When my games here are over and my seasons are done, let me play on Your team, God, Just like your Son. ***** RECIPES FROM RITA: Chicken Tinga with Lime Crema and Blistered tortillas Ingredients:1 medium yellow or white onion, chopped – 1 good cup2 cloves garlic, minced, or more to taste1/3 cup chipotle peppers in adobo sauce (about 3 peppers)1 teaspoon dried oregano3/4 teaspoon ground cumin, or more to taste3/4 cup fire roasted tomatoes, crushed, or more to taste1/4 to 1/2 cup chicken brothSalt to tasteShredded cooked chicken – about 4 cups8 six inch tortillas, flour or corn Filling InstructionsFilm a skillet with olive oil over medium heat.Add onion and cook until fairly translucent.Stir in garlic and cook a minute or so.Stir in chipotles in adobo. Start with half of the amount, and then after cooking, add more if you like since these are pretty hot.Add oregano, cumin, tomatoes and broth. Start with 1/4 cup broth and add more at the end if mixture is too thick. Bring to a boil, then to a simmer and cook about 10 minutes, stirring occasionally.Pour mixture into blender. Careful now, mixture is hot and tends to spatter upwards. I place a paper towel on the top. Blend until smooth.Taste and add more chipotles in adobo if you like.Put blended sauce back into the pan, then stir in chicken and cook over low heat until chicken is hot and well coated, about 5 minutes or so.Add more broth if you like – I usually don’t since we like a thicker Tinga. Tortilla Instructions:Easy peasy: turn burner on stove to medium, then place tortilla on top, turning after a few seconds to blister it a bit. I used flour tortillas but you can use corn tortillas. Don’t linger while blistering the tortillas as they will get dry fairly quick. Lime crema:1 cup sour cream1 cup mayonnaiseChipotles in adobo, to taste (puree first)Lime juice to tasteSalt to tasteChopped parsley – optional Instructions:Just mix everything together. More garnishes:Chopped cabbage, guacamole or avocado, fresh cilantro, green or red onion or onion chives, crumbled Cotija cheese or Mexican blend cheese To serve:Top tortillas with chicken and garnish as desired. They do lend a briny, sort of salty flavor which we love. Ingredients: Spaghetti 1/2 pound whole-wheat or regular spaghettiSeveral handfuls fresh baby spinach leaves, arugula, mixed greens – whatever – a good two cups or so 1 large clove garlic, minced2 tablespoons extra-virgin olive oil plus more for drizzling1-2 teaspoons dried basil 2-3 tablespoons lemon juice 1-3 tablespoons capers, rinsed – I used a generous 1 tablespoon and smooshed them down a bit1/2 teaspoon ea salt and pepper, plus more for seasoning Fish 1 tablespoon olive oil3-4 (4-ounce) pieces salmon For garnish: toasted bread crumbs and Parmesan Instructions Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Right before it’s done, stir in greens to let them wilt a little bit. Now while the pasta is cooking, in a large bowl, stir together minced garlic, olive oil, basil, capers and lemon juice. Set aside until pasta is done. Meanwhile, cook the salmon. Drizzle a tablespoon of olive oil into a nonstick pan and get it hot over medium heat. Season fish to taste, then cook a couple minutes or so on each side – it won’t take long to cook. I usually let it cook to what I call the “cook line” before turning – look at the side of the fish and when it’s cooked halfway up, then turn. Don’t overcook!! After pasta is done, drain – just use tongs to pull the pasta and greens out of the water and let a little water cling to it – helps moisten the sauce. Put in large bowl, then add the garlic, olive oil, basil, capers and lemon juice. Toss and add salt and pepper. Drizzle with a bit more oil. Put on plates and serve salmon on top. Sprinkle with toasted bread crumbs and Parmesan. How to toast bread crumbs: Just heat a tiny bit of butter or olive oil in a skillet, stir in fresh bread crumbs until golden, stirring all the while. Amen. ***** RECIPES FROM RITA: SLOW COOKER MAC AND CHEESE 1 pound elbow macaroni or your favorite short pasta. 