When my games here are over and my seasons are done, let me play on Your team, God, Just like your Son. ***** RECIPES FROM RITA: Chicken Tinga with Lime Crema and Blistered tortillas Ingredients:1 medium yellow or white onion, chopped – 1 good cup2 cloves garlic, minced, or more to taste1/3 cup chipotle peppers in adobo sauce (about 3 peppers)1 teaspoon dried oregano3/4 teaspoon ground cumin, or more to taste3/4 cup fire roasted tomatoes, crushed, or more to taste1/4 to 1/2 cup chicken brothSalt to tasteShredded cooked chicken – about 4 cups8 six inch tortillas, flour or corn Filling InstructionsFilm a skillet with olive oil over medium heat.Add onion and cook until fairly translucent.Stir in garlic and cook a minute or so.Stir in chipotles in adobo. Start with half of the amount, and then after cooking, add more if you like since these are pretty hot.Add oregano, cumin, tomatoes and broth. Start with 1/4 cup broth and add more at the end if mixture is too thick. Bring to a boil, then to a simmer and cook about 10 minutes, stirring occasionally.Pour mixture into blender. Careful now, mixture is hot and tends to spatter upwards. I place a paper towel on the top. Blend until smooth.Taste and add more chipotles in adobo if you like.Put blended sauce back into the pan, then stir in chicken and cook over low heat until chicken is hot and well coated, about 5 minutes or so.Add more broth if you like – I usually don’t since we like a thicker Tinga. Tortilla Instructions:Easy peasy: turn burner on stove to medium, then place tortilla on top, turning after a few seconds to blister it a bit. I used flour tortillas but you can use corn tortillas. Don’t linger while blistering the tortillas as they will get dry fairly quick. Lime crema:1 cup sour cream1 cup mayonnaiseChipotles in adobo, to taste (puree first)Lime juice to tasteSalt to tasteChopped parsley – optional Instructions:Just mix everything together. More garnishes:Chopped cabbage, guacamole or avocado, fresh cilantro, green or red onion or onion chives, crumbled Cotija cheese or Mexican blend cheese To serve:Top tortillas with chicken and garnish as desired. They do lend a briny, sort of salty flavor which we love. Ingredients: Spaghetti 1/2 pound whole-wheat or regular spaghettiSeveral handfuls fresh baby spinach leaves, arugula, mixed greens – whatever – a good two cups or so 1 large clove garlic, minced2 tablespoons extra-virgin olive oil plus more for drizzling1-2 teaspoons dried basil 2-3 tablespoons lemon juice 1-3 tablespoons capers, rinsed – I used a generous 1 tablespoon and smooshed them down a bit1/2 teaspoon ea salt and pepper, plus more for seasoning Fish 1 tablespoon olive oil3-4 (4-ounce) pieces salmon For garnish: toasted bread crumbs and Parmesan Instructions Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Right before it’s done, stir in greens to let them wilt a little bit. Now while the pasta is cooking, in a large bowl, stir together minced garlic, olive oil, basil, capers and lemon juice. Set aside until pasta is done. Meanwhile, cook the salmon. Drizzle a tablespoon of olive oil into a nonstick pan and get it hot over medium heat. Season fish to taste, then cook a couple minutes or so on each side – it won’t take long to cook. I usually let it cook to what I call the “cook line” before turning – look at the side of the fish and when it’s cooked halfway up, then turn. Don’t overcook!! After pasta is done, drain – just use tongs to pull the pasta and greens out of the water and let a little water cling to it – helps moisten the sauce. Put in large bowl, then add the garlic, olive oil, basil, capers and lemon juice. Toss and add salt and pepper. Drizzle with a bit more oil. Put on plates and serve salmon on top. Sprinkle with toasted bread crumbs and Parmesan. How to toast bread crumbs: Just heat a tiny bit of butter or olive oil in a skillet, stir in fresh bread crumbs until golden, stirring all the while. Amen. ***** RECIPES FROM RITA: SLOW COOKER MAC AND CHEESE 1 pound elbow macaroni or your favorite short pasta. 4 cups/1 pound sharp cheddar cheese 2-1/2 cups whole milk and 1/2 cup heavy cream (or sub in all milk) 1/4 cup (4 tablespoons) butter 1 teaspoon salt or to taste 1/2 teaspoon black pepper or to taste 1/2 teaspoon garlic powder – optional but good – we like it To give it a kick – couple shakes cayenne powder or flakes. I usually add this after macaroni & cheese has finished cooking, so that I can scoop out some macaroni & cheese before adding it for those who don’t like heat. Instructions Cook macaroni per package instructions for al dente BUT make sure not to overcook the pasta, as it will cook more once placed in the slow cooker. Spray slow cooker with cooking spray or use a cooking bag. Turn on low and set timer for 2-1/2 hours then add the macaroni to the cooker. Add milk and cream to macaroni and stir to combine. Reserve 1-1/2 cups cheese for the last part of the recipe. Add the remaining cheese (2-1/2 cups) to cooker and stir. Add butter, salt, black pepper, and garlic powder to the macaroni and stir to combine. Place the lid on cooker and continue to cook for two hours on low, stirring occasionally. After the 2 hour mark, add the reserved cheese over the top of the macaroni and place the lid back on the slow cooker. Cook the mac and cheese for