In this episode of The 5 O' Clock Apron Podcast, Claire cooks with champion gardener Charles Dowding. From a farming family in rural Somerset, Charles' focus as a gardener and author has always been to grow healthy and health-giving food. Through his teaching on gardening courses around the world and also on his sizeable social media platform, Charles is keen to promote an awareness of nutrition and its links to food production. Charles has accumulated a considerable following for his No – Dig philosophy on soil management and gardening. Cooking with Charles is like visiting Willy Wonka's Chocolate Factory, with Charles producing delicious, homegrown ingredients to use in the borscht that we make together. With the pot bubbling away on the stove top, Charles and I take a turn around his beautiful garden, I get to meet his worms, check out the shed where he stores a bounty of fruit and veg all winter long, and all the while, as we walk along, we stop and munch on various vegetables from bed to bed. On this week's episode of Taste Of The Week, Alan Morrissey welcomed Jacques Brennan on the show. Jacques is the owner of the Vegan Factory and Shop in O'Briensbridge and is also the author of Hungry Soul. This week, Jacques prepared delicious Polish/Russian Borscht (Beetroot Soup). INGREDIENTS: · 3 medium beets, peeled and grated · 2 medium carrots, peeled and grated · 1 medium onion, chopped into strips · 2 garlic cloves, minced · 5 cups of water · 2 tablespoons tomato paste · 2 cups finely chopped cabbage · 1 medium potato, washed and grated · 1 ½ tablespoons lemon juice · ¼ cup chopped fresh dill, plus more for serving · Salt and pepper to taste When serving: · Vegan sour cream, yogurt · Chopped fresh parsley INSTRUCTIONS 1. To a large pot add a half cup of water and set it to medium heat. Add the beets, carrot and onions. Sauté until the veggies begin to soften, about 5 minutes. You may need to add a little more water. Then add the garlic and sauté another minute. 2. Stir in the water, tomato paste, cabbage and potato. Raise the heat and bring the liquid to a boil. Lower the heat and allow to simmer, uncovered, until the veggies are tender, 15-20 minutes. You can add more water, you want this as a chunky soup, but with plenty of liquid. 3. Remove the pot from heat and stir in the lemon juice and dill. Season with salt and pepper to taste. 4. Ladle the soup into bowls and top with vegan sour cream, or Natural Hungry Soul and a little fresh parsley or dill.

I'm not going to say much by way of introduction for Natasha for the simple reason that she expresses herself so poignantly and more eloquently than I could. Natasha, who is half Ukrainian and half Russian, speaks to us today from her new home of Hungary, where she and her husband are raising their baby girl and investing their free time and energy into caring for orphans. Natasha's childhood was lonely and difficult, but her story is about finding, receiving, and then giving away love.Natasha's recipe is a first for The Storied Recipe. Russian Pelmini is a laborious hand-rolled dumpling, very similar to the pierogi. But Natasha was clear on the fact that no one had time to make these, least of all her family. So Natasha's recipe comes frozen, from a bag, just like - if we're honest - many of the foods we've eaten when there wasn't enough time, energy, or money to go around. But frozen Pelmeni was still a food that brought comfort and nourishment in dark times, and I'm glad Natasha was willing to say this. Finally, she'll share about a chapter in her story where someone did take the time, energy, and love to make her handmade Pelmini and fresh Borscht.Like her recipe, Natasha's story is realistic, raw, and authentic. She reminds us that there is hope - so much hope, in this world and the next - but that hope doesn't come to us in the form of an after school special.
