Yukon Gold gives a creamy, buttery, texture while Russets give a fluffier, lighter texture. Avoid waxy, low starch potatoes like red, new and fingerlings – they hold their shape after boiling and don’t absorb butter, cream, etc. well and that can result in a gluey texture.” Ingredients 4-5 pounds potatoes – Russets or Yukon Gold, peeled & cut into 2” chunks 8 oz regular cream cheese, cut up and softened 1 cup regular sour cream Butter Salt and pepper Instructions Place potatoes in large pot, cover with cold water an inch above the top. Add 2 teaspoons salt. Bring to a boil, reduce to low, cover to keep a simmer until done, about 10-15 minutes. Drain and put back in pan on low. Make sure potatoes are pretty dry to make them mash up without getting gluey. Mash while still hot again so they don’t get gluey. Add cream cheese and sour cream and blend well. Add salt and pepper. Pour into buttered casserole, cool, cover and refrigerate up to 2 days. Bring to room temperature and heat in 350 degree oven, tented with foil, until hot, about 40 minutes or so. Be my delight, my glory, my treasure, my all! ***** RECIPES FROM RITA: EGGS IN PURGATORY (Recipe adapted slightly from Pina Bresciani) Ingredients Olive oil 1/2 of a small onion, about 1/4 cup chopped real fine 2 garlic cloves minced – a good 2 teaspoons 14 oz can peeled plum tomatoes ¼ teaspoon chili flakes 1 tablespoon torn basil or 1 teaspoon or so dried 4 eggs A good cup Parmesan, grated and divided Salt and pepper to taste Instructions Film a 10-12” skillet with olive oil over medium heat. Once the oil is shimmering, add the onion and sauté until soft but not fully cooked, about 1-2 minutes. Add garlic and chili flakes and continue to sauté until garlic is cooked through, another 1 minute. While onion and garlic are sautéing, pour the tomatoes into a bowl and mash them up with a fork. Once onion and garlic are finished cooking, add canned tomatoes to the skillet. Also rinse out the can of tomatoes, and the bowl where you mashed the tomatoes. Add this tomato water to the sauce (about ½ cup). Season with salt and pepper to taste. Cook the tomato sauce until it has thickened, 10-15 minutes. Add torn basil to sauce and stir. Crack an egg into a small bowl. Form a small well in the sauce and pour the egg into the well. Do this 4 times. Sprinkle the eggs with about half the cheese.Cook the eggs in the tomato sauce, partially covered, until the whites are set, but the yolks still runny, about 5 minutes. Or as firm as you like. Amen. ***** RECIPES FROM RITA: STUFFED POPPERS Baked Jalapeño Poppers Ingredients 1 pound jalapenos, halved and seeded (wear gloves!) 8 oz. cream cheese, softened 2 cups shredded Mexican blend cheese 6 pieces bacon, cooked and crumbled Bread crumb coating: Mix together: 1/2 teaspoon each salt and garlic powder 1 cup or so bread crumbs Instructions Preheat oven to 325. Mix cheeses and bacon together. Stuff into jalapeno halves. Sprinkle with bread crumbs. Bake 20-35 minutes. ***** Sausage Stuffed Jalapeño Poppers Ingredients 1 pound ground pork sausage 1 (8 ounce) package cream cheese, softened 1 cup shredded Parmesan cheese 1 pound large fresh jalapeño peppers, halved lengthwise and seeded Instructions Preheat the oven to 425 degrees. Cook sausage.Mix sausage, cream cheese, and Parmesan cheese together in a large bowl.Spoon about 1 tablespoon of sausage mixture into each jalapeño half; arrange stuffed halves in baking dishes.Bake until bubbly and lightly browned, about 20 minutes. IngredientsOlive oil1 pound or so boneless, skinless chicken, cut into 1” piecesSalt and pepper1 bell pepper, diced1 medium onion (not sweet), diced (about 1-1/2 cups)2 nice ribs celery, dicedMinced garlic to taste — start with a big clove, minced (generous teaspoon)1-1/2 teaspoons dried basil4 cups or so chicken broth1/2 cup rice1 can, 14.5 oz., diced tomatoesAs much okra as you like, slicedFresh parsley, minced (optional) Instructions: Pour a little oil in bottom of large pot over medium heat.Season chicken with salt and pepper.Cook chicken in oil until it turns opaque. It won’t be done.Add bell pepper, onion, celery, garlic and basil. Cook until onion starts to soften, about 3 minutes or so.Pour in broth, rice and tomatoes. Give it a couple of stirs.Bring to boil, then lower to gentle boil, cover, and cook until chicken and rice are done, about 20 minutes. Cook it longer if you want.Instructions okraFilm a pan with olive oil or add bit of butter over medium heat.Stir in okra and cook to your liking. Okra gets a little sticky as it cooks — some folks call it slimy, but that’s a good thing. If you were to add the okra to the soup, it helps thicken it.Anyway, I cook it separately since not everyone in my family likes okra.Add to each bowl of soup before serving. Eat okra rawSlice stem off, cut lengthwise and sprinkle with salt and pepper. In a bowl, combine wine and saffron.Season chicken with salt and pepper. In a large Dutch oven, heat oil over medium-high. Addchicken, skin side down; cook until browned, 6 to 7 minutes. Flip and cook 2 minutes more; transfer to a plate.Add onion and garlic; cook until translucent, 4 minutes. Add tomato and cook, stirring often, until softened, about 5 minutes. Stir in wine-saffron mixture, bay leaves, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cook until wine is nearly evaporated, 5 to 8 minutes.Stir in rice, broth, and olives. Nestle chicken into rice, skin side up. Bring to a simmer, cover, and transfer to oven. Cook until liquid is absorbed and chicken is cooked through, 25 to 30 minutes. Beat butter and both sugars until well mixed. Blend in egg. Separately, combine flour, baking powder, baking soda, and 1/2 teaspoon cinnamon. Stir the flour mixture into the creamed mixture alternately with buttermilk. Spread into baking pan. Streusel Mix brown sugar, walnuts, and cinnamon. Sprinkle over batter. Cover, and refrigerate overnight. Preheat oven to 350. Bake 35 to 45 minutes or until a toothpick inserted in the center comes out clean. Don’t overbake. Start checking at 35 minutes. Amen. ***** RECIPES FROM RITA: LEMON BARBECUED MINI MEATLOAVES From friend and colleague, Carol Tabone who first made this in a cooking class. Ingredients and Instructions meatloavesMix together very gently:1-1/2 pounds ground chuck1/2 cup of toasted bread crumbs1/4 cup lemon juice1/4 to 1/3 cup onion, minced1 large egg, beaten2 teaspoons salt Ingredients and instructions Barbecue SauceWhisk together:2 cups catsup1 cup brown sugar, packed2 teaspoons dry mustard1/2 teaspoon allspice1/2 teaspoon ground cloves 6 thin slices lemon to put on top of loaves (optional but nice) Instructions for RoastingPreheat oven to 350.Shape meatloaf mixture into 6 loaves, like mini footballs. Place on sprayed baking sheet.Bake 15 minutes, then remove from oven.Lay lemon slices on top of each loaf if using, then cover each generously.You’ll use about half the sauce.Put back in oven and continue to bake until done – thermometer will register 155-160.
