Gingerbread 75g butter + extra for buttering 100g dark muscovado sugar 100g golden syrup 35g crystallized ginger roughly chopped 50ml whole milk 1 egg 2 teaspoons ground ginger 150g self raising flour Icing sugar to dustLightly butter a cake tin and dust with flour, shaking off the excess. Set oven to 180°c. Place butter, sugar and syrup in a pan and gently cook until the sugar has dissolved. Cool for 5 minutes. Blend the egg, crystallized ginger and milk together. Whisk into the butter mixture and then mix in the flour and ground ginger to a smooth batter. Pour into the tin and bake for about 40 minutes or until an inserted skewer comes out clean. Cool in the tin for 10 minutes then turn onto a plate and dust with icing sugar.Candied Tangerines 4 tangerines 50g castor sugar Pinch cinnamonPeel the tangerines and slice in half. Heat the sugar in a large hot pan and cook until caramelized. Add 50ml of hot water and cook to thick syrup. Add the cinnamon and then the tangerines cut side down. Cook until candied and allow to sit in the pan to cool. You should end up with a caramelized sauce.Date molasses yoghurt 250ml Greek style yoghurt 1 tablespoon date molasses 1 teaspoon vanilla extract Mix the vanilla into the yoghurt and then swirl in the date molasses. Slice the cake, add some of the candied tangerines and cooking juices and serve with the yoghurt.

Recently I read an article from 2020 which noted that colo-rectal cancer diagnosis in young adults was on the increase and has been for some time. So, in this episode we are taking a deeper dive into bowel health, from discussing the health of our cells right through to the importance of bowel screening and what is involved in that. My guest is Thanasie Kaldanis, who has been a qualified nurse for 20 years. He initially worked in acute and emergency settings and for the last 12 years he has worked as a cancer data registrar, with National Cancer Registry Ireland. Thanasie is also the Health 7 Wellbeing Officer with local GAA Club Cornafean in Cavan. He is passionate about bringing people together to create a healthy and thriving community for everyone, In addition to bowel health, we discuss the importance of younger generations attitude to food, challenges to changing habits and how we can encourage a healthier lifestyle at community level. Smokey marinated eggplant with yoghurt and tahini dressing Cook time: 20 minutes Prep time: 20 minutes Serves: 4-6 2 eggplants, sliced length ways into 1cm thick slices 1 cup oregano leaves 2 cups coriander leaves 1/2 tsp smoked paprika 3 cloves garlic, peeled Juice of one lemon Flaky salt 1 fresh chilli de-seeded 3 tbsp olive oil Garlic yoghurt dressing 150gm plain yoghurt 2 tsp tahini paste 2 cloves garlic, crushed 2 tbsp olive oil Sea salt Brush the sliced eggplant with a little bit of oil before grilling over a hot BBQ or Engel fire until well coloured and tender. Place the rest of the ingredients into a blender and blitz until smooth. Spoon the marinade over the top of the eggplant and mix through until all the eggplant slices are covered. Set aside and allow to marinate for at least 30 minutes before serving. To make up the dressing simply, combine the yoghurt, tahini and garlic in a bowl, slowly whisk in the olive oil and season with a pinch of salt. It occasionally happens that some liquid sits on top of yoghurt in the container, and many people prefer spilling out the liquid before eating the yoghurt. At first glance, this would appear to be forbidden on Shabbat, as it entails removing Pesolet (an undesirable substance) from Ochel (the desirable substance). In truth, however, many Halachic authorities permit pouring out the liquid from the top of the yoghurt. Hacham Bension Abba Shaul (Israel, 1923-1998) writes that when one pours out the liquid, we may consider him as removing Ochel from Pesolet, and not Pesolet from Ochel. By tipping the container in such a way that the yoghurt remains, one essentially removes the yoghurt from the liquid, and thus it is permissible. Hacham Ovadia Yosef, in Hazon Ovadia – Shabbat (vol. 4, p. 229, in the annotation; listen to audio recording for precise citation), advances a different argument, claiming that the liquid and yoghurt are not actually mixed together, and thus removing the liquid cannot be considered "separating." Since the liquid sits on top of the yoghurt, and is not mixed together with it, removing the liquid would not constitute Borer and is thus permissible on Shabbat. This would apply as well to one who wishes to pour out the liquid from a can of olives or pickles. Here, too, one could argue that the person is separating the olives from the liquid, and not the liquid from the olives, and, furthermore, the liquid and olives are not actually mixed together. Hence, Hacham Ovadia Yosef ruled (in Hazon Ovadia, ibid., and in Yalkut Yosef, in the laws of Borer) that it is permissible to pour the liquid out of a can of olives or pickles on Shabbat. He noted that the work Shemirat Shabbat Ke'hilchatah (by Rabbi Yehoshua Neubert, contemporary) forbids pouring the liquid out of a can in such a case, but in the 5770 (2010) edition of the work the author retracted this view and ruled leniently. This is, indeed, the Halacha, and one may pour the liquid out from a yoghurt container or can of olives and the like on Shabbat. Summary: If there is liquid sitting on top of a yoghurt container, one may pour it out so he is left with only the yoghurt. Similarly, it is permissible to pour the liquid out from a can of olives or pickles.