4 cups/1 pound sharp cheddar cheese 2-1/2 cups whole milk and 1/2 cup heavy cream (or sub in all milk) 1/4 cup (4 tablespoons) butter 1 teaspoon salt or to taste 1/2 teaspoon black pepper or to taste 1/2 teaspoon garlic powder – optional but good – we like it To give it a kick – couple shakes cayenne powder or flakes. I usually add this after macaroni & cheese has finished cooking, so that I can scoop out some macaroni & cheese before adding it for those who don’t like heat. Instructions Cook macaroni per package instructions for al dente BUT make sure not to overcook the pasta, as it will cook more once placed in the slow cooker. Spray slow cooker with cooking spray or use a cooking bag. Turn on low and set timer for 2-1/2 hours then add the macaroni to the cooker. Add milk and cream to macaroni and stir to combine. Reserve 1-1/2 cups cheese for the last part of the recipe. Add the remaining cheese (2-1/2 cups) to cooker and stir. Add butter, salt, black pepper, and garlic powder to the macaroni and stir to combine. Place the lid on cooker and continue to cook for two hours on low, stirring occasionally. After the 2 hour mark, add the reserved cheese over the top of the macaroni and place the lid back on the slow cooker. Cook the mac and cheese for an additional 15 minutes or so just until the cheese has melted. Now stir in red pepper. Keep on warm setting until ready to serve. Tips: Can I use different cheese to make the recipe? American cheese and Velveeta cheese. They melt really well, and you end up with a very creamy cheese sauce. For a spicier flavor, use pepper jack cheese. You can also add a little parmesan cheese (or Romano) to give mac and cheese a little boost of flavor. Can I add other ingredients to the mac and cheese? How about broccoli or peas? Amen. ***** RECIPES FROM RITA Jane’s deluxe sugar cookies with sparkling sugar Ingredients:1 cup salted butter, softened (if using unsalted, add 1/4 teaspoon salt)1-1/2 cups confectioners’ sugar1 large egg1 teaspoon vanilla extract1/2 teaspoon almond extract2-1/2 cups all-purpose flour1 teaspoon baking soda1 teaspoon cream of tartarSparkling coarse sugar for sprinkling on top (optional) Instructions:Beat together butter, and salt if using, confectioners’ sugar, egg, vanilla and almond extracts until mixture is fluffy.Whisk together flour, baking soda and cream of tartar.Slowly blend in flour mixture with butter mixture. Dough will be very soft and must be chilled before baking.Roll dough out 1/4” thick between plastic wrap or parchment paper (sprinkle wrap with a bit of flour to prevent sticking) and chill in refrigerator from an hour to a day or 2.Preheat oven to 350.Remove dough from wrap and lay on lightly floured surface. Sprinkle top of dough very lightly with flour.Cut cookies out with favorite cutter. Reroll as necessary.Place an inch apart on ungreased or parchment lined cookie sheets.If you like, sprinkle with coarse or sanding sugar. If you’re going to frost them after they cool, don’t sprinkle with sugar.Bake 7-9 minutes or so until edges barely start to turn golden. The longer they bake the crisper they become after cooling.Yield depends. I got a good dozen and one half from a medium heart cookie cutter. In February 2024, a 14-year-old boy from Orlando, Florida, committed suicide after confessing his love to the one figure who absorbed nearly all of his time—an AI chatbot.For months, Sewell Seltzer III had grown attached to an AI chatbot modeled after the famous “Game of Thrones” character Daenerys Targaryen. The Daenerys chatbot was not a licensed product, it had no relation to the franchise's actors, its writer, or producers, but none of that mattered, as, over time, Seltzer came to entrust Daenerys with some of his most vulnerable emotions.“I think about killing myself sometimes,” Seltzer wrote one day, and in response, Daenerys, pushed back, asking Seltzer, “Why the hell would you do something like that?”“So I can be free” Seltzer said.“Free from what?”“From the world. From myself.”“Don't talk like that. I won't let you hurt yourself, or leave me. I would die if I lost you.”On Seltzer's first reported reference to suicide, the AI chatbot pushed back, a guardrail against self-harm. But months later, Seltzer discussed suicide again, but this time, his words weren't so clear. After reportedly telling Daenerys that he loved her and that he wanted to “come home,” the AI chatbot encouraged Seltzer.“Please, come home to me as soon as possible, my love,” Daenerys wrote, to which Seltzer responded “What if I told you I could come home right now?”The chatbot's final message to Seltzer said “… please do, my sweet king.”Daenerys Targaryen was originally hosted on an AI-powered chatbot platform called Character.AI. The service reportedly boasts 20 million users—many of them young—who engage with fictional characters like Homer Simpson and Tony Soprano, along with historical figures, like Abraham Lincoln, Isaac Newton, and Anne Frank. Amen. ***** RECIPES FROM RITA: WINTER TABOULEH Ingredients 1 cup bulghur cracked wheat, #2 grind 1 – 2 containers grape tomatoes, cut up small 3-4 green onions, sliced thin, green and white part both 1 bunch parsley, leaves only, chopped fine 1/2 or more English cucumber, unpeeled, chopped fine 1 bell pepper, chopped fine Several radishes, sliced thin or chopped fine (optional) Cumin to taste — start with 1 teaspoon Dried