From Christchurch to Australia: Chef Amber Doig on New York Humility, and Mexican Food Done Right

Straight To The Source

In this episode, Tawnya Bahr talks with Amber Doig, an impressive chef and quiet achiever about ego, culinary instinct, seaweed, and why attitude will always beat talent. Amber Doig left Christchurch at 17 for Australia. Twenty-something years later, she's worked alongside Alex Stupack, Chef and Co-Owner of the Empellón restaurant group based in New York City, and is now quietly reshaping how Sydney eats Mexican food. This isn't a rags-to-riches story. It's a story about showing up, getting humbled in a New York kitchen, and realising that where you're from: your mum's single-parent cooking, your Māori heritage, your Pacific roots, is exactly what makes your food worth eating. What You'll Hear in This Episode Food as family Amber grew up surrounded by professional cooking: her mother trained as a chef as a teenager, cooked through her pregnancy, and had Amber in restaurant kitchens by the age of 10, what she calls "young work experience, AKA free labour" Rejected but undeterred When Christchurch's hospitality school turned her away over English and Maths requirements, Amber packed up and moved to Sydney at 17 to start her apprenticeship on her own terms Learning the trade in Sydney From a Rozelle cafe under head chef Christopher Mitchell via the Hospitality Training Network, to six-plus years with mentor Vanessa Martin at Il Piave, Rozelle, the years that built her foundation The New York epiphany A New Year's Eve ball drop in 2010 became a life-changing encounter with Mexican cuisine at Empellón. Five years later, she went back, this time to work Training under Alex Stupak Two years cooking across multiple Empellón concepts, including a James Beard event for the launch of Stupak's taco cookbook and ringside seats as Albert Adrià's team cooked at the Push Project dinner collaboration A lesson in humility Why New York was a wake-up call for her ego, and how working alongside elite chefs from around the world completely redefined her understanding of speed, precision, and culinary knowledge Returning to Sydney with purpose Coming home armed with new techniques, bold flavours, and a fire to show Sydneysiders the real depth and complexity of Mexican cuisine Mexican food beyond Old El Paso Why Amber sees her role as partly educational: the origin story of tacos, mole, Oaxaca cheese, tomatillos, and the fact that Mexico gave the world tomatoes, chillies, and corn Sourcing the unsourceable The challenge of tracking down Mexican ingredients in Sydney's early days, and how the scene has since transformed with local growers and specialist importers now meeting the demand Seaweed as the next frontier Her current obsession: sea lettuce from Rocky Point Aquaculture, dehydrated for salads, blitzed into powders, and made into furikake-style seasonings Pacific roots on the plate A ceviche-inspired ikamata dish drawing on Māori and Pacific culinary traditions, snapper, coconut, and sumac in equal parts nostalgia and innovation Almost a decade at Applejack Her role at Butler, her involvement across new openings, and working with Director of Culinary Patrick Friesen on menu development across 13 venues The Opera Bar, reimagined How Applejack Hospitality is bringing locals back alongside tourists: Basa Falafel, Vietnamese banh mi, broken rice, Sydney Rock oysters with Fermentalist Habanero Hot Sauce, and a genuine commitment to local producers Follow Amber Doig Instagram: https://www.instagram.com/amber_doig_/ About Straight to the Source Straight To The Source brings you closer to the chefs, producers, growers and makers across the entire food chain, the people shaping where food is headed and why it matters. Firsts by Kwame Slusher There are some firsts that not everyone shares, like going to an almost abandoned kafeneio in Marrickville, or being a chopper pilot. Sometimes, we just need a little adrenaline rush and a little courage to step outside ourselves and see what surprises await. Produced by: Kwame Slusher Dobrinja by Dan Semo For some, home is filled with laughter; for others, it brings tears, or memories of the people who shaped us. But for Dan, returning to his childhood home after 30 years, it felt distant and unrecognisable, its history revealed only in fragments. “Room tour, old stories, fresh raspberries …  there was no blood, only a small mark ect straight to the heart.” Produced by: Dan Semo for Audio Flux Circuit 04. The First Test by Phoebe Steley We often imagine high school girls’ drama as something straight out of Mean Girls: petty, gossipy, and a little vengeful. Sometimes, we expect resolutions to look like the movies, too: tearful confessions, heartfelt apologies, maybe even a closure. In this story, Charlotte and Izzy show us how conflict can be very different and how it brought them closer. Often, the other person values the friendship just as much as you do… Produced by: Phoebe Steley I am the first by M. Cristina Marras Marble stairs echo. Voices fall silent. A great hall looming over. The family stood in rows of chairs, uneasy, the girl advanced as her world and their slowly widening. “I cannot tell them that it's okay, that they are legit, that they do not have to hide behind. I am the first person in my family to be awarded a university degree.” Produced by: Cristina Marras for Audio Flux. Meet me at the punchline by Ramon Briant The recipe for a good laugh is a good punchline. The question is: how can you make your punchline punching when it is in another language? In this story, a successful first attempt to crack a joke in Spanish. Note: This won’t make you a foreign-language punchline master, but you’ll get a few dad jokes - just as worthy for a laugh. “We want to pay proper homage to the ten years of people that have come and made this their home.”When Wildflower co-founder and visionary Topher Boehm announced he was to close the Marrickville venue the brewers and blenders had called home for a decade, it didn't just send ripples through the beer world – the story was picked up by mainstream media too.Perhaps that's only to be expected: in terms of impact made per litre of beer sold, there can be few operations anywhere on the planet that would come close to this magical corner of the Australian beer world. That impact can be measured by the quality and sheer delightfulness of their many releases, the transformative nature of their Marrickville base, the team's advocacy for other producers and growers, as well as for better ways of producing and growing, and in the generous manner in which they would share their experiences, knowledge and learnings. As soon as we got word Wildflower was to close at the end of May – at least for now, and in its current form – there was no question we'd invite him back onto the show. So grab a glass – or bottle – of your favourite mixed-culture beer and settle in as Topher tells us what led him here, how he thinks Wildflower might evolve, and shares stories and reflections from the past decade-plus.It's our longest episode to date – which won't surprise anyone who knows our guest – but we're sure you won't be calling stumps early. Before we get to Topher, James and Will discuss the impending opening of a venue by an operation with similarities to Wildflower, the ongoing rise of non-alc beers, the arrival in the Crafty directory of Melbourne bars Rose Island and mates., plus the opening of entries for the 2026 Australian International Beer Awards, and the latest events and giveaways for our Crafty Cabal beer club members. Please like, subscribe and tell your beer-loving mates if you enjoy the show too!Start of segments: 16:18 – Topher Boehm Part 1 54:04 – The High Country Hop 2026 Preview 1 59:31 – Topher Boehm Part 2To find out more about featuring on The Crafty Pint Podcast or otherwise partnering with The Crafty Pint, contact craig@craftypint.com.

