This dish magically transforms kūmara from side dish to star performer, and I can't get enough of it. Serves 2-4 Ingredients 2 orange kūmara, halved, skin on 2 tablespoons olive oil 1 tablespoon pomegranate molasses 1 teaspoon smoked paprika ½ teaspoon sea salt 4 tablespoons pumpkin seeds Small handful of mint & coriander ½ cup fresh pomegranate arils/seeds Yoghurt Dressing ½ cup Greek yoghurt 1 tablespoon tahini 1 tablespoon pomegranate molasses ½ teaspoon sea salt Method Heat oven to 180C. Line a tray with baking paper. Mix oil with pomegranate molasses and paprika and rub/brush all over the kūmara. Lay out on the prepared tray, sprinkle with salt and roast for 45 minutes or until soft and cooked through. Toss in the pumpkin seeds in the final 5-10 minutes and they will toast and puff up. To make the yoghurt dressing, whisk yoghurt with tahini, pomegranate molasses, and salts until combined. Serve the warm kūmara drizzled with yoghurt dressing and scattered with mint, toasted pumpkin seeds, and pomegranate seeds. Nici's note: Use pumpkin or cauliflower in place of kūmara if you like. Chili pickled vegetables Cook time: 5 minutes Prep time: 10 minutes Serves: 12 Pickled vegetables can include: Carrots, fennel, baby beetroot, radish, red onions, cucumbers or red cabbage 1 tbsp fennel seeds 1 tbsp coriander seeds 2 fresh chili, sliced 2 bay leaves 1 tsp mustard seeds 300 ml cider vinegar 250 ml water 1/4 cup sugar 1/2 tsp salt Jar and lid Firstly prepare the vegetables for pickling. Clean all the vegetables and cut in 1/2 or 1/4 or finely slice. Trying to make all the vegetable pieces roughly the same size. To make your pickle mixture, start by toasting your seeds in a pan until fragrant. Place the rest of the pickling mixture ingredients into a pot, adding seeds once toasted and heat until boiling. Remove the pickling mixture from the heat and carefully pour the hot mixture over the top of the vegetables and seal with a lid. (If pickling cucumbers or finely sliced veg allow mixture to cool first) Roasted beetroot & cummin hummus Cook time: 45 minutes Prep time: 10 minutes Serves: 6-8 2 cups chickpeas, soaked overnight in water 2 whole beetroot 1 tbsp cooking oil 2 tbsp tahini 1 tsp baking powder 11 tsp cummin powder Sea salt Pre-heat the oven to 180*c Individually wrap the beetroot in tin-foil, drizzle over a little oil and sprinkle over a touch of salt before wrapping. Place into the oven and cook for 30 minutes before testing. Test by inserting a small knife to see if the beetroot is cooked. Once cooked allow to cool before removing skin. While the beetroot is cooking, place the soaked chickpeas into a large pot, cover with cold water and add a touch of salt and the baking powder. Bring to the boil and cook until tender. Once cooked drain. Place the beetroot into a food processor and biltz until smooth. Add the chickpeas and biltz until smooth. Add the tahini, curry powder and seasalt to finish. Yoghurt flatbreads w coriander butter Cook time: 2 minutes Prep time: 10 Serves: 6-8 Flat breads 350g bread flour 2 tsp baking powder 350g natural yoghurt 1 tsp salt Coriander butter 200 gm unsalted-butter 1 cup fresh coriander, finely chopped 1/2 tsp sea salt 4 cloves garlic, peeled and crushed For the flat breads Combine all the bread ingredients together in a bowl and mix with a spoon, then use your hands to pat and bring everything together. Dust a clean work surface with flour, tip out the dough. Knead for a minute or so just to pull everything together, before leaving while you make the coriander butter. For the butter, Add to the butter and mix in the rest of the ingredients. Re-dust a clean surface with flour, divide the dough into small balls. Flatten with your hands, then using a rolling pin roll roughly 3mm thick. Either place dough into a griddle pan on a high heat or onto a tray in a very hot oven. I love strawberries but this early in the season they can lack flavour. My advice is to warm them up! Roast or grill or in a pan with some sugar and lemon juice and you'll find them a different berry altogether – jammy, sweet, and full of flavour. Ingredients: 2 cups strawberries, hulled and large ones halved or quartered 1 tablespoon brown or white sugar Juice from one orange 1 vanilla pod, halved and seeds scraped Yoghurt or cream to serve Handful of hazelnuts, toasted and chopped Method: Gently heat strawberries in a pan on the stove top or in the oven, with sugar, orange juice, and vanilla until they slump a little. Serve with yoghurt or cream and sprinkled with hazelnuts. Serving suggestions: Spooned over brioche toast or toasted croissant topped with fresh ricotta. In a bowl with quality vanilla ice cream, a