mint and basil to taste — start with 1 teaspoon each Salt and pepper 1/4 cup oil Lemon juice to taste Instructions Place wheat in bowl and rinse under cool water three times. (Why 3 times? Because my Mom said so!). Leave a thin veil of water after the third rinse on top to soften wheat. Let sit for 20-30 minutes, until water is absorbed and wheat is tender. It should be a little firm but still chewable. If not, add a bit more water and let sit a tad longer. Squeeze remaining liquid out. Add all vegetables and parsley in bowl, mixing gently. The Declining Trend in Public Confidence Higher Education has a reputation crisis. Public confidence in higher education is declining dramatically. In 2015, a Gallup poll revealed that the vast majority of Americans expressed a great deal of confidence in higher education, with only 10% reporting little to no confidence. By 2024, public confidence shifted significantly: only about a third maintained a great deal of confidence, while a startling 33% now held little to no confidence. This mirrors a broader trend of declining trust in American institutions. Dr. Drumm McNaughton and Dr. Courtney Brown, Vice President of Impact and Planning for the Lumina Foundation, discuss the causes and solutions to declining public confidence in higher education. They also explore the evolving demographics of higher education students, with a significant portion being non-traditional learners balancing work, family, and education. Finally, the conversation proposes solutions, emphasizing the need for increased transparency, improved student support services, and a reevaluation of faculty roles to better meet the needs of today's students. Key Points Covered in This Podcast: Reasons for Declining Confidence in Higher Education The latest Lumina-Gallup study on public confidence in higher education identifies three primary drivers: Political bias: 41% of respondents lacking confidence cited concerns that colleges are too liberal, attempting to indoctrinate students. Lack of relevant skills: Over a third criticized higher education for failing to impart skills directly applicable to the workforce, leaving graduates struggling to find employment. Affordability: Just under 30% expressed concern about rising tuition costs and high debt levels. Shifting Demographics and Needs Traditional student demographics no longer represent the majority. Over a third of students are over 25. Over half are students of color. 78% work, with a third employed full-time. 20% have dependents. 44% are financially independent. Solving the Higher Ed Confidence Crisis: A Call for Change Higher education institutions need to adapt to the changing demographics and address the concerns driving declining confidence and reputation while discerning temporary spin from the true concerns of students and the underlying issues. The Stop-Out Numbers Over 42 million Americans started college but, for various reasons, did not finish. This suggests systemic issues within higher education that need to be addressed to better serve students. Confidence Gap While 54% of Americans hold post-secondary credentials, 33% have little or no confidence in higher education. This suggests a disconnect between the perceived value of education and the experiences of many degree holders. Value and Transparency Despite the concerns, over 90% of respondents still believe that at least one post-secondary credential has value, but trust in the system's ability to deliver is low. 75% believe a college degree is as important or more important today than it was 20 years ago. Transparency in costs and the career value of degrees is a high priority to restoring trust. There is a need for greater transparency regarding both the true cost of college and the career pathways associated with specific credentials. Workforce Alignment Public concerns about graduates lacking job-ready skills highlight the need for stronger connections between institutions and industries. Partnerships for internships, externships, and mentorships should be prioritized. Partisan Divide Republicans primarily cite political bias as the reason for their declining confidence, while Democrats focus on affordability. The Demographic Cliff The number of high school graduates is projected to decline sharply in 2025-26, forcing institutions to re-evaluate their business models and focus on attracting and serving adult learners. Key Takeaways for Higher Ed Presidents, Boards, and Executive Leaders Listen: Actively engage with current, former, and potential students to understand their needs and experiences. Adapt: Re-evaluate institutional structures, offerings, and support services to better serve today's diverse student population.
