"I'm still passionate about what I do, I still love what I do, and I still think I'm one of the luckiest people in the world. I get to make beer for a living and, especially taking the step coming here to Bali, I get to mentor people that might not have necessarily ever had an opportunity like this before, so I feel really lucky that I have the power to be able to do that and pay it forward."Given her fondness for travel, adventure and life on the ocean, perhaps it was destiny that Sam Füss would end up brewing in Bali. Certainly, more than two years after moving to the island's northwest – the "real Bali" as she puts it – she's embracing every opportunity that has come her way.Sam was enticed to move there with her partner Dani by the founders of Beaches Brewing Co back in 2022, and in recent weeks oversaw the release of their first two beers, Pale and Cerveza. The switch of scenery gave her the chance to help build another brewery after being involved in the early stages of a number in Australia, including Little Creatures in Freo and Philter in Marrickville.She joined us from her beautiful home – ocean views on one side, volcano on the other, a pool a few metres behind her, the call to prayer carried on the wind outside – to take us inside the experience of getting Beaches off the ground, training up locals with no prior experience, educating people who've never encountered craft beer before, and working in a beer culture that, in its own way, is like the Australian scene when she moved from the bar at Little Creatures to the brewery around a quarter-century ago.We also trace her career from those early days through building a race track inside Matilda Bay's former brewery in Dandenong to True South, Young Henrys, and the trophy-laden days at Philter prior to the big move. The future of the Matilda Bay Brewery and the old Ford Factory in Fremantle will be decided tomorrow as plans to build multi story apartments are currently pending. Fremantle Society President, John Dowson told Oliver Peterson on Perth Live that WA's Heritage Council takes too long in their assessment of buildings for state protection. Have you had a chance to try an Aussie Wheat Ale yet? It's going to be the hottest new beer style in Australia this summer – that's if Carlton & United Breweries and retailer Endeavour Group have anything to do with it. Five breweries owned by CUB's craft beer division – Fire & Earth Ventures – have created their own version of what an Australian wheat beer could look like. When I say wheat beer, more than likely you're thinking of a Belgian witbier like Hoegaarden, or a German hefeweizen like Weihenstephaner. And that's part of the problem. By and large, Australians have had an uneasy relationship with these European wheat beer styles that owe much of their flavour and aroma to particular yeasts that produce phenolic characters, which can be quite polarising. Aussie Wheat Ale promises to be something different. The parameters are still very broad, but the crux of it is a new beer style celebrating Australian-grown wheat as its core ingredient, and a more neutral yeast that doesn't get in the way of the hop aromas and flavours that we're more accustomed to. Part 2 this week and we continue looking at the subject, which we accidentally stumbled on and have a habit of of stumbling across random WW2 flying bases in Australia. Hey it happens!From where we were last episode, just south of Swan Hill in Victoria we dash 2000 kms westward to Matilda Bay. This is located on the shores of Perth's Swan River. Brewer and winemaker Phil Sexton is a legendary figure in the Australian drinks industry. He founded Matilda Bay Brewing Company, Australia's first craft brewery, in 1983.After Foster's acquired Matilda Bay, Phil went on to co-found arguably the country's most influential craft brewery, Little Creatures.He established Margaret River winery Devil's Lair in 1981, and in 1997 came his foray into cooler climate wines in the Yarra Valley, where he created the Innocent Bystander and Giant Steps brands.Phil has had a very eventful 18 months. In October 2019 he shocked the brewing world when he announced he would relaunch Matilda Bay from his base in Healesville, partnering with the brand's current owner, Carlton & United Breweries.And in August 2019, he announced the sale of Giant Steps to US company Jackson Family Wines.The deal follows his successful exits from Devil's Lair, sold to Southcorp – now known as Treasury Wine Estates – in 1996; Little Creatures, which floated on the stock exchange in 2005 before being wholly acquired by Lion; and Innocent Bystander, which he sold to Brown Brothers in 2016.In a long overdue interview on the Drinks Adventures podcast, Phil updates us on the goings on at the reborn Matilda Bay, as well as Giant Steps, post the sale.We touch on some of the earlier chapters in his career and get his thoughts on recent industry developments such as the sale of fellow Yarra winery Oakridge to Woolworths subsidiary Endeavour Group, plus the demise of his former employer in the US, the pioneering Portland brewery Bridgeport.And the conversation goes down a few other rabbit holes that I hope you enjoy exploring as much as I did.There's a few earlier episodes of Drinks Adventures that I recommend you listen to after today's episode, if you haven't already.In Season 1, we met Janice McDonald, who worked alongside Phil at Matilda Bay, Devil's Lair and Little Creatures, so that's essential listening for another perspective on those early years.And in Season 2, our documentary on Stone & Wood Brewing Company, whose co-founders Brad Rogers, Jamie Cook and Ross Jurisich were previously involved with Matilda Bay.First off in today's episode, I asked Phil how he came to the decision to sell Giant Steps, a company revered for its single vineyard expressions of pinot noir and chardonnay.