an additional 15 minutes or so just until the cheese has melted. Now stir in red pepper. Keep on warm setting until ready to serve. Tips: Can I use different cheese to make the recipe? American cheese and Velveeta cheese. They melt really well, and you end up with a very creamy cheese sauce. For a spicier flavor, use pepper jack cheese. You can also add a little parmesan cheese (or Romano) to give mac and cheese a little boost of flavor. Can I add other ingredients to the mac and cheese? How about broccoli or peas? Now you can also wait until the cake cools and then carefully make a little hole to push the baby in before you frost the cake if you don’t want to bake plastic….. Ingredients Cake:1 box yellow cake mix, 15.25 oz.1 box vanilla instant pudding mix, 4 serving size1 teaspoon cinnamon2 tablespoons favorite neutral oil1-1/3 cups water2 large eggs1 plastic baby – optionalStreusel – combine together1/2 cup all purpose flour1/2 cup brown sugar, packed, light or dark1/2 cup nuts, chopped – optional but good1 tablespoon cinnamon1/4 cup butter, melted Instructions: Preheat oven to 375 degrees,Grease and flour 10” tube or Bundt pan.On low speed in mixer or by hand, blend cake mix, pudding mix, water and eggs.Beat either 2 minutes on medium speed or vigorously by hand.Spread 3/4 of the batter evenly in prepared pan.Sprinkle 2/3 cup streusel mixture over batter in pan.Spread remaining batter over streusel.Top with reserved streusel. Swirl into batter with a knife.Push baby in and keep it away from sides of the pan.Bake 40-50 minutes or until toothpick inserted in center comes out clean. Check after 40 minutes.After removing from oven, take a knife or offset spatula and run it around the edges of the pan, including center. Let cool 15-20 minutes before frosting. Drizzle cooled cake with confectioner’s sugar glaze, then while glaze is still wet, sprinkle each section with the colored sugars: purple for justice, green for faith and yellow for power. Here’s a family favorite. 1 to 1-1/4 pounds ground chuck or round1 generous cup chopped onion1 generous teaspoon garlic1 jar chunky style pasta sauce, 19-28 oz1 quart beef broth, low sodium, fat free1 can chopped tomatoes and chilies, 14.5 oz if you like it spicy (OR 1 can diced tomatoes, 14.5 oz if you don’t want it spicy)16-20 oz, frozen soup vegetables, thawed (OR16 oz frozen mixed vegetables, thawed)Handful of fresh greens – spinach, chard, bok choy, escarole, etc. – optional but good Cheddar for garnish (opt) Saute meat, onions and garlic. Drain fat. Add everything else but spinach and cheese. For the pasta sauce, don’t add it all – go to taste. Bring to a boil. Lower to simmer 20 minutes or so until vegetables are tender. Toss in greens and cook 1 minute. Makes 8-10 generous servings. Tony Palazzolo’s version of Frisch’s vegetable soup “A result of over a dozen attempts, and I think it is very close to Frisch’s”, Tony, Anderson Township, wrote when he sent me this recipe a long time ago….. 4 tablespoons vegetable oil1 cup onion, diced1/2 cup ea. diced: carrots, celery1/2 cup ea. frozen vegetables: peas, corn, cut green beans, baby lima beans (can use canned baby limas)1 can, 14.5 oz, diced tomatoes with juice2 quarts beef broth1 quart water1/2 teaspoon ea. thyme, garlic powder3/4 teaspoon black pepper1 cup potato, diced1/4 cup pearl barley1/4 cup long grain riceSalt to taste In a large soup pot, sauté onion, carrot, and celery until onion is soft but not browned, about 10 minutes. Add rest of ingredients except potato, rice and barley. Bring to boil and lower to simmer partially covered for 30-45 minutes. Add potato, rice and barley, bring back to boil, lower to simmer, partially covered, for another 30 minutes or until potato, rice and barley are done. Add salt and pepper. Amen. ***** RECIPES FROM RITA Jane’s deluxe sugar cookies with sparkling sugar Ingredients:1 cup salted butter, softened (if using unsalted, add 1/4 teaspoon salt)1-1/2 cups confectioners’ sugar1 large egg1 teaspoon vanilla extract1/2 teaspoon almond extract2-1/2 cups all-purpose flour1 teaspoon baking soda1 teaspoon cream of tartarSparkling coarse sugar for sprinkling on top (optional) Instructions:Beat together butter, and salt if using, confectioners’ sugar, egg, vanilla and almond extracts until mixture is fluffy.Whisk together flour, baking soda and cream of tartar.Slowly blend in flour mixture with butter mixture. Dough will be very soft and must be chilled before baking.Roll dough out 1/4” thick between plastic wrap or parchment paper (sprinkle wrap with a bit of flour to prevent sticking) and chill in refrigerator from an hour to a day or 2.Preheat oven to 350.Remove dough from wrap and lay on lightly floured surface. Sprinkle top of dough very lightly with flour.Cut cookies out with favorite cutter. Reroll as necessary.Place an inch apart on ungreased or parchment lined cookie sheets.If you like, sprinkle with coarse or sanding sugar. If you’re going to frost them after they cool, don’t sprinkle with sugar.Bake 7-9 minutes or so until edges barely start to turn golden. The longer they bake the crisper they become after cooling.Yield depends. I got a good dozen and one half from a medium heart cookie cutter. Simple glazeWhisk together 2 cups confectioners’ sugar, 1 teaspoon vanilla and 3-4 tablespoons of water.
