Amen. ***** RECIPES FROM RITA: ZUCCHINI BREAD Double chocolate zucchini bread/cake Ingredients:1 -1/2 cups shredded zucchini1 cup all purpose flour – I use King Arthur unbleached1/2 cup unsweetened cocoa powder, sifted1 teaspoon baking soda1/4 teaspoon baking powder1/4 teaspoon salt1/2 to 3/4 teaspoon cinnamon1/4 teaspoon allspice1/2 cup canola oil1/2 cup sugar1/2 cup light brown sugar2 large eggs1 teaspoon vanilla3/4 cup semi- sweet chocolate chips Instructions:Preheat oven to 350. Spray 9 x 5 loaf pan. Set aside shredded zucchini. Whisk together flour, cocoa, baking soda, baking powder, salt, cinnamon, and allspice. Set aside. Beat oil, sugars, eggs, and vanilla until well blended and fold in zucchini. Add flour mixture, mixing just until combined. Fold in chips. Bake until toothpick inserted in center comes out clean, about 55 to 65 minutes. Place on wire rack to cool 10 minutes, then remove and finish cooling. Large Batch moist and marvelous zucchini bread with Chai essence Ingredients:3 cups grated unpeeled zucchini (squeeze moisture out before measuring and pack zucchini firmly into measuring cups)3 cups sugar1-1/2 cups vegetable oil – I used canola4 large eggs2 teaspoons vanilla3-1/4 cups all purpose flour1 teaspoon cinnamon2-3 teaspoons dry Chai tea blend – 2 will give a mild taste; 3 a more robust taste2 teaspoons baking powder1 teaspoon baking soda1/2 teaspoon salt1-1/4 cups chopped nuts – optional – I used toasted pecans InstructionsPreheat oven to 350.Spray 2 large loaf or 3 regular loaf pans.Mix zucchini, sugar, oil, eggs and vanilla. Beat on medium speed 2 minutes.Combine flour, cinnamon, Chai blend, baking powder, baking soda, salt and nuts together. Add to zucchini mixture and blend well.Pour into prepared pans. Bake on middle rack 45 minutes to one hour or until done. A toothpick inserted deep into center will come out clean. My 2 large loaf pans took 55 minutes to bake. Tips:Ball bat sized zucchini works great If you grow zucchini, you know it can go from slender to ball bat size seemingly overnight. Overgrown zucchini has good flavor and shreds up just fine. Can you peel zucchini? I don’t, but Cheryl Bullis, a professional baker from Clermont County, does peel her zucchini before measuring. Squeeze hard to get moisture out. Zucchini is notorious for a high moisture content which can make batter too runny. Just pack a jar with fresh baby cherry tomatoes, pour over a quick pickling brine, and let the fridge do the rest. Afer 24 hours, you’ll have crisp, tangy bites perfect for sandwiches, salads, charcuterie boards, or anything else you like. Ingredients3 cups baby cherry or grape tomatoes2 cloves garlic, halved1/4 teaspoon peppercorns2 sprigs fresh basil3/4 cup water3/4 cup white wine vinegar1 1/2 teaspoons kosher saltA little sugar – start with 1 teaspoon or honey and go up to 2-1/2 teaspoons1/8 teaspoon crushed red pepper InstructionsAdd tomatoes, garlic, peppercorns, and basil to 1-quart-size glass jar fitted with a lid.Combine water, vinegar, salt, sugar, and crushed red pepper in a small saucepan, and place over high heat. Cook, stirring o!en, until salt and sugar have fully dissolved. Remove from heat just before the mixture comes to a simmer.Pour hot brine over tomatoes and seal jar. Allow jar to cool to room temperature, then place in the refrigerator until completely chilled, at least 8 hours. Amen. ***** RECIPES FROM RITA: PESTO PORK TENDERLOIN Ingredients1-2 cloves garlic, minced2 tablespoons pine nuts or walnuts2 tablespoons softened butter2 cups basil leaves, packedPalmful fresh parsley (optional)1/2 cup Parmesan cheese1/4 cup Romano cheese (or use all Parmesan)Olive oilSalt and pepper InstructionsJust process everything but oil and seasonings until smooth. Add oil to your liking, starting with 1 tablespoon, then add salt and pepper.Thicker is better for the tenderloins. You can always add more oil later for regular pesto. Pesto stuffed pork tenderloin two waysMy friend, Mary Lee Olinger, an Anderson Township reader, shared the first recipe a while back. It has a delicious culinary history, starting with Mary Lee’s friend, Mary Ann Myers. Ingredients for each recipe1 pork tenderloin, about 2 pounds, trimmedPesto Garnish for each recipeRomano & or Parmesan cheese – gratedPine nuts (optional) InstructionsPreheat oven to 350 for both methods. Method #1: filling the tenderloinLay tenderloin on cutting board. Starting from the top, cut meat vertically not quite all the way through. What you want is a nice “trough” to fill.Spread tenderloin open a bit, then spoon pesto until it fills (and overflows a bit) cavity.Place, cut side up, in sprayed baking pan.Tie roast in three places to keep it together. Sprinkle cheese and nuts over roast. Method #2: filling the tenderloinLay tenderloin on cutting board. Starting on thinner end, take a sharp knife and slice horizontally almost all the way through. It will open up like a book. Pound out evenly.Spread pesto to within an inch of edges. Fold over the 2 short edges a little bit. This helps seal the roulade. Roll up, starting at long end. Place, seam side down, on sprayed baking pan. Smear some pesto on top. Roasting for bothBake until done (145 degrees) – in my oven it took 20-30 minutes. Don’t over cook this lean cut of meat, or it will be dry.Rest about 10 minutes, tented. Don’t stir.Add fruit, then sprinkle with extra sugar.Bake until top is golden and cobbler bubbles, about 40 to 50 