big smile. Happy Christmas, everyone!

Jacques is the owner of the Vegan Factory and Shop in O'Briensbridge and is also the author of Hungry Soul. This week, Jacques prepared delicious Polish/Russian Borscht (Beetroot Soup). INGREDIENTS: · 3 medium beets, peeled and grated · 2 medium carrots, peeled and grated · 1 medium onion, chopped into strips · 2 garlic cloves, minced · 5 cups of water · 2 tablespoons tomato paste · 2 cups finely chopped cabbage · 1 medium potato, washed and grated · 1 ½ tablespoons lemon juice · ¼ cup chopped fresh dill, plus more for serving · Salt and pepper to taste When serving: · Vegan sour cream, yogurt · Chopped fresh parsley INSTRUCTIONS 1. To a large pot add a half cup of water and set it to medium heat. Add the beets, carrot and onions. Sauté until the veggies begin to soften, about 5 minutes. You may need to add a little more water. Then add the garlic and sauté another minute. 2. Stir in the water, tomato paste, cabbage and potato. Raise the heat and bring the liquid to a boil. Lower the heat and allow to simmer, uncovered, until the veggies are tender, 15-20 minutes. You can add more water, you want this as a chunky soup, but with plenty of liquid. 3. Remove the pot from heat and stir in the lemon juice and dill. Season with salt and pepper to taste. 4. Ladle the soup into bowls and top with vegan sour cream, or Natural Hungry Soul and a little fresh parsley or dill.

Psalm 140 is the cry of a hungry soul. Written for the choir director, this Psalm of David is written from the depths of personal conflict. David knew all too well, like many today, the fragility of human relationships. Relationships break down because of sin, failures to communicate, and guilt, to name a few. For various reasons, some of David's closest friends and advisors turned against him. His soul was hungry for vindication and justice. So too, many believers are experiencing personal conflicts and broken relationships. Like David, they too are crying out for vindication and justice.

On this week's episode of Taste Of The Week, Pat welcomed Jacques Brennan on to the show. Jacques is the owner of the Vegan Factory and Shop in O'Briensbridge and is also the author of Hungry Soul. This week, Jacques prepared a delicious Vegan Alfredo Linguine. INGREDIENTS: - 250g linguini pasta - 3 to 4 tbsp of Original & Natural Hungry Soul vegan cream cheese ( or the Garlic & Chives ) - 1 clove of garlic minced - a tbsp or two of olive oil - a tbsp of fresh parsley, basil or chives - pinch of chilli flakes ( optional ) Note – You can alternatively use the Hungry Soul - Garlic & Chives to make it even easier and omit the garlic and herbs. METHOD: · Cook your pasta until al dente ( firm but cooked ) or the way you like it. · Retain a cup of the cooking water as you drain the pasta ( important ) – the cooking water has starch in it which help make the sauce. · Add a little cooking water to the drained pot, the garlic and warm it a minute on low heat. · Return the pasta to the pot and drizzle the olive oil over it and mix it in. · Add the Hungry Soul and another drop of water and warm it to get the pasta well coated · If you feel it needs more sauce add the rest of the water and even a little more Hungry Soul if you want it. · Once all heated up, serve with a little fresh herb and chilli flakes on top.

On this week's episode of Taste Of The Week, Alan Morrissey welcomed Jacques Brennan on to the show. Jacques is the owner of the Vegan Factory and Shop in O'Briensbridge and is also the author of Hungry Soul. This week, Jacques prepared beetroot wellington which is the ultimate vegan dish. Jacques also gave listeners advice on how to serve this dish including both the ingredients and recipe. INGREDIENTS · 4 medium cooked beetroot (peeled) and cut in thick rounds. · 2 tbsp balsamic vinegar & 1 tbsp olive oil · 500 g mushrooms (roughly chopped) · 3 shallots or small onion (roughly chopped), · A stick of celery … chopped finely · 1 cup of breadcrumbs · 1/2 cup walnuts · 4 garlic cloves (peeled and finely chopped) · A nice pinch of thyme & a little sage · Pinch of salt and pepper · 300 g puff pastry, 1 sheet · 3 tbs plant milk, a drop of oil and a tsp of maple syrup (for brushing) INSTRUCTIONS - If the puff pastry is frozen, make sure it has thawed out before use. - Steam or boil the beetroot whole. Allow to cool, then peel, cut into thick 10mm round wheels. - Drizzle with the oil and balsamic vinegar and a pinch of salt. Put under the grill until a little crisp on each side. Set aside to cool. To make the mushroom stuffing: - Fry mushrooms with a little salt until dry, let cool a bit then transfer to a food processor. - Fry the shallot or onion, garlic and celery in a drop of oil until soft then add to food processor. - Add the walnuts, breadcrumbs and herbs to the food processor and reduce all to a paste. - Add a good grind of black pepper. - Taste the mixture to see if it needs a little more salt. - Preheat oven to 200°C or 390°F. - Roll out the puff pastry sheet onto grease proof paper. - Spread the mushroom stuffing onto the pastry leaving a boarder along the edges. - Place the beetroot pieces side by side upright, then wrap them with the stuffing to make a log, making sure all the edges are well sealed. - Allow to rest in the fridge for 30 minutes or a little longer to firm up. - If you like, using a butter knife lightly score the surface to give it a nice feature. - Brush the pastry with plant milk mixture and bake in the

The memoir was also listed as an Indiefab Book of the Year 2015 finalist in the autobiography/memoir category and named a finalist for the Library of Virginia People's Choice Award for nonfiction.An outspoken advocate for survivors of military sexual trauma, Carter has published personal essays on the topic, as well as poverty and domestic violence, in several publications and has presented talks, lectures, and workshops at organizations including the KGB Literary Bar, Girls Write Now, The Women's Initiative and West Point Military Academy.