lick of balsamic vinegar or grind of black pepper and crushed hazelnuts. Make or buy some crepes and fill them with roasted and cooled strawberries with chopped pistachios folded through Greek yoghurt or whipped cream. Recipe150ml double cream 150ml whole milk 1 teaspoon vanilla paste 3 leaves gelatine 125g castor sugar 350g Greek style yoghurt Soak the gelatine in cold water for 10 minutes. Place the cream, milk, vanilla and sugar in a pan and simmer until the sugar has dissolved. Squeeze the water from the gelatine and add to the mixture and remove from heat. Cool to room temperature and fold in the yoghurt. Pour into 4 glasses and set in the fridge for a few hours.Strawberry Jelly 200g strawberries chopped 50g castor sugar 100ml cider 2 leaves gelatine Soak the gelatine in cold water for 10 minutes. Place the strawberries,sugar and cider in a pan and simmer until the berries are soft. Blend to a smooth puree and add the gelatine leaves. Pass through a sieve. Brush a plastic container with oil and line with cling. Pour in the jelly mixture. Allow to set in the fridge for a few hours. Remove from container and cut into squares.250g strawberries, hulled and halved 1 teaspoon castor sugar Mix the strawberries and sugar well and leave for 10 minutes.

Bulgaria is famous for its yoghurt, a fermented milk food full of ‘good' bacteria that has kept hungry Bulgarians healthy for over 4000 years. Inspired by that, and a question from a CrowdScience listener in California USA, Marnie Chesterton and Caroline Steel are immersing themselves in Bulgarian culture with a programme about Bulgarian cultures, recorded at the 2025 Sofia Science Festival. So, are the ‘live' cultures in fermented foods actually alive by the time you eat them, and how can you tell? If you can eat the mould in blue cheese, can you eat the mould on cheese that isn't supposed to be mouldy? Is traditional food really better for you? And if you put a drop of vanilla into a litre of milk, how come it all tastes of vanilla? Marnie and Caroline are joined by a chemist who was a member of Sofia University's ‘Rapid Explosion Force', a food technologist with a PhD in sponge cakes and a Professor of molecular biology who says that we contain so much bacteria that we're only 10% human. With questions on food from around the world and from the audience in Sofia, Marnie and Caroline will be digesting the answers, as well as some local delicacies. It occasionally happens that some liquid sits on top of yoghurt in the container, and many people prefer spilling out the liquid before eating the yoghurt. At first glance, this would appear to be forbidden on Shabbat, as it entails removing Pesolet (an undesirable substance) from Ochel (the desirable substance). In truth, however, many Halachic authorities permit pouring out the liquid from the top of the yoghurt. Hacham Bension Abba Shaul (Israel, 1923-1998) writes that when one pours out the liquid, we may consider him as removing Ochel from Pesolet, and not Pesolet from Ochel. By tipping the container in such a way that the yoghurt remains, one essentially removes the yoghurt from the liquid, and thus it is permissible. Hacham Ovadia Yosef, in Hazon Ovadia – Shabbat (vol. 4, p. 229, in the annotation; listen to audio recording for precise citation), advances a different argument, claiming that the liquid and yoghurt are not actually mixed together, and thus removing the liquid cannot be considered "separating." Since the liquid sits on top of the yoghurt, and is not mixed together with it, removing the liquid would not constitute Borer and is thus permissible on Shabbat. This would apply as well to one who wishes to pour out the liquid from a can of olives or pickles. Here, too, one could argue that the person is separating the olives from the liquid, and not the liquid from the olives, and, furthermore, the liquid and olives are not actually mixed together. Hence, Hacham Ovadia Yosef ruled (in Hazon Ovadia, ibid., and in Yalkut Yosef, in the laws of Borer) that it is permissible to pour the liquid out of a can of olives or pickles on Shabbat. He noted that the work Shemirat Shabbat Ke'hilchatah (by Rabbi Yehoshua Neubert, contemporary) forbids pouring the liquid out of a can in such a case, but in the 5770 (2010) edition of the work the author retracted this view and ruled leniently. This is, indeed, the Halacha, and one may pour the liquid out from a yoghurt container or can of olives and the like on Shabbat. Summary: If there is liquid sitting on top of a yoghurt container, one may pour it out so he is left with only the yoghurt. Similarly, it is permissible to pour the liquid out from a can of olives or pickles.