Mike van de Elzen shares tips to make desserts go better, and be easier to serve on the big day (Christmas!), plus shares his favourite sweet in the world - cheesecake. Choose desserts that can be prepared and easily stored for the day These can include cheesecakes, panna cotta, classic pavlova. tiramisu, brandy christmas cake and brandy ice-cream or the old classic trifle. Dessert that you can freeze can be handy. These could include cookies, brownies or Christmas mince pies. Texture's are important when serving multiple desserts. Try not to have everything soft. Break it up with a crunchy crumble, broken biscuits and nuts. Lighten the heavy creams up with fresh fruit. Strawberries, blackberries and boysenberries are in season and are perfect fat cutters. Yoghurt Cheesecake with blackberries Prep time: 30 minutes Serves: 6 250gm cream cheese 200gm plain yoghurt 4 sheets gelatine 1 vanilla pod 2 Tbsp honey 1 packet plain Digestive biscuits, crushed 1 can blackberries 2 Tbsp brown sugar 2 Tbsp icing sugar 1 punnet fresh blackberries Place the gelatine leaves in a bowl of cold water to soften for 5 minutes. Drain the water then pour 1/2 cup boiling water over the sheets and stir. Put the cream cheese, yoghurt and honey in the bowl of a food processor. Scrape in the seeds from the vanilla pod and blitz until all combined. Add half of the gelatine mix and blitz again. Crush the biscuits until crumbly but not too fine. Divide between 6 jars (about 300ml capacity) to a depth of about 2cm. Spoon the cheesecake mix over the top of the biscuit base. Clean the processor bowl then put the tin of blackberries in with the brown sugar. Blitz until smooth, then pass through a sieve to remove the seeds. Combine with the rest of the gelatine mix. Spoon this over the top of the cheesecake and refrigerate for about an hour or until set. Top the cheesecakes with some fresh blackberries and dust with icing sugar to serve. And I'm going to warn you up front - the research is mixed, and it really comes down to your personal response to dairy. That being said, non-organic dairy can be treated with extra hormones, which may influence our own, so it goes without saying that organic is preferable when possible. Strawberries Romanoff with whipped yoghurt and jam biscuitsStrawberries Romanoff 500g strawberries, green top removed and halved Juice and zest 1 orange Splash orange liqueur 2 teaspoons icing sugar Mix everything together and chill for a few hours giving the bowl an occasional toss. Whipped yoghurt 350ml double cream 175ml Greek style yoghurt 1 tablespoon honey 1 teaspoon vanilla paste or extract Whip the cream to soft peaks then whisk in the honey and vanilla. Fold in the yoghurt. Jam biscuits175g soft butter 160g castor sugar 2 egg yolks 225g plain flour 50g ground almonds ½ teaspoon baking powder Your choice of jams Beat the butter, sugar and yolks together with an electric whisk until pale and fluffy. Mix in the flour, almonds and baking powder to a dough. Line 2 baking trays with parchment paper. Set the oven to 150oc. Take a dessertspoon of the dough and roll into ball and place on baking tray a few centimetres apart. Press down and make a dent in the middle with your thumb - good to use damp hands for the rolling and denting. Spoon some jam into the dent. Bake for about 30 minutes or until golden and firm. Cool before serving.