From their early days tearing up Sydney's underground scene to their lasting impact on alternative and skate culture, Ray shares stories from the road, reflections on identity and art, and the resilience it takes to stay true to your craft for over four decades. We talk about the band's bold decision to bring Tim Rogers on as lead vocalist, life lessons learned along the way, and why Hard-Ons' music has always been a perfect match for skateboarding and DIY culture. Recorded on location at their Marrickville studio, Ray told me, "This will be the last podcast I ever do." There's a fair bit about Michelle Brasier's life that doesn't seem that funny. She lost her Dad, then her brother, then was told she had a 97% chance of her own life being cut short by cancer too. Yet she's still finding humour, choosing optimism and singing just about any chance she gets. And like, she's a very funny and talented comedian (and writer, and actor) - so yeah, there's still plenty of laughs still around. In this very special live episode, recorded at the Factory Theatre in Marrickville, celebrating the launch of Michelle's memoir 'My Brother’s Ashes Are In A Sandwich Bag' (named one of Apple’s Best Books of 2024 and first in the list of Audible’s Top Ten Memoirs of the year 2024), Michelle discusses how she lives her life and chooses to see the world, her creative practice, and honoring people who aren't there anymore, even if they're past versions of yourself. Also some very raunchy teenage cast parties. He employs a belt sander to disrupt the surface after painting, allowing him to push and pull layers, creating unexpected textures and depth. Thanks for talking to us, Justin, we look forward to watching your career flourish.

In this episode of Michael Yardney Podcast I'm joined by Brett Warren to challenge a common belief many beginning property investors hold: that those who bought into the market 20 years ago had it easy.   It's a complaint I hear often—‘If only I had bought back then, property was so affordable.'   But what if we told you that investing in property has never been easy? The investors who succeeded weren't simply lucky—they were those who stayed the course through thick and thin.  We'll also share the story of Joseph, one of our clients who bought a 2 bedroom apartment in Marrickville, Sydney, back in 2008 and paid $280,000 for his property, which is now valued at nearly $1 million.     Takeaways        Investing in property has always been challenging, regardless of the era.        Long-term thinking is crucial for successful property investment.        Emotional resilience helps investors navigate market fluctuations.        A strategic plan is essential for achieving investment goals.        Quality assets should be prioritised over the quantity of properties owned.        Market cycles are inevitable; understanding them is critical to success.        Investors should focus on fundamentals rather than short-term data.        Education and self-improvement are vital for financial success.        Networking with experienced investors can provide valuable insights.        Patience and a long-term vision are necessary for wealth creation.   Chapters 04:39 Long-Term Focus and Patience in Investing 07:40 Emotional Resilience in Property Investment 10:28 The Importance of a Strategic Plan 13:31 Quality Over Quantity in Property Assets 16:47 Understanding Market Cycles and Trends 19:30 Navigating Interest Rates and Economic Factors 22:46 The Window of Opportunity in Property Investment 24:45 The Importance of Reading for Wealth   Links and Resources:   Michael Yardney   Get the team at Metropole to help build your personal Strategic Property Plan Click here and have a chat with us  Get a bundle of free reports and eBooks – www.PodcastBonus.com.au    Also, please subscribe to my new podcast Demographics Decoded with Simon Kuestenmacher – just look for  Demographics Decoded wherever you are listening to this podcast and subscribe so each week we can unveil the trends shaping your future.  Shownotes plus more here: The Myth of ‘Easy' Property Wealth – What Investors Need to Know, with Brett Warren Shownotes plus more here: The Myth of ‘Easy' Property Wealth – What Investors Need to Know, with Brett Warren

Finally we end with a new mini segment “TCB Tries” as we try things around Sydney and this week we start with a review of Chebbo's new store in Marrickville. Our game this week is “The Tower” as we once again divide into teams with the familiar Migs and Ro vs Kush and Sen. Simple game as each team has a rule in mind and it's up to the other team to guess things within the rule to ultimately guess the rule in the end. First team to guess the rule wins.'We finish with “Agree to Disagree,” a segment where we each have contentious opinions and see if the boys agree with us or not (we bought brand new paddles for this). Few red hot opinions in this edition as Ro froths westernised Asian food, Migs defends Sydney nightlife, Sen glazes Big 4 graduates before Kush fights for his life to prove Sydney has the best coffee.___________________________________________________________FULL PODCAST EPISODES