minutes or so. To think my most enemies my best friends, for the brethren of Joseph could never have done him so much good with their love and favor as they did him with their malice and hatred. ***** RECIPES FROM RITA: EASY REFRIGERATOR DILL PICKLES For pickles, choose cucumbers with thinner skins, crisper flesh and smaller seed cavities. I would stay away from the big straight 8 type slicing cucumbers. They contain a lot of water and seeds, and may go soft in the brine. Ingredients:2 quart jars1-1/4 cups distilled white vinegar (5% acidity)3 tablespoons kosher salt1- 2 tablespoons sugar or substitute – I used 2 teaspoons sugar2 cups cold water2 pounds or so unpeeled pickling, Persian, English or your favorite smallish cucumbers, cut into halves or spears or thick slices – enough to fill 2 quart jars2 tablespoons coriander seeds6 large garlic cloves, peeled and halved1 teaspoon mustard seeds¼ teaspoon red pepper flakes – optional16 dill sprigs dill or 2 teaspoons dried dill weed (not seed) per jarOptional: a few slices colored bell pepper Instructions:Over low heat, combine vinegar, salt and sugar in saucepan. Whisk until salt and sugar are dissolved. Don’t let it boil, just warm enough to dissolve the salt and sugar.Whisk in cold water. Let cool to room temperature or refrigerate brine until ready to use.Put cucumbers and peppers, if using, into 2 quart jars.Dividing evenly, add coriander, garlic, mustard, red pepper flakes, dill, and brine into jars. If necessary, add a bit of cold water to the jars until brine covers cucumbers.Cover and refrigerate about 24 hours, then serve. Amen. ***** RECIPES FROM RITA: FALL-OFF-THE-BONE OVEN BAKED RIBS FOR DAD Recipe doubles or triples easily. IngredientsRibsAbout 2-1/2 pounds baby back pork ribs or your favorite ribsSalt and pepper or your favorite BBQ rub BBQ sauce1 tablespoon olive oil1/4 cup finely diced onion1/2 teaspoon ground cumin1/2 cup ketchup1 tablespoon hot chili sauce like Sriracha2 tablespoons light brown sugar or to taste1 tablespoon apple cider vinegarSalt and ground pepper, to taste InstructionsPreheat your oven to 275. Season ribs: If your ribs still have a thin membrane on the back, remove it. Generously season both sides of the ribs with salt and pepper. If using a spice rub, apply it evenly.Wrap very tightly with foil: Important so ribs don’t dry out during cooking. Place the ribs, meatiest-side down, in roasting pan. Cover tightly with aluminum foil. The ribs must be well-sealed to prevent drying out. If you’re doubling the recipe and don’t have a large enough pan, wrap the racks of ribs individually in tight foil packets and place them on the baking sheet. Bake: Bake for 2 ½ to 3 ½ hours or until meat easily falls from bones. Check after 2 hours. Ribs are ready when the meat is cooked through and very tender. It will not have gotten brown, so don’t worry. Mine took close to 3 hours.BBQ Sauce:Heat olive oil in pan over medium heat, then add onions and cook until soft. Don’t let them brown.Stir in cumin, ketchup, chili sauce, sugar and vinegar. Cook for a couple of minutes, season with salt and more of any one ingredient that you think it needs. Brush sauce onto ribs after baking: Generously brush both sides with barbecue sauce.Broil ribs: Broil on high ribs until sauce begins to caramelize, about 3 to 4 minutes. Ahead of next week's Royal Highland Show being held at Ingliston just outside Edinburgh, Rachel catches up with farmer Anna Mitchell, who is one of this year's vice presidents. This year's presidential team are representing Aberdeenshire and Anna tells Rachel what visitors can expect from the show.Mark is in Newport-on-Tay with author Dr Erin Farley whose most recent book, Lighthouse Lives, tells the stories of the last generation to work on manned lighthouses across Scotland. She tells Mark about the experiences of some of the keepers and their families who she recorded with for the book.Phil Sime and Morven Livingstone meet Allan MacKinnon of Highland Bird Control Services, to see how he's tackling the issues that gulls are causing at Raigmore Hospital in Inverness.Two volumes of Birds of America by renowned artist and ornithologist John James Audubon are currently on show to the public at the Royal College of Physicians and Surgeons of Glasgow. The College has owned the art treasures for two centuries, and Mark went to meet their heritage lead, Claire McDade to hear a bit about their origins and take a look at the impressive books.Rachel is in Ayrshire meeting some of the farmers involved in the women in dairy initiative.As Scotland fans descend on Boston, Massachusetts in their thousands, we hear about the different birds that the discerning football supporter might be able to spot during their stay in the city. Erin Kelly from conservation charity Mass Audubon tells Rachel a bit about Boston birdlife and where to see it.The Glasgow Tandem Club has members who are both vision impaired and sighted. They are based in Ballahouston Park in Glasgow and Rachel went along to meet some of the members and chatted to founder, Anne Fraser.Mark heads to Cullen to meet the founder of Blue Lighthouse surf club, which was set up to offer tangible support for the health and wellbeing of members of the emergency services and care workers.And in this week's Scotland Outdoors podcast, Mark visits the Taliesin Community Woodland in Dumfries and Galloway which is celebrating its 30th anniversary.