With a biotechnology degree in DCU here, and a year’s work experience in Harp there. A bit of work in the pharmaceutical industry. A Masters at Herriot Watt in Scotland. Off to Australia’s Matilda Bay, working in wellies and learning her trade. From there to VB, processing 1100 hectolitre batches of ‘Victoria Bitter’ lager every 2.6 hours. Back to Ireland again, helping to set up craft brewers Wicklow Wolf. Finally arriving home again, and now making lager and ale by hand in an old-fashioned, open fermentation, ten hectolitre brewhouse. This is Luke Robertson, and you’re listening to the Good Beer Hunting podcast. When it was announced in October of this year that Phil Sexton would be opening a Matilda Bay Brewing Company brewpub, the entire Australian beer industry did a double-take. If we were in a cartoon, we would’ve removed a hip-flask from under our coats and sworn off drinking. To say it was a surprise is underselling it. Sexton cofounded Matilda Bay in the early ’80s. He left in the early ’90s after the publicly listed company was taken over by Carlton United Breweries (CUB). From there he went to the States to become brewmaster at the now-shuttered BridgePort Brewing Company, where he created BridgePort IPA, one of the early West Coast IPAs. Then, back in West Australia, he teamed up with the old Matilda Bay crew to open a new brewery called Little Creatures. Its flagship Pale Ale played a big part in the next wave of craft beer in Australia, and the Fremantle brewpub is still a pilgrimage for Australian beer lovers 20 years later. Like Matilda Bay, Little Creatures was publicly listed on the Australian Stock Exchange and was eventually taken over—this time by the Kirin-subsidiary, Lion. From there, Sexton focused on his other passion: wine. He launched two brands in the Yarra Valley, just outside of Melbourne, and for a while it looked like he was done with beer. In his absence, Matilda Bay has been increasingly driven by marketers. The popular Fat Yak Pale Ale was spun off into its own brand, called Yak Brewing, and old favorites from the Matilda Bay range such as Redback Wheat Beer and Dogbolter Dark Lager were found in fewer and fewer places. Matilda Bay’s only recent launch is a beer called Frothy. Followers of Australian beer immediately pointed out its similarity to Lion Breweries’ Furphy, a Kölsch-influenced easy drinker. Frothy has the same-colored packaging, is a similar style, and even the names look and sound the same. While CUB says it was designed independently, the imitation is obvious and disappointing. For longterm Matilda Bay fans, it was a death knell for an old favorite … or so we thought. Much has changed since Sexton left the beer world, especially with his old brands. Only in the past year, it was announced that Matilda Bay owner CUB would be sold by AB InBev to Asahi. Lion is also buying New Belgium Brewing, while BridgePort was a casualty of the competitive market. Now that Sexton in joining forces with his old brand again, however, I wanted to find out why—and hear his thoughts on the chaos that is beer in 2019. This week on the program, I play an extended interview with Janice McDonald, Gourmet Traveller Wine Magazine's 2018 Winemaker of the Year.Janice is chief winemaker at Burch Family Wines in Western Australia, where she oversees the Howard Park and Mad Fish wine brands using grapes sourced from vineyards in the Margaret River, Mt Barker and Great Southern regions.Prior to that, she ran her own Margaret River wine label Stella Bella to great acclaim, together with her partner Stuart Pym.But we're not just talking about wine today, because Janice has been making beer for just as long as she's been making wine.She worked as a brewer at Australia's original craft brewing company, Matilda Bay, in the 1980s, and then at Little Creatures in 2000, its first year of operation.
