Elaine “Foodbod” Boddy presents the sixth episode of the Foodbod Pod in which she and David Treadway visit White Lake Cheese to meet farmer and award-winning artisan cheesemaker, Roger Longman. Roger discusses his journey into cheesemaking and guides us through the process from the milk and other ingredients to the finished cheeses and describes the range and variety he produces on his farm in Somerset. Returning from a career in engineering, Roger took over the family farm and built on its origins as a small Cheddar producer to create White Lake Cheese, developing it into one of the UK's most respected artisanal cheese producers that has gathered an impressive number of prizes at the World Cheese Awards, several Supreme Champion medals at The Bath & West Cheese Awards as well as a number of coveted Great Taste awards. White Lake produces a wide range of hand-made cheeses from soft to hard, including sheep's cheese, cow's cheese and goat's cheese using the milk from Roger's own herd of over 700 goats. From Little She to Driftwood, Solstice to Rachel Reserva, English Pecorino to Fetish, Roger shows Elaine how the different cheeses are made and matured and describes the processes and treatments required for each kind of cheese and how flavour and rind is developed. I know that I don't need to remind you of the gravity of the situation we are facing at present with this virus. However, I think that as sheepdog enthusiasts, we are very lucky in that at least we can escape from the news into our own dog world for a while.Back in 1999, I remember being at the International and seeing Aled win Supreme Champion with Roy in Trawsgoed. In 2000 I saw him win the Supreme again in Armathwaite, but with Bob. (I was there this time myself, as a member of the Irish team!) Those were tremendous achievements and as we know he would go on later to add two more Supremes and two World Trials to the list. For me, I think the really interesting achievement was how he came back after the 2001 gap to win the very first World Trial in Bala in 2002.So it was great to get talking with Aled Owen and find out what he did 2001. How did he retain his focus or did he set new goals to get through the year? I know that when I got out of the habit of trialing that I lost my focus and I left sheepdogs in 2001. First up, we hear from Nourish3d – the cutting-edge company that wowed the Future Food Awards judges enough to be unanimously voted Supreme Champion. Melissa Snover explains the science behind the world's first truly personalised 3D printing daily nutrition stack, plus she's brought in a sample that has been specifically tailored for Sue's needs. Once Sue has had her vitamin boost, she can't wait to introduce the next guest. Jason Hirst from Evogro has been impressing some of the country's top chefs with his plant growing system, which enables the production of perfect, delicious herbs and salad leaves right there in the kitchen. It's not long before the team are clamouring for an Evogro of their own… Finally, we get a glimpse of tomorrow's talent with a visit from Bianca Tia Mesuria, who met some pretty impressive standards in order to win the prestigious Julia Child Scholarship with Le Cordon Bleu training schools. A cheeky little mid week bonus episode this week from the lovely Jane and Dave who left the NHS and the MET Police to show hospitality makes a great choice of career change... So, have you heard the one about the nurse, the police officer and the award-winning pies? You’re about to. Dave and Jane’s journey to what they now call ‘Pie Land’ was not conventional. It began when they bought a convenience store in Worcester, thinking it would be a nice retirement project after busy careers in the Met and NHS. But with 600 customers a day, and a hungry demand for Dave’s pork rolls and Jane’s chocolate Tiffin, retirement was put on hold. And a good thing too, because without that foundation, Hampshire would not be enjoying what is a growing selection of delicious pies – from steak and kidney to gluten-free egg, bacon and chorizo, which earned the couple the accolade of ‘Supreme Champion’ in the 2019 Great Hampshire Sausage and Pie Competition. Not bad for an operation that began, and has stayed, in the cellar of their home in South Sea. And that’s where I join them, at the end of a busy week producing 1000 pies….

A vegan pie picked up the Supreme Champion gong at the British Pie Awards. The curried sweet potato and butternut squash pie was praised as "outstanding" and "well-balanced" by judges as it beat nearly 900 other entrants to win the prize. It is the first time in the event's 11-year history that a vegan pie has won the accolade – in a sign of the times, it's actually the first year the competition included a dedicated Vegan Pie Class which received the second most entries at 68 pies.The pie was submitted by a butcher, Jon Thorner in Somerset and Gary chats to John Emery, the man behind the curried sweet potato and butternut squash pie which has earned Jon Thorner's the greatest accolade in the PIE world. Due to demand from customers, John Emery created vegetarian options and just recently decided to branch out and create a vegan pie, in an effort to make their pies available for everyone.http://www.jonthorners.co.uk
Dane Hopkins is the Dairy Director at Lynher Dairies, the lauded cheese producer in West England, Cornwall. Lynher Dairies makes the cheese that was Supreme Champion at the World Cheese Awards in 2017, an alpine-style cheese called Kern. Another cheese they make is Cornish Yarg (wrapped in nettle leaves!!), which is also a multiple award-winning product and is a beloved representation of their special corner of the world. In the Great Taste Awards last year, a yogurt from a small British dairy beat over 10,000 competitors to win the Supreme Champion title. This surprised many, not least because it was a simple, plain, 'Greek-style' yogurt.This type of fermented milk product, often strained to remove whey, is a relative newcomer in the UK - but is on the rise. In fact, Greek and Greek-style yogurt is the fastest growing sector of the UK yogurt market. It has also been at the centre of a High Court battle, an American health craze and a multi-billion dollar yogurt war.In this edition of the Food Programme, Sheila Dillon discovers the secrets of making this thick, creamy... and delicious cultured food. It was originally made in this country by immigrants such as the founders of Tim's Dairy, now run by four brothers whose Greek Cypriot uncle started making yogurt in a small London workshop in 1949, and now make around five to ten thousand litres of Greek-style yogurt a day.Collete and David Strachan are dairy farmers, but after losing cows (even though none were infected) during BSE and with the price of milk spiralling ever downward, the future of their Suffolk farm was in question. Ten years ago they started to experiment with yogurt-making, and along the way, as Sheila discovers, they have been joined by two of their children James and Katherine- and it's their plain Greek-style yogurt made at Marybelle Dairy that has just won the Supreme Champion award.So what is 'Greek' yogurt?